Beef Pot Roast in Gravy
This is one of my favourites! We slow-roast the Turkey in our
own bold barbeque sauce till it’s so tender. Be sure to grab
lots of napkins and enjoy any day, anytime, in no time.
Just like my mother use to make it. You can take comfort
in our perfectly seasoned cut of Beef, slow-roasted in our
ovens, served in a delicious gravy that makes this Pot Roast a
traditional family favourite.

Double Smoked Back Bacon
Cooked Peameal Bacon
We take our Back Bacon to the smokehouse, where it is
smoked for hours with a natural hardwood to give it a
unique and irresistible taste. It has 20% meat protein and
85% less fat than regular side bacon.
We are very proud of our Original Peameal Bacon. A Lou’s
tradition and passion since 1990, our bacon is low in fat and
sodium and high in protein and taste. This Canadian icon is
cured then rolled in a ground cornmeal and sliced to make it
simple for frying, grilling or baking, eh!

Lou’s BBQ Chicken Wrap
Serves 4
Ingredients:
400 grams Lou’s BBQ Chicken
4 x 10 inch wraps – white or whole wheat - your
choice
1 cup cooked rice – lightly seasoned with salt, pepper,
cumin and chili powder
4 oz. fresh spinach leaves - optional
1 cup cooked black beans
4 oz. shredded cheese
4 oz. chopped tomato
Method:
Take the wrap and lay out on a board. Place ¼
cup of rice in the centre of each wrap, followed
by ¼ cup of the beans. Place 100 grams (3.5
oz.) of Lou’s BBQ Chicken on top of the beans
followed by 1 oz. each of the cheese, spinach
and diced tomatoes. Fold the right and left sides
of the wrap into the middle. Fold the side facing
you over the top of the two folded in sides and
roll into a tube. Place the wrap seam side down
into a hot frying pan for 2 minutes and then roll
over to heat the other side for an additional 2
minutes. Serve hot.
Curry Beef and Rice
Serves 2
Ingredients:
400 grams Lou’s Pot Roast – with the gravy – cut into
4 large pieces
2 oz. each – carrots, onions, red peppers and yellow
peppers
4 oz. broccoli spears
2 oz. Curry mix – your choice on brand – and heat
2 oz. chopped tomatoes
1 oz. vegetable oil
1 cup cooked rice – jasmine
Fresh cilantro sprigs for garnish
Method:
Bring a large pot of salted water to a boil. Blanch
the carrots and the broccoli for 1 minute and
then cool in a cold water bath. In a large frying
pan heat the oil and sauté the peppers and
onions. Add the broccoli, carrots, and tomatoes.
Toss well, and add in the beef, the curry mix and
the gravy. If the sauce is a little stiff add a small
amount of wine or water. Cover and allow the
beef to heat through – 3-4 minutes. Check and
adjust the seasoning. Serve over rice, garnished
with cilantro.
Smoked Shredded Turkey Flatbread
Serves one hunger lucky eater
Ingredients:
Method:
1 flat bread – sized 5 x 11 (a rectangle works best for
sharing and cost effective options)
4 oz. Lou’s Smoked Shredded Turkey
2 oz. diced Tomato
1-2 oz. red onion – thinly sliced
2-3 oz. shredded cheese – your choice on flavour – a
Cheddar blend works well
1 oz. chopped green onions
2-3 oz. Chili Lime BBQ sauce – in a squeeze bottle
Preheat the oven to 450 F. On a hot grill, place
the flatbread down on both sides and get some
grill marks. Place flatbread on a baking sheet and
drizzle with half of the BBQ sauce. Top with – in
this order – diced tomato, sliced onions, shredded
turkey and cheese. Bake for 3-5 minutes until the
cheese melts and then remove from the oven,
drizzle with the remaining BBQ sauce and top
with the chopped green onions. Serve hot cut
into slices.

225 grams fries – cooked crisp and hot
2 oz. Lou’s Smoked Shredded Pulled Pork - heated
2 slices Lou’s Peameal Bacon – cooked crisp and
sliced in strips
2 slices Lou’s Double Smoked Back Bacon – cooked
and diced
2-3 oz. poutine gravy
2 oz. Cheese curds
1 tablespoon chopped green onions
Cook the fries and place in the vessel for service.
Top with hot shredded pork, sliced peameal
bacon and chopped double smoked bacon.
Top with cheese curds and cover in hot gravy.
Sprinkle green onions over and serve.

TMF Foods Supports the FCC Drive Away Hunger Campaign
TMF Foods is proud to be supporting the 2015 Farm Credit Canada Drive Away Hunger Campaign. Over the last
three years, TMF has donated over 1,622,369 pounds ($620,952.14) of Ready Made Meals and Peameal Bacon
to local Food Banks throughout the Ontario Area.
For over 30 years, TMF Foods Ltd., home of the Lou’s Barbeque line of fully cooked entrées and Peameal Bacon
of Canada Ltd., has taken an active role in the community making large product donations at various times
throughout the year to help those less fortunate.
In order to distribute this large food donations across Ontario, TMF has partnered with the FCC (Farm Credit
Canada). FCC Drive Away Hunger began in 2004 when an employee in Ontario organized a local tractor tour.
The food donations were collected from his local community as a way to give back and help food banks serve
people in need. Since then, the FCC Drive Away Hunger has grown dramatically with 9.2 million pounds of food
and $760,000 collected to date right across the country.
“To date, the FCC has collected more than 17 million pounds of food through FCC Drive Away Hunger”, said
Greg Stewart, FCC President and CEO. “Hunger is an issue that affects many families in rural Canada. FCC Drive
Away Hunger is one of the ways we give back to the rural communities where our customers and employees
live and work”, noting that hunger touches nearly 850,000 Canadians each month, many of whom are children.
FCC Drive Away Hunger is the largest employee-led food drive in Canada. It involves driving a tractor and
trailer through various communities to collect food and cash donations for
food banks across the country.
This year, the FCC Drive Away Hunger Campaign has provided over 5.2 million
meals to Food Banks across Canada.
