Prep Time: 30 minutes Yield: 6 Half Pints Ingredients 4 cups crushed berries, mix and match your favorites such as strawberries, blackberries, and/or raspberries 1 1 ¾ ounce package regular powdered fruit pectin 3 cups sugar Special Materials and Tools: 6-8 quart kettle/ Dutch oven Potato masher Boiling water canner Ladle 6 half pint jars, rings and lids (sterilized) Canning funnel Jar lifter Crush the berries, using a potato masher and measure out four cups exactly of fruit and juices. Combine the berries in an 8-quart saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly. Add entire measure of sugar, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam, if necessary. Working quickly, ladle the hot preserves into sterilized, half-pint canning jars, leaving a ¼ inch headspace. Wipe clean the jar rims, then add the lids and rings. Process in a boiling water canner for 10 minutes (from the time the water returns to boiling). Remove jars carefully, and cool on racks until jam is set.
