CRUNCHY COCONUT BANANA FRITTERS
4 bananas
130g flour
30ml castor sugar
7.5ml baking powder
180ml-250ml milk
1 egg + 1 yolk
sunflower oil for frying
cinnamon and sugar for sprinkling
CRUMB MIXTURE
250ml desiccated coconut
250ml panko crumbs (optional)
60ml sesame seeds
Whisk the flour, castor sugar, baking powder and enough milk together to make a
thick batter. Add the egg and egg yolk.
Mix the coconut, panko crumbs and sesame seeds together and set aside.
Heat some oil in a frying pan on medium-high heat. Cut bananas in half lengthwise
and dip them into the batter. Then dip them into the crumb mixture. Fry until golden,
then drain on paper towel.
Serve warm with cinnamon and sugar.
