Got some carrots that are looking a little sad and wilted? They are perfect for use in our Carrot Cake recipe and it’s so simple to make! Ingredients 300g finely grated carrot 140ml vegetable/sunflower oil 200g demerera, light golden brown or golden caster sugar. 2 large eggs beaten 180g self raising flour ½ teaspoon baking soda Pinch of salt 1 teaspoon ground cinnamon ½ teaspoon grated nutmeg ½ teaspoon mixed spice Method Preheat oven to 150 degrees Celsius. (or Fan 140) Mix the sugar, oil and eggs together in a bowl Stir in the carrots . Add the baking soda, spices, salt and flour. Mix with a wooden spoon until combined well and no flour lumps showing. Pour into a lined loaf tin. Smooth the top with the back of a spoon. Bake in the oven for 1-1 ¼ hours. It should be firm on top. Allow to cool in the tin and then tip out. When cool slice up and enjoy!
