OUR MASTER BREWER
INTRODUCING KEN ARROWSMITH
NBC’s very own Master Brewer, Ken has been
responsible for some of the best beers in Australia.
He can often be seen ‘hopping’ around whilst he
brews on-site with great skill and finesse. He hosts
regular brewery tours and tastings and is more than
happy to share his wisdom with you.
After achieving a Bachelor of Applied Science
(Chem) Ken went on to join the Swan Brewery Co
Ltd as an Assistant Chemist.
In the late eighties he had a taste of the ‘new’ craft
beer movement, working under the guidance of Phil
Sexton at Brewtech. He was involved in setting up,
commissioning and operating a craft brewery at The
Old Lion Hotel in North Adelaide.
Ken was fortunate to fill most operational and technical
roles throughout the industry including stints as
Operations Director at The Swan Brewery, Tooheys
Brewery and South Australian Brewing Company.
As an active member of the Institute of Brewing and
Distilling (IBD), Ken was privileged to Chair the
Asia Pacific Section of the Institute and serve on the
Strategic Planning Committee. In 2004, he was awarded
the prestigious Fellowship of the Institute of Brewing
and Distilling.
After taking a well deserved break, Ken recently
resurfaced after five years in hibernation. Now he is part
of the NBC Crew and looking forward to giving you the
opportunity to be his Brewer for the Day!

The Tank Bar is extremely versatile and
offers diversity, from our massive open
air balcony which overlooks the serenity
of the Northbridge Piazza to our fully
functional brewing tanks that bring a

then afterwards transform into a place

An all malt continental lager.
Classic Bavarian style wheat beer.

•Bright crystal clear lager that is
pale straw in colour.
•Blend of noble hops provides crisp lager bitterness.
•Imported German malt provides complexity and a hint
of malt sweetness with a well balanced mouthfeel.
•Fresh yet subtle aroma from the late addition of hops.
•Classic lager sessionability and well suited to our hot
climate.
DESCRIPTION:
We all know and love this style of beer. It takes many forms,
but lagers are known for their subtle aromas and crisp,
clean, bitter zing. Often underrated by the beer nerds, we
believe that lagers have their own complexity and have
celebrated this in our style.
This fine pale lager of the continental style is brewed with
barley malt imported from Germany and a blend of noble
European hop varieties in multiple additions. This beer is
fermented at cool temperature and then matured for an
extended period as is the tradition for this style.
Brilliantly clear with a fine bead this beer has a dense white
head of foam. The aroma has a hint of malt sweetness and
the characteristic floral, spicy note of the Saaz variety hops
added late to the kettle boil preserves some of the essential
oils into the final beer.
The bitterness provides a counterpoint to the malt palate
but is neither lingering nor astringent, contributing to its
drinkability.
KEY CHARACTERISTICS:
• Blond in colour
• Dense, white, creamy head atop
a sparkling, well carbonated beverage
•Soft mouthfeel with very low bitterness.
•Highly aromatic, with hints of banana, and very subtle
spicy clove like characteristics
•A slice of lemon will counterbalance the sweeter flavours
adding a different complexity
DESCRIPTION:
Wheat beers are a traditional European style most famously
produced in Bavaria and Belgium, albeit with the American
scene burgeoning with some great modern examples.
Put simply, this style of beer is about using predominantly
malted wheat with malted barley, for a relatively warm and
rapid fermentation process.
Poured with a large dense white head and sparkling with
carbonation, it will be lively in the glass and could be
considered the champagne of wheat beers.
The aroma is light and fruity with notes of boiled sweets
and banana, and if you smell closely you might be able to
pick up some characteristic clove-like spicy notes that are
common to this style.
This is one of the few popular styles of beer where the hops
are not the hero and the bitterness is only modest and
incidental. This makes wheat beer an attractive option to
those customers that often find beers too bitter for their taste.
A slice of lemon or lime will complement the fruity palate
and provides a pleasant lift that changes the complexity of
flavours. Experiment at your own whim!

•An Australian style pale that you need to try at least twice
DESCRIPTION:
Our Pale Ale is a style that celebrates the resurgence of
craft brewing driven by North America, which thankfully is
now embraced in Australia. The explosion of hops varieties
available in North America and other places such as New
Zealand has seen the hop reliant Pale Ale claim its place
atop the throne of craft beer varieties.
Our Pale Ale is brewed with a blend of ale malts in the
grist to impart its golden colour and to add some malt
complexity to the palate. Mashed for fermentability the
beer is fully attenuated for a dry mouthfeel and finish.
High alpha Galaxy hops are used early in the kettle boil to
provide a robust bitterness followed by a late addition of
the ubiquitous Cascade variety to provide a characteristic
vinous, citrus, grapefruit note to the aroma.
The beer nerds will be happy to know that this is further
enhanced by dry hopping the beer with a further charge of
Cascades after the completion of fermentation.
The result is a bright ale with good drinkability and enough
character to interest the aficionados, but subtle enough to
attract beer drinkers looking for something a little bit bolder.
KEY CHARACTERISTICS:
•Deep red/brown in colour with a creamy head.
•Lower alcohol content, but full in flavour.
•Fragrant hoppy notes from Challenger hops.
•Chocolate and caramel flavours.
•Excellent drinkability especially when paired with meat.
DESCRIPTION:
Beerland’s Mild is a traditional beer style of English
heritage that does not sacrifice flavour or character to
achieve a modest alcohol content.
Presented with a full creamy head the striking red/brown
hue of the liquid promises a full and complex flavour.
On the nose, there is a characteristic fruitiness of the British
ale style overlayed with a fragrant hop note derived largely
from the ‘dry hopping’ process using the Challenger variety
of English hops.
On the palate the impression is smooth and rounded
without aggressive bitterness. Chocolate and caramel notes
are integrated from the blend of four speciality malts in the
grist. The carbonation level is relatively low, enhancing the
smooth drinkability of the style.
With a moderate alcohol content and a complex flavour
profile this beer offers excellent drinkability on its own and
will make some great pairings with the flavours of a rich
meat based main course.
