Banana Malt Smoothie





1 small banana, peeled and chopped
1 tbsp. malt powder
½ cup fat free vanilla yoghurt
¼ cup low fat milk
½ tsp honey; 2 ice cubes
Place banana, malt, yoghurt, milk, honey and ice in a blender.
Blend until smooth and frothy. Pour into glass and serve (serves
one)
Banana Cinnamon Porridge




½ cup low fat milk
¼ cup traditional rolled oats
1 small banana, sliced diagonally
sprinkle ground cinnamon
Bring milk to a simmer in a medium saucepan over medium-high
heat. Stir in oats and bring to the boil. Reduce heat to medium.
Cook, stirring with a wooden spoon, for 3 minutes or until
porridge thickens. Remove from heat. Cover and stand for 5
minutes. Spoon into bowls, top with banana and cinnamon and
serve (serves 1)

Choc-Chip Banana Weet-bix Muffins








1 large ripe banana mashe
4 Weet-Bix crushed
¾ cup low fat milk
2 eggs
50g reduced fat canola spread
1 ½ cups self-raising flour, sifted
2 tbsp. brown sugar
½ cup chocolate chips
Preheat oven to 180°C. Grease three 12-hole mini muffin pans.
Combine bananas and Weet-Bix in a bowl. Stir in the milk and
set aside for 10 minutes.
Meanwhile, beat together the eggs and canola spread until well
combined, and then add to the banana mixture. Combine flour
and sugar in a large bowl and add wet ingredients and choc
chips.
Stir until just combined, then spoon into muffin pan and bake for
25 minutes or until a skewer inserted into the centre comes out
clean (makes 36 mini muffins).

Banana Bread






2 cups self-raising flour
1/3 cup firmly packed brown sugar
1 tsp bicarbonate of soda
2 eggs, lightly whisked
1 cup low fat milk
2 large ripe bananas, mashed
Preheat oven to 180°C. Line the base and sides of a 6cm-deep,
20 x 10cm loaf pan with non-stick baking paper. Sift the flour
into a large bowl. Add the sugar and bicarbonate of soda, and
stir to combine. Add the egg, milk and banana, and gently fold
until well combined. Spoon the mixture into the lined pan. Bake
in oven for 45 minutes or until a skewer inserted into the centre
comes out clean. Set aside to cool completely. Cut into slices to
serve.

Banana Slice











1 cup self raising flour
pinch of salt
¼ tsp of bi-carb soda
¼ cup low fat milk
1 egg beaten
½ tsp baking powder
¾ cup caster sugar
50g reduced fat canola spread
1/3 cup mashed banana
½ tsp cinnamon
½ tsp nutmeg
Sift dry ingredients. Melt canola spread. Mix the egg, milk,
canola spread and banana. Stir into the dry ingredients. Grease a
lamington pan and bake for 25 - 30 minutes in a moderate oven.
Sprinkle with cinnamon.

Banana Oat Bars








2 large ripe bananas, mashed
3 cups traditional rolled oats
¼ cup finely chopped dried date
¼ cup finely chopped dried apricots
¼ cup slivered almonds
1 tsp ground cinnamon
1 ½ tsp vanilla extract
2 tbsp. chia seeds
Preheat oven to 180°C. Line a 16cm x 25.5cm (base) slice pan
with baking paper, extending paper 2cm above edges of pan.
Combine bananas, oats, dates, apricots, almonds, cinnamon and
vanilla. Stir until well combined. Spoon mixture evenly into
prepared pan and sprinkle chia seeds over to cover. Bake for 30
to 35 minutes or until golden. Cool completely. Cut into small
bars before serving.

Banana Pancakes
 1 cup mashed banana
 2 eggs lightly beaten
Combine banana and egg and mix well. Heat non-stick pan and
cook pancakes until golden. Sprinkle with cinnamon and serve
with fat free vanilla yoghurt.
Grilled Bananas with Ice-cream





4 bananas
1 tbsp. lemon juice
1 tbsp. brown sugar
1 tsp ground cinnamon
light vanilla ice-cream to serve
Halve each banana lengthways. Sprinkle bananas with lemon
juice. In a small bowl, mix together the brown sugar and
cinnamon. Sprinkle sugar/cinnamon mixture over bananas. Grill
in oven for a few minutes until caramelized. Serve with light icecream (Serves 8).

Banana Boat Treats




2 small bananas
2 tbsp. chocolate chips
2 tbsp. miniature marshmallows
2 tbsp. slivered almonds
Slit each banana lengthwise through the peel, making sure not
to cut all the way through to the other side. Stuff the bananas
with chocolate chips, marshmallows and almonds. Wrap each
banana in aluminum foil and heat on the barbecue or in a preheated 150°C oven for 5 minutes, or until chocolate is melted
(serves 2).
