With spring brings Mother’s Day, gardening and National Nursing Home Week. On Sunday, May 14th our center will be holding a traditional Mother’s Day luncheon at noon in our Main Dining Room. Look for postings of the menu as the time comes near. We ask that you please see our receptionists for reservations and we will do our best to accommodate parties over three. Mother’s Day is also the kick off day to National Nursing Home Week. This year’s theme is SPIRIT OF AMERICA. Plan to wear your most festive Red – White & Blue throughout the week. Some of the highlights are an ice cream social on Monday the 15th, SUPER BINGO, a lunch-time cookout on Thursday the18th and a “Celebrate the 1960’s Day” on Friday the 19th. We ask that you sport your favorite threads tie-dye or brightly colored shirts, Mary Janes, bell-bottoms or jumper dresses to help with the celebration, it should be AWESOME! All proceed benefits Residents Council Chicken Piccata Ingredients: 2 skinless & boneless chicken breast butterflied and cut in half 1/3 cup fresh lemon juice 1/3 cup white wine Sea salt and pepper ½ cup chicken stock all-purpose flour (for dredging) ¼ cup brined capers 6 tablespoons butter 1/3 cup fresh parsley 5 tablespoons olive oil Directions: Season chicken with salt and pepper, dredge in flour and shake off excess. In a large skillet over medium heat 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned flip and cook other side for 3 minutes, remove and transfer to plate. Melt 2 more tablespoons of butter and add 2 tablespoons of olive oil and repeat with remaining pieces of chicken. Add wine to de-glaze the pan, add lemon juice, stock and capers. Bring to a boil, scraping up brown bits from pan for extra flavor. Check for seasoning and add salt and pepper if needed, return chicken to pan and simmer for 5 minutes, remove chicken to platter. Add remaining 2 tablespoons of butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley, serve over pasta or rice. Enjoy! ~Chef Myers
