Pumpkin Chocolate Chip Cookies 1 ½ cups canned pumpkin 1 egg 1 teaspoon vanilla ½ cup vegetable oil 1 teaspoon nutmeg 1 teaspoon cinnamon 1 teaspoon baking soda 1 teaspoon baking powder 1 ½ cup sugar 1 teaspoon salt 2 ½ cups flour 2/3 cup chocolate chips In a large mixing bowl, combine pumpkin, eggs, vanilla, vegetable oil, nutmeg, cinnamon, baking soda, baking powder, sugar, and salt and mix well. Add flour and mix to combine. Stir in chocolate chips. Drop dough onto ungreased cookie sheets and bake at 350 for 15 minutes. Homemade Oreos 1 dark chocolate cake mix ¾ cup shortening 2 eggs In the kitchen aid combine the above ingredients. When combined, roll dough into quarter size balls with clean hands. Bake on ungreased cookie sheet for 6 minutes @ 350 degrees. Let the cookies cool Filling 4 oz cream cheese ¾ cup powdered sugar 1 teaspoon vanilla Combine the above ingredients in the kitchen aid. Spread the filling between two cookies. Favorite Chocolate Chip Oatmeal Cookies ½ cup butter, softened ½ cup shortening 1 cup brown sugar 1 cup sugar 2 eggs 2 teaspoons vanilla 1 teaspoon salt 2 teaspoons baking soda ½ teaspoon baking powder 2 ¼cups flour 2 cups old fashioned oats 2/3 cup semi sweet chocolate chips Cream together shortening, butter, brown sugar, sugar, eggs, and vanilla. Add salt, soda, powder, and flour until combined. Add oats. Stir in chocolate chips. Spoon balls of dough onto an ungreased cookie sheet. Bake at 350 for 10 minutes Homemade Brownies Original Amount 2 c. sugar 2/3 c. cocoa 1 c. butter or margarine 4 eggs 2 c. flour 1 tsp. vanilla ½ tsp. salt Opt. 1 c. Chopped nuts. Cream first four ingredients together. Add last four ingredients and mix well. Dough will be stiff. Spread into a 9x13 inch pan and bake at 375 degrees for 25-30 minutes. Chocolate Frosting~2 c. powdered sugar 3 TBSP. Cocoa ½ stick butter 1 tsp. vanilla 1-2 TBS. milk Soften butter, mix ingredients. Molasses Cookies 1/3 Cup Butter 1/3 Cup shortening 1 cup brown sugar 1 egg ¼ cup molasses 2 ¼ cup flour 2 teaspoons baking soda 1 teaspoon cinnamon 1 teaspoon ginger ½ teaspoon cloves Sugar Directions Cream together the butter, shortening, and brown sugar in your kitchen aid. Add egg and molasses and mix well. In a separate bowl, combine all the dry ingredients and mix well. Add dry ingredients to wet ingredients and mix well. Scoop dough into balls and roll in the sugar and place on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Crunchy Munch Goop 1/2 c Light corn syrup 1/4 c Brown sugar 1 c Peanut butter 1 t Vanilla 2 c Rice Krispies 1 c Corn Flakes (slightly crushed) 1 c Chocolate chips 1/8 t Salt Combine syrup, sugar and salt in saucepan; bring to a full boil. Stir in peanut butter. Remove from heat. Stir in vanilla, cereals, and chocolate pieces. Press into buttered 9 x 9 x 2 inch pan. Chill about 1 hour. Cut in small bars or squares. Makes about 2 dozen. FRUIT PIZZA (serves 6) 6 TBL shortening ½ c sugar 1 egg ½ tsp. vanilla ½ tsp baking powder ½ tsp salt 1 ¼ c flour CRUST: using an electric mixer, cream margarine and sugar. Add eggs and vanilla. Beat together. Combine baking powder, salt, and flour. Add to creamed mixture, using a wooden spoon. Press onto a greased 12-14 inch pizza pan, about 1/8 to ¼” thick. Bake 10-12 min. at 350 degrees or until the edges are slightly brown. In a mixing bowl, whisk together flour, baking powder, baking soda, salt and poppy seeds, set aside. In the bowl of Kitchen aid mixer, attached with paddle attachment, blend together butter and sugar on medium speed until pale and fluffy. Add in eggs and almond extract and mix until blended. Measure out milk into a liquid measuring cup then whisk sour cream into milk. Coffee Cake Muffins (not made with coffee) For The Muffins pans 1/2 cup (1 stick) unsalted butter, room temperature, plus more for 1 3/4 cups all-purpose flour (spooned and leveled), plus more for pans 2 teaspoons baking powder 1 teaspoon baking soda 1 cup sour cream 1 cup granulated sugar 1 teaspoon pure vanilla extract 2 large eggs . Meanwhile heat oven to 425. Place butter in a 9x13 glass baking dish. Put in hot oven ong enough to melt butter. Remove and pour beaten egg mixture into hot butter. Bake at 425 for 20 minutes. Pancakes will “grow” up sides of pan. Cut into slices and top with powdered sugar. Orange Julius 6 ounces frozen orange juice concentrate 1 cup milk 1 cup water 1/4 cup sugar 1 teaspoon vanilla 8 ice cubes Combine in blender in order listed above Omelets Sautee mushrooms and onion Dice tomatoes Dice Ham 1 egg 1 Tablespoon of butter Warm pan and melt 1 T butter Crack egg and beat it until mixed Pour egg onto hot frying pan Cook Egg Add desired topping on half the egg Flip half of egg with no topping onto the side with topping and slide onto plate Breakfast Biscuits 1 ¾ cups all-purpose flour 2 ½ tsp. baking powder ½ tsp. salt ¼ c. shortening ¾ c. milk 1. Preheat oven to 425 (or as assigned) 2. Sift flour, powder (or as assigned) and salt. Cut-in shortening with two butter knives, until the fat pieces are about the size of rice. Make a well in the center of the mixture and pour in milk. Stir with a fork just until mixed (25 strokes). 3. On a lightly floured surface, roll the dough out to ½ inch thick (USE A RULER!) Cut the biscuits, and transfer to a baking sheet. 4. Gather the remaining dough and re-roll and cut additional biscuits. (Keep these separate than the original biscuits on the baking sheet). 5. Place in preheat oven (or as assigned). Bake on greased cookie sheet until tops are golden brown (12-15 min.) Transfer baked goods to a cooling rack. Using a ruler, measure the height of all the biscuits. Get an average (add up the height of all the biscuits, then divide the total number by how many biscuits you measured). Cinnamon Rolls PART ONE Ingredients: Step One: Step Two: Step Three: Step Four: 1 Tbsp. yeast ½ c. potato flakes 2/3 c. sugar 7 to 9 c. flour 1 Tbsp. sugar 1 c. warm water 1 ½ tsp. salt 1 c. warm water (Between 110-115) 2/3 c. shortening 2 eggs Step One 1. In a LARGE bowl, dissolve ingredients listed under step one above: 1 Tbsp. yeast, 1 Tbsp. sugar & 1 c. warm water. Stir together until well combined then cover with a large towel and set aside until yeast is activated. Step Two 2. While yeast is activating, add ingredients listed in step two together: ½ c. potato flakes and 1 c. warm water. Mix them together and allow the potato flakes to absorb all of the water until you have a mixture that looks like mashed potatoes. Set aside. Step Three 3. After yeast is activated, (it will look frothy and foamy), add ingredients listed under step three above: 2/3 c. sugar, 1 ½ tsp. salt, 2/3 c. shortening and 2 eggs. With an electric mixer, mix all ingredients together until shortening is evenly distributed. 4. Add the mashed potatoes to the mixture and blend until evenly distributed. Step Four 5. Slowly, add ONLY 2 to 3 cups of flour while blending with the electric mixer. Beat on medium speed and be careful not to burn out the motor! 6. Remove the blender and stir in another 3 to 4 cups of flour with a wooden spoon until the dough is easy to handle. Be careful not to add too much flour. You want it to be soft, but not sticky. 7. Turn the dough out onto the floured countertop. Knead until the dough is smooth and elastic, (for about 5 to 10 minutes). Use just enough flour to keep the dough from sticking to you or the countertop. Step Five 8. When you are finished kneading, label a large Ziplock bag with your lab number, class period and names. 9. Place your dough in the Ziplock bag and seal tightly, pressing out as much air as possible. Then, place your dough in the fridge. PART TWO *Preheat the oven to 350 Ingredients: Step One: 1/4 c. melted margarine Step Two: Step Three: 1 c. brown sugar 1/2 to 1 c. flour 2 tsp. cinnamon Step Four: 1 c. powdered sugar 1 to 2 Tbsp. milk/water 1 tsp. vanilla Step One 1. Melt 1/4 c. of margarine listed under step one in a custard cup and set aside. Step Two 2. In a small cereal bowl, mix together the ingredients listed under step two: 1 c. brown sugar and 2 tsp. cinnamon. Set aside. Step Three 3. Retrieve your cinnamon roll dough from the supply table and use the flour listed under step three to knead your dough until soft and elastic. You may need more or less flour depending on how sticky the dough it. 4. When the dough reaches room temperature divide it in half. Working with one half the dough, roll it out into a large rectangle. Spread one half of the melted butter with your pastry brush or the back of a spoon until it reaches one inch from the edge of the dough. 5. Then, sprinkle one half of the cinnamon/brown sugar mixture evenly over the melted butter. Press the sugar mixture into the dough to set it in place. 6. Begin to roll the LONG edge of the dough into a cylinder, making sure to pinch the dough down as you go to prevent the cinnamon rolls from coming unraveled in the oven. Pinch each end together to keep the filling inside. 7. Using the thread, cut each cinnamon roll into even slices. Place the cinnamon rolls on a sprayed cookie sheet. Allow to rise for about 10 to 15 minutes. 8. REPEAT STEPS 4 THROUGH 7 WITH THE SECOND HALF OF YOUR DOUGH! Step Four 9. As your cinnamon rolls are rising, combine ingredients listed under step four: 1 c. powdered sugar, 1 to 2 Tbsp. milk/water and vanilla, in a small bowl. Set aside. Step Five 10. When, your cinnamon rolls are done rising, place them in the oven and back at 350 for 12 to 15 minutes, or until the center is cooked through. 11. Remove cinnamon rolls from the oven and glaze with the powdered sugar frosting. Eat and enjoy! Spaghetti and Breadsticks Easy Breadsticks 1 ½ teaspoon yeast ¾ cup warm water 1 T. sugar ¼ teaspoon salt 1 ½ -2 cups flour ¼ cup butter Garlic Salt 2 T Grated Parmesan Preheat oven to 375 degrees Dissolve yeast in sugar in warm water in your kitchen aide. Add salt and flour. Mix for 2 minutes using the hook paddle Let rest in bowl for 15 minutes Put melted butter onto half of a cookie sheet Spread dough mixture on half of the cookie sheet Cut into strips with a pizza cutter Sprinkle with parmesan and garlic salt Let rest on pan for 10 minutes Bake for 15 minutes Easy Marinara Sauce ¾ cup crushed tomatoes 1cup tomato Sauce 1 T. Brown Sugar 1 t. Garlic/Onion Salt 1 t. Italian seasoning Simmer for 15 minutes to blend flavors Spaghetti Noodles ½ package Bring water to a boil with the lid off When water is boiling add noodles Cook until al dente SET YOUR TABLE AND EAT WITH YOUR FOODS FAMILY. USE YOUR MANNERS! VEGETABLE STIRFRY 1/3 onions, sliced 2 stalks celery, sliced 2 carrots, peeled and sliced ½ c broccoli, sliced 2 Tbsp oil 4 tsp cornstarch 2 Tbsp soy sauce 1 cup water 1 tsp sugar Wash and cut up all vegetables. Heat oil in frying pan. Add vegetables and cook until tender. Mix cornstarch, soy sauce, water, and sugar together to make a sauce. Add to vegetables and cook for 2 minutes, or until thick. Serve over cooked rice. Rice In a medium sauce pan bring to boil 2 ½ cups water Add 1 cup rice Turn heat to simmer Cover Simmer for 15 minutes Stir Take off heat Cover and sit off heat for 5 minutes Microwave Potatoes & White Sauce 1. Baked potatoes 4 potatoes for baking or 1 per person Prick 4 well-scrubbed potatoes several times with fork tines. Arrange 1 inch apart on paper towel on oven floor. Microwave at HIGH for 6 to 8 minutes using 100 percent power. Turn the potatoes over and rearrange. Cook for an additional 6 to 8 minutes until done. Potatoes may still feel slightly firm. Wrap each potato in foil or paper towel. Let stand 5 to 10 minutes to finish cooking. In the meantime, prepare a cheese sauce with broccoli to serve over potatoes. 2. Broccoli Wash, cut and chop broccoli into bite-size pieces. Put in a casserole dish with a lid. Add 1-2 tablespoons water. Cover with the lid. Cook on HIGH for 3-5 minutes or until tender crisp and done. Let stand, covered, for 5 minutes. Drain any excess water and mix with the cheese sauce. 3. White Sauce 2 tbs. butter 2 tbs. flour Dash pepper 1 cup milk 1 cup grated cheese In a medium size mixing bowl, melt butter covered with paper towel; at 70% power MEDUIM-HIGH for 40 to 50 seconds or until melted. Gradually, stir in flour and pepper. Continue to mix until the mixture is smooth. Add mild all at once. Stir to combine. Cook, uncovered, on HIGH for 3 to 5 minutes or until thickened and bubbly; stirring every minute till the sauce starts to thicken. Potato logs Ingredients: 4 potatoes 4 tbsp. oil 1 tsp. onion powder 1 tsp. garlic salt 1 tsp. paprika 1/2 tsp. pepper Directions: Preheat oven to 375 degrees. Wash potatoes. DO NOT PEEL. Cut potatoes into long wedges that are 1/2 inch wide. Rinse potatoes. Put oil and seasonings in a bag, put potatoes in bag and shake to coat. Place potatoes on cookie sheet that has been covered with foil. Bake for 25 minutes. Can use dipping sauces such as BBQ Sauce, Ranch dressing, catsup, etc. Fettuccini Alfredo 1 package cream cheese (8oz) cubed ¾ cup parmesan Cheese ½ cup butter ½ cup milk 8 oz fettuccini, cooked In a large saucepan, combine the cream cheese, parmesan cheese, butter and milk.
