This Holiday Season with Eli’s Plating & Recipe Ideas
Pumpkin Pie Cheesecake Pairing Ideas:
Two wines that pair well with this cheesecake are a late harvest Riesling or a tawny Port.
The Riesling is sweet with an almost smoky flavor that holds its own against the robust
spices in this cheesecake. Tawny Ports also stand up well to the flavors in this dessert,
bringing out the toasted notes in the crust and enhancing the nuttiness of the praline
sprinkles.
Pumpkin Cheesecake Plating Recipe:
Serve Eli’s Pumpkin Pie Cheesecake with a drizzle of Bourbon Caramel Sauce!
Ingredients: 1 cup sugar • 1/4 cup water • 1/2 cup heavy cream
1 tablespoon butter • 1 tablespoon vanilla • 1 tablespoon bourbon
Mix sugar and water over medium heat until mixture turns an amber color. Reduce heat
to low and slowly pour in heavy cream. Mix in remaining ingredients until smooth. Cool
sauce to room temperature. Drizzle over Pumpkin Cheesecake and sprinkle with toasted
pecans or walnuts for an extra crunch.
Original Plain Cheesecake Plating Recipe:
Garnish Eli’s Original Plain Cheesecake with chocolate ganache, cherry compote and
Snowflake-Shaped Funnel Cakes:
Ingredients: 1 quart milk • 2 eggs • 2 teaspoons vanilla • 4 cups all-purpose flour
2 tsp. salt • 2 tsp. baking soda • 1/4 cup sugar • 1/4 lb. melted butter
Combine milk, eggs, and vanilla in a large bowl and beat lightly. Combine dry ingredients and
gradually add to wet ingredients, beating until smooth. Fold in butter. On a sheet pan lined
with parchment, draw snowflake shapes of batter with a piping bag or squeeze bottle. Bake
at 400 degrees F for about 5 minutes or until golden brown. Sprinkle with powdered sugar.
Pumpkin Praline Cheesecake Pairing ideas:
A lighter, sweet stout pairs perfectly with this pumpkin cheesecake. The dark roasted
elements of a stout pair brilliantly with the sugar and spices. The contrast brings out the
flavors and textures of both the cheesecake and beer. A Brown Ale would also be a
strong pairing with Pumpkin Praline Cheesecake because the caramel-like flavor of the
ale enhances the caramel praline topping without overpowering the flavor of the
pumpkin.
Apple Bavarian Tart Pairing Ideas:
Two types of beer that will pair well with Eli’s Apple Bavarian Tart are Brown Ales and
Dunkelweizens. The Brown Ales have a caramelly flavor that enhances the sweet,
fresh taste of the apple slices. With its yeasty flavors, the Dunkelweizen will complement
the graham cracker crust and the sweet, creamy custard.
Apple Bavarian Tart Plating Idea:
Replace ho-hum apple pie with Eli’s Apple Bavarian Tart, filled with fresh Michigan
Apples and a house-made Bavarian cream, alongside vanilla bean ice cream, cinnamon
sticks and a drizzle of caramel sauce.

with fun Halloween decorations.
Cheesecake 101
Sunday, November 23, 2pm-5pm. $100 per person.

Learn all there is to know about cheesecake from the experts! Eli’s Executive Pastry Chef Laurel Boger will
teach you how to bake a Chicago-style cheesecake plus learn easy seasonal decorating ideas, troubleshooting
tips and more. Each student will mix and bake one 8” cheesecake to take home (serves 12).

DIY Mini Pie Making
November 24 & 25, 3pm-6pm. No reservations required. $2.50 each or 6 pies for $14
Create your own custom mini pies and tarts! Add to our pre-baked tart shells one of our housemade fillings
like pumpkin custard, fruit, chocolate and more, then add a topping, like crunchy streusel or a mini sugar
cookie. Create one pie and enjoy it for dessert or make 6 (or more) to take home for Thanksgiving dinner.
Kids’ Holiday Dipper Decorating
December 17-19, 11am-2pm. No reservations required. $5.50 per child
Kids will dip and decorate 8 mini cheesecake dippers (cheesecake on a stick, dipped in chocolate) with fun
candy toppings.
