Connection to the
Mains Supply
NOTE:-The ‘L’ or ‘N’ wire must NOT be connected
to the EARTH terminal marked ‘E’ or coloured
GREEN or GREEN and YELLOW.
If in doubt consult a qualified electrician who
will be pleased to do this for you. This product
conforms to EC Directive 92/31/EEC with respect
to Electromagnetic Compatibility.
Check that the voltage marked on the product
corresponds with your supply voltage.
This product is fitted with a 13A plug complying
with BS1363. If this plug is unsuitable or needs to
be replaced, please note the following:
NON-REWIREABLE MAINS PLUG
If your appliance is supplied with a nonrewireable
plug fitted to the mains lead, you will find that it
incorporates a fuse, the value of which is
indicated either on the base of the plug or on the
fuse carrier. Should the fuse need replacing, you
must use an ASTA approved one (conforming to
BS1362) of the same rating.
This product is double insulated and therefore
does not require an earth connection.
Important: The wires in the mains lead are
coloured in accordance with the following code:
BLUE – NEUTRAL
BROWN – LIVE
If the fuse cover is lost, the plug must not be used
until a replacement is obtained from an electrical
supplier.
If you need to remove the plug, cut it from the
mains lead and immediately dispose of it. Never
attempt to re-use this plug or insert it into a socket
outlet as there is a very great risk of an electric
shock.
This appliance is fitted with a plug which has a
13 amp fuse. Should the fuse fail, then it must
be replaced with an ASTA approved fuse
(conforming to BS1362) of the same rating. If
you need to replace the plug or if the plug is of
the incorrect type for your socket, remove it and
replace it with an appropriate type. Dispose of the
old plug safely.
Important: The wires in the mains lead are
coloured in accordance with the following code:
Blue=neutral, Brown=live
As the colours of the wires in the mains lead may
not correspond with the coloured markings in your
plug, proceed as follows:
Connect the BROWN wire to the terminal marked
‘L’ or coloured RED.
Connect the BLUE wire to the terminal marked
‘N’ or coloured BLACK.

Chocolate Fondue Set
How to use Your
Chocolate Fondue Set
Congratulations on the purchase of your new
Mistral Chocolate Fondue Set. This appliance is
designed to melt chocolate to perfection, ideal
for baking, cake decorating, making chocolate
desserts or other chocolate treats. It is also
perfect for making and serving chocolate fondue,
a favourite with everyone.
Place the Chocolate Fondue Set on a level, heatresistant surface. Ensure the chocolate melting
pot is fitted into position inside the heating unit.
Break or cut the chocolate into small pieces
and place in the melting pot. It is important not
to overfill the melting pot, the maximum level is
clearly indicated on the inside wall of the melting
pot. As an approximate guide, you can melt about
150 – 200 grams of chocolate at one time.
Before using your new Chocolate Fondue Set
for the first time, it is important that you read
and follow the instructions in this use and care
booklet, even if you feel that you are familiar with
this type of appliance.
Plug into a standard domestic power outlet and
switch on. Turn the control switch to either the
LOW or HIGH setting, depending on how you
want to use the melted chocolate.
In particular please ensure you read the section
dealing with IMPORTANT SAFEGUARDS. Find
a safe and convenient place to keep this booklet
handy for future reference.
The LOW setting will heat the chocolate to
approximately 52˚C. The chocolate will be smooth
and thick – ideal for making chocolates using
the chocolate moulds provided, for icing and
decorating cakes, biscuits, and slices and for
adding to recipes.
This appliance has been designed to operate
from a standard domestic power outlet. It is not
intended for industrial or commercial use.
The HIGH setting will heat the chocolate to
approximately 78˚C. The chocolate will be
thin and runny – ideal for chocolate fondue or
chocolate sauce. This setting works best with dark
chocolate, or when other ingredients like cream or
liqueur are added to the chocolate. It is too hot for
melting white chocolate.
Before Using the
Chocolate Fondue Set
for the First Time
Carefully unpack the Chocolate Fondue Set and
remove all the packaging materials.
When the chocolate has melted to the desired
consistency, you can use it immediately, or hold it
at this consistency by selecting the LOW setting.
The chocolate will remain perfectly melted for
at least 20 minutes. This is ideal for making
chocolates or cake decorating as there is no need
to rush before the chocolate sets.
Wash the chocolate melting pot, forks, fork rest,
chocolate moulds and spatulas in warm soapy
water and dry thoroughly.
Note: This product is not suitable for use
in a dishwasher.
Note: When melting small amounts
of chocolate you will need to use the
chocolate immediately. Very small
amounts of chocolate may burn or “seize”
if left to stand too long. It is not suitable
to melt less than 50 grams of chocolate at
one time.
Use a damp cloth to clean the outside of the
heating unit.
Note: Do not immerse the heating unit or
power cord in water or any other liquid.
When you have finished using your Chocolate
Fondue Set turn the Control Switch to the “OFF”
position and unplug from the power outlet. Allow
to cool completely before removing the chocolate
pot and washing in warm soapy water.

Chocolate Fondue
Making Your Own
Chocolates
This is a fun dessert for everyone to share. A
recipe is provided at the end of this booklet.
Hand-made chocolates are delicious and
they make a thoughtful gift. Making your own
chocolates is easy using the Chocolate Fondue
Set and the moulds provided. Use good quality
chocolate which is suitable for melting or cooking.
Simply place the chocolate pieces into the
Chocolate Melting Pot, and melt on the LOW
setting, as described on Page 5. It is best to add
flavouring ingredients like liqueurs or essences,
chopped nuts, grated citrus rind or food colours
after the chocolate has melted. Stir quickly to
combine and only add colours a few drops at a
time.
Melt the chocolate and other ingredients in the
Chocolate Fondue Set using the HIGH setting.
Remember to stir the ingredients occasionally.
The Fondue is ready when the chocolate is fully
melted and is smooth and runny in consistency.
Switch off and unplug at the power outlet and
transfer the whole unit to the table for easy
serving. The residual heat in the heating unit will
keep the chocolate warm. Place the fork rest on
the rim of the chocolate melting pot and give each
guest a fondue fork. Forks can be rested inside
the fork rest when not in use. Provide a selection
of fruits, wafers, biscuits and marshmallows for
guests to dip in the chocolate fondue.
When the chocolate has melted, pour it into
the moulds from the lip in the chocolate melting
pot. Smooth off any excess chocolate using
the scraper provided. For a neater finish, use
a teaspoon to carefully pour into the individual
moulds, a little at a time. Tap the moulds gently
on the worktop to remove any air bubbles. For
best results, allow to set at room temperature.
Only refrigerate if the room temperature is warm.
Refrigerating chocolates tends to make them lose
their gloss.
To remove the chocolates, turn the moulds over
and tap firmly on the worktop, flexing the mould a
little so that the chocolates slip out.
Wash the moulds in warm soapy water and dry
completely before using again.

Handy Hints For Success
Care and Cleaning
•
Before cleaning, always ensure the appliance is
switched off and unplugged from the power outlet.
Dark chocolate is easier to melt than milk or
white chocolate as it has a higher cocoa butter
content and less milk solids. Milk solids tend
to burn easily and cause chocolate to “seize”
or to go dry and crumbly. For this reason,
when melting milk or white chocolate, it is best
to stir often to check the melting progress.
Turn the Chocolate Fondue Set off just before
the chocolate has fully melted and continue
to stir. The residual heat will keep melting
the chocolate and this will reduce the risk of
chocolate seizing.
•
Dark chocolate does not usually need to be
stirred during the melting time, it is unlikely to
seize and can be held on the LOW setting for
at least 20 minutes without deteriorating.
•
Melting time depends on the type of chocolate
used, the temperature of the chocolate when
it is added to the melting pot, the quantity to
be melted and any other ingredients which
are added. As a guide, 150grams of dark
chocolate will take 10 minutes to melt on HIGH
and 15 minutes to melt on LOW. Milk and
white chocolate will melt faster than this.
•
When melting white chocolate, if possible,
melt small amounts at a time as this will help
to prevent the chocolate from “seizing”. 7080 grams of white chocolate will melt in 6-7
minutes.
•
Always use good quality chocolate. Chocolate
designed for cooking or melting is ideal. Most
eating chocolate can also be melted in the
Chocolate Fondue Set.
•
Use the LOW setting for most tasks as the
HIGH setting is really only for fondue and
chocolate sauce. Never attempt to speed up
the melting process by selecting the HIGH
setting to start as this will cause chocolate to
“seize”. Chocolate requires very gentle heat so
LOW is ideal for most purposes. If chocolate
seizes it cannot be recovered, it must be
thrown out and fresh chocolate used to start
again.
•
When making your own chocolates you can
create a two-tone effect by highlighting some
parts of the shape in one colour first, wait for
this to set, then pour in a different colour to
finish. For fine details, paint chocolate into
the moulds using a small, natural bristle paint
brush.
Always allow the appliance to cool completely
before cleaning.
Note: Do not immerse the heating unit or
power cord in water or any other liquid.
Wash the chocolate melting pot, fork rest, fondue
forks, spatulas and chocolate moulds in warm
soapy water. Dry thoroughly before storing.
Use a damp cloth to wipe the outside of the
heating unit, if required. Take care not to spill any
liquid inside the heating unit.
Note: No part of this Chocolate Fondue
Set can be used in a dishwasher.

3. Pour the melted chocolate over the combined
ingredients and mix well.
Chocolate Tiramisu
150ml thickened cream
4. Using two teaspoons, shape the chocolates
into rounds and place on a foil-lined tray.
200g dark chocolate
5. Allow to set for at least one hour.
250g mascarpone
Makes 16
2 tablespoons rum (or other liqueur)
2 tablespoons caster sugar
Chocolate Fondue
250ml strong coffee
100ml cream
300g sponge finger biscuits
115g dark chocolate
cocoa powder, for dusting
2 teaspoons brandy, or other liqueur
Sliced fruit, biscuits and marshmallows, for
serving
1. Break the chocolate into pieces and place
in the Chocolate Fondue Set. Switch on and
turn the control switch to the HIGH setting.
Stir occasionally until melted.
2. Whip the cream, fold in the mascarpone and
melted chocolate. Stir until well combined.
1. Place the cream into the Chocolate Fondue
Set, turn the control switch to the HIGH
setting and allow to warm for 10 minutes.
3. Dissolve the sugar in the coffee, stir in the
rum.
2. Break the chocolate into pieces and add to
the cream, together with the brandy.
4. Quickly dip the sponge finger biscuits in the
coffee mixture, allow them to soften slightly,
but do not soak.
3. Allow to melt for 15-20 minutes, stirring
occasionally to check progress.
4. The fondue is ready when the chocolate is
fully melted, smooth and glossy.
5. Place one layer of sponge finger biscuits in
the base of a medium-sized serving dish.
5. Serve immediately, with fruit, biscuits and
marshmallows for dipping.
6. Top with half of the chocolate mixture.

7. Repeat with another layer of sponge finger
biscuits and finish with the remaining
chocolate mixture.
Florentines
8. Dust with cocoa powder and refrigerate for at
least one hour, or overnight before serving.
1 cup cornflakes, lightly crushed
2/3 cup chopped red glace cherries
Serves 6-8
1⁄2 cup sultanas
1⁄2 cup unsalted peanuts
Fruit and Nut Chocolates
1/3 cup condensed milk
200g milk chocolate
150g dark chocolate
50g toasted muesli
40g toasted almonds, finely chopped
1. Combine all ingredients except the chocolate
and mix well.
40g toasted hazelnuts, skins removed and finely
chopped
2. Line scone trays with baking paper. Place
one teaspoon of the mixture onto the
prepared trays, allowing room for spreading.
5 dried apricots, finely chopped
15g sultanas
1. Break the chocolate into pieces and place into
the Chocolate Fondue Set. Melt on the LOW
setting.
3. Bake at 190oC for 8-10 minutes, or until the
edges begin to turn light brown. Allow to cool
on the trays.
2. Place the remaining ingredients into a medium
sized mixing bowl and stir to combine.
4. Remove the biscuits, using a spatula.

5. Break the chocolate into pieces, place in the
Chocolate Fondue Set, and allow to melt on
the LOW setting.
6. Spread the melted chocolate onto the base
of the cooled biscuits. Mark wavy lines on
the chocolate with a fork. Allow to set.
7. Store in an airtight container.
