Activity recipe: Honey coated carrots
Difficulty: Easy.
Age range: Over five years old.
How many can do it? As many as can fit into a workspace or kitchen.
Where can you do it? Indoors.
Why we like it? Carrots are hardly ever eaten in this way! It is also a very good way
to get childreneating their five a day!
Ingredients
Two pounds or two bags of carrots, two tablespoons of clear honey, one
tablespoon of butter to one pound of carrots, one teaspoon of lemon juice,
pinch of salt (optional), pepper and chopped parsley (optional) and two saucepans.
Method
1. Rinse carrots in cold water to clean away soil or debris.
2. Chop or slice carrots into small pieces.
3. Put in a water filled saucepan and add a pinch of salt.
4. Bring to the boil and reduce to a medium-low heat.
5. Continue cooking for about 10 minutes until the carrots are tender.
6. Drain and set aside.
7. In another saucepan, melt a tablespoon of butter (per one pound of carrots).
8. Add honey and brown sugar. Cook and stir on a low heat until the sugar dissolves.
9. Add lemon juice and the carrots.
10. Continue heating, gently stirring, until carrots are hot and glazed.
11. Serve immediately, garnished with freshly ground pepper or chopped parsley,
if desired.
Top tips
1. Ensure the boiling carrots are partially covered, to avoid burns and spills!
2. Chop the carrots so they are equally thick to ensure they cook evenly.
If some carrots are thicker, just cut them in half.
3. Make sure they look as good as they taste! Some shops sell multicoloured or rainbow carrots!
