The lower temperature is preferred. Cook as soon as possible (no later than the use by date) to ensure maximum freshness. If you are not confident about the temperature of your refrigerator, cook or freeze the turkey within 4 days of purchase. Cooking A Perfect Turkey: To ensure the best possible results, we suggest you prepare and roast your Longo’s Ultimate Turkey according to these easy guidelines: • • • Remove neck and bag of giblets from inside of turkey. (Use for gravy or dressing, if you like) Rinse birds inside and out under cold water. Pat dry. • • • • Turn bird upside down and fill neck cavity with stuffing, but do not tightly pack. (Stuffing expands when cooked.) Now place bird, drumstick-end up in roasting pan. Bring neck skin up to recover the opening. Fasten with skewers or sew shut if you wish. Lightly season and rub turkey with favourite herbs and spices. • Place uncovered roasting pan with turkey in preheated oven of 400˚F for 30 to 45 minutes. Reduce heat to 325–350˚ F and cover bird with lid or tented aluminium foil. Turkey is done when a meat thermometer inserted into thigh reads 180˚F for a stuffed turkey, 165˚F in centre of stuffing, or 170˚F for an unstuffed turkey and when drumstick moves easily at joint. Let turkey stand, covered, for 15–20 minutes before carving. TM Fresh Turkey 6 Simple Steps to Carving a Turkey Before you begin, let turkey stand for 15 minutes once removed from oven. step 1: Remove drumstick and thigh by pulling leg away from body and cutting joint with a sharp knife. step 2: Place drumstick and thigh on cutting surface and cut through connecting joint. step 3: Tilt drumstick to convenient angle, slicing down toward cutting surface. step 4: Hold thigh firmly on cutting surface with fork. Cut slices evenly and parallel to bone. step 5: Hold turkey breast firmly on cutting surface with fork. Place knife parallel and as close to wing as possible. Make deep cut into breast cutting toward ribs. This makes a base cut. Each breast slice will stop at this horizontal base cut. step 6: Slice breast by carving downward, ending at base cut. Keep slices thin and even. You can slice lengthwise or crosswise, whatever your preference. Storage of Leftovers Refrigerate leftovers within 1 hour of eating.
