Like the old saying goes “if you don’t use it, you'll lose it.” Regular exercise is the best way to improve your range of motion. Although you haven't been active in a long time you can start now to improve your mobility and Foot Clinic strength. Even small movements, if done on a regular basis can improve your quality of life. Craft programs report that they have a calming effect and enhance social skills. Handiwork with yarn helps arthritic fingers remain more dexterous. Join the Knot just for Knitters Knitting & Crocheting Group This new activity for seniors will be on every Tuesday at 2:30pm. Instructor has hooks, yarn & cotton for the first class. During the first class, seniors will make potholders to learn basics and get to know each other. Each session will build on the last or what individuals know. If you have questions, please call 810 639-2822. 6 Kathy’s Sweet Potato Casserole -Makes 6 to 8 servings Sweet Potato Filling: 1 ½ C. cooked, mashed sweet potato 8 T. (one stick) real butter, melted ½ C. granulated sugar ½ tsp. salt 2 large eggs ½ C. canned evaporated milk 1 tsp. vanilla Topping: ½ C. light brown sugar 3 T. flour 4 T. real butter (one-half a stick), melted ½ C. chopped pecans ½ C. sweetened, flaked coconut ½ C. dried cranberries (optional) Preheat oven to 350° F. Spray baking dish with vegetable cooking spray. Mix potato filling ingredients together: I use a hand mixer for smooth results, and I add and beat eggs in mixing bowl first so they will blend in evenly. Add sugar next, and beat for a few seconds to blend; then add the rest of the filling ingredients and blend with mixer until smooth. Transfer filling to the greased baking dish. Mix topping ingredients together well, starting with the brown sugar and flour. Be sure all of sugar and flour is moistened somewhat by the melted butter. Sprinkle topping over sweet potatoes in baking dish. Bake uncovered, in preheated oven for 30 minutes, until hot and slightly browned.
