The History of the Manhattan
One thing we’re pretty sure of is that the drink had
reared its beautiful head by the 1880s, and we also know
that it was one of the very first cocktails that called
for vermouth as a modifier. Dear, sweet vermouth. The Manhattan predates other vermouth greats like the Martini,
the Martinez, the Rob Roy and the Bobby Burns. It is the
king of vermouth drinks.
There’s a chance that the Manhattan was invented at the
Manhattan Club in New York, and the club’s official history makes that claim. According to popular legend, the recipe was created there for a party thrown in 1874 by Jennie
Jerome (AKA Lady Randolph Churchill), Winston Churchill’s
mother. But no matter what anyone tells you—and this story
is often seen in print, don’t believe it.
As Liquor.com advisor David Wondrich pointed out in his
book Imbibe!, Lady Randolph was in England about to give
birth to little Winnie at the time she was supposed to be
partying in the Big Apple.
The best lead we have on the true birth of the drink is
from a story written by William F. Mulhall, a bartender
who plied his trade at New York’s famed Hoffman House for
more than 30 years, starting in the early 1880s. “The Manhattan cocktail was invented by a man named Black, who
kept a place ten doors below Houston Street on Broadway in
the 1860’s, and invented the most famous drink in the
world in its time” Mulhall wrote.
Even though Mulhall’s account comes decades after the
drink appeared on the scene, we do know that the man was a
bona fide bartender. And if you can’t trust a bartender,
who can you trust?

On May 4, 1964, the United States Congress
recognized Bourbon Whiskey as a “distinctive
product of the United States.” The Federal
Standards of Identity for Distilled Spirits
(27 C.F.R. 5.22) state that bourbon must meet
these requirements:
* Bourbon must be made of a grain mixture that
is at least 51% corn (maize).
* Bourbon must be distilled to no more than
160 (U.S.) proof (80% alcohol by volume).
* Neither coloring nor flavoring may be added.
* Bourbon must be aged in new, charred oak
barrels.
* Bourbon must be entered into the barrel at
no more than 125 proof (62.5% alcohol by volume).
* Bourbon, like other whiskeys, may be bottled
at not less than 80 proof (40% alcohol by volume.)
* Bourbon that meets the above requirements
and has been aged for a minimum of two years
may (but is not required to) be called
Straight Bourbon.
* Straight Bourbon aged for a period less than
four years must be labeled with the duration
of its aging.
* If an age is stated on the label, it must be
the age of the youngest whiskey in the bottle.
* Only whiskey produced in the United States
can be called bourbon.

Some key types listed in the U.S. Code of Federal
Regulations are:
* Rye whiskey, from mash that consists of at least
51% rye.
* Rye malt whiskey, from mash that consists of at
least 51% malted rye.
* Malt whiskey, from mash that consists of at

* Wheat whiskey, from mash that consists of at

* Tennessee whiskey, there are only four brands of
Tennessee whiskey that are currently bottled –
Jack Daniel's, George Dickel, Benjamin Prichard's,
and Collier and McKeel. Three of the four brands
that currently produce Tennessee whiskey use a
production process that involves a filtering stage
called the Lincoln County Process, in which the
whiskey is filtered through a thick layer of maple
charcoal before it is put into casks for aging. In
2013, Tennessee House Bill 1084 was passed, requiring the Lincoln County process to be used for
products produced in the state labeling themselves
as "Tennessee Whiskey".

Whisky production in Japan began around 1870,
but the first commercial production was in
1924 upon the opening of the country's first
distillery, Yamazaki. Broadly speaking the
style of Japanese whisky is more similar to
that of Scotch whisky than Irish, American, or
Canadian styles of whiskey, and thus the
spelling typically follows the Scottish convention (omitting the letter "e").

Absinthe
Vodka
A potent yellowish-green alcoholic drink,
technically a gin, originally having high
wormwood content. Highly aromatic, this liqueur is dry and somewhat bitter in taste.
Wormwood (Artemisia absinthium) is the chief
flavoring ingredient; other aromatic ingredients include licorice (which usually predominates in the aroma), hyssop, fennel, angelica
root, aniseed, and star aniseed.
Absinthe has often been portrayed as a dangerously addictive psychoactive drug. The chemical compound thujone, although present in the
spirit in only trace amounts, was blamed for
its alleged harmful effects. By 1915, absinthe
had been banned in the United States and in
much of Europe. Although absinthe was vilified, it has not been demonstrated to be any
more dangerous than ordinary spirits. Recent
studies have shown that absinthe's psychoactive properties (apart from that of the alcohol) have been exaggerated.

Colorless, distilled liquor of neutral spirits
usually made from a grain mash (generally rye
or wheat). Potato vodka originated in Russia
in the 14th century. Today most vodka is distilled from cereal grains. It is highly neutral, most flavoring substances having been
eliminated during distillation and filtration,
the latter process employing charcoal purifiers. Distilled water is usually added before
bottling in order to lower alcohol content to
40–43% by volume (80–86 proof). Vodka is not
aged.

According to the European Union, gin is legally differentiated into the following four catagories:
* Juniper-flavored Spirits: This includes the
earliest class of gin, which is produced by
pot distilling a fermented grain mash to moderate strength (e.g. 68% ABV), and then redistilling it with botanicals to extract the
aromatic compounds. It must be bottled at a
minimum of 30% ABV.
* Gin: This is a juniper-flavored spirit made
not via the re-distillation of botanicals, but
by simply adding approved natural flavoring
substances to a neutral spirit of agricultural
origin. The predominant flavor must be juniper.
* Distilled Gin:
Distilled gin is produced
exclusively by re-distilling ethyl alcohol of
agricultural origin with an initial strength
of 96% ABV in stills traditionally used for
gin, in the presence of juniper berries and of
other natural botanicals.
* London Gin: London Gin may not contain added sweetening exceeding 0.1 grams of sugar per
liter of the final product, nor colorants, nor
any added ingredients other than water. The
term London Gin may be supplemented by the
term "dry".
Gin Offerings
Usually clear in color and unaged, made from
the fermented juice of the Mexican agave
plant. It contains 40–50% alcohol. It was developed soon after the Spaniards brought distillation to Mexico, and is named for the town
of Tequila. There are 4 types of tequila:
*Silver: Un-aged and bottled or stored immediately after distillation, or aged less than
two months in stainless steel or neutral oak
barrels.
*Gold: Un-aged silver tequila that may be flavored with caramel coloring. Could also be the
result of blending silver tequila with aged
and/or extra-aged tequila.
*Reposado: Aged a minimum of two months, but
less than a year in oak barrels of any size.
*Añejo: Aged a minimum of one year, but less
than three years in small oak barrels

A distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly
from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear
liquid, is then usually aged in oak barrels.
Liqueurs, or cordials, are a sweet distilled
spirit with sugar contents starting at 2.5
percent, with the sweetest going far beyond
