Cream of Mirliton and Shrimp Soup

Ingredients
8 mirlitons*, halved
¼ cup Louisiana pecan oil
½ cup butter
1 cup chopped sweet onion
1 cup chopped celery
1½ teaspoons minced garlic
1 lb. small shrimp, peeled and deveined
Instructions
To a large pot, add mirlitons and enough water to cover. Bring to a boil,
and cook until fork-tender, about 45 minutes. Transfer mirlitons to a colander,
and let stand until cool enough to handle.
Remove and discard seeds and fibrous membranes from mirlitons, and scoop
out as much flesh as possible. Place flesh in a large bowl, and mash until smooth.
In a large Dutch oven, heat pecan oil and butter over low heat until melted.
Add onion, celery, and mirliton; cook until onion is soft, about 8 minutes.
Add garlic and shrimp; cook for 2 minutes. Stir in peppers, salt, ginger, and basil.
Add flour, stirring well.

Stir in broth, and bring to a boil over high heat. Reduce heat, and simmer,
stirring occasionally, for 30 minutes. Remove from heat, and add half-and-half.
Serve immediately.

EASY CHOCOLATE PEANUT BUTTER BALLS

Ingredients:
18oz Peanut Butter Jar
¼ Cup Butter
2 Cups Powdered Sugar
½ teaspoon Vanilla Extract
12 oz bag of Nestle’s Semi- Sweet Morsels
1. Mix the peanut butter, butter, vanilla extract and
powdered sugar in a bowl. Stir until combined.
2. Shape into approximately 1-inch balls and place on
baking pan. Put in Freezer for about 20 minutes.
3. Melt Nestle’s Semi- Sweet Morsels according to Pkg
( I Microwaved )
4. Dip peanut butter balls into chocolate w/ toothpick
letting the excess coating drip off. return the chocolate
coated peanut butter balls back to the pan until chocolate
is firm.
5. Store in a Ziploc bag in the refrigerator.

Ingredients
• 2 cups vanilla ice cream
• 1 1/4 cups milk
• 1/4 - 1/2 Teaspoon Mint extract
• 9 drops green food coloring
Optional pretty stuff
-chocolate syrup (optional glass decoration)
-whipped cream (optional topping)
-green sugar (optional decoration)
Directions
1. Blend all ingredients together until smooth and
yummy.
2. drizzle some chocolate syrup around your glass.
3. Pour Shamrock Shake into the glass.
4. top with whipped cream and green sugar.

Easter Ham
Ingredients
•1 Ham, pre-cooked, bone-in,
spiral cut
•3 Cups Brown sugar
•1 Can pineapple tidbits, with juice
Step One
Cover the bottom of the crockpot with brown
sugar.
Step Two
Place ham on top of the brown sugar and add
the pineapple tidbits with the juice. Sprinkle
ham with more brown sugar.
Step Three
1.Cover and cook on low for 6-8 hours.

Ranch BLT Pasta Salad

8 ounces radiatore pasta (or another type of
medium-sized pasta)
1 bottle Hidden Valley® Original Ranch® Salad Dressing
1 + 1/2 cup diced tomatoes, seeds removed
1 cup cubed Swiss cheese
1/2 cup thinly sliced red onions
1 pound bacon, cooked crispy and chopped
2 cups finely chopped romaine or iceberg lettuce
coarse salt and fresh black pepper
• Cook the pasta according to package directions to
al dente in plenty of salted water.
• Drain pasta, toss with dressing to lightly coat so they
don’t stick together and refrigerate until cold.
• In a large bowl toss the cold pasta with the tomatoes,
Swiss, onions, bacon and lettuce.
• Add enough dressing to generously coat everything
and season to taste with salt and pepper.
Serves 6-8 as side dish

1 lb. ground chuck
(use any veggies you like – this is what I used)
1 onion chopped
1 bell pepper chopped
1 zucchini cubed
1 yellow squash cubed
1 cup diced mushrooms
1 mirliton cubed
1 can artichoke hearts, chopped
A drizzle of Olive Oil
1 tbsp. Italian Seasoning
1 tbsp. Garlic Powder or 3 garlic cloves chopped
1 cup grated Parmesan Cheese
¼ to ½ cup of Italian bread crumbs
Salt & Black Pepper
Dash of Tabasco or Cajun Seasoning.
Cook ground meat and drain. Add veggies and sauté until done
to your liking. Add cheese & bread crumbs & season to taste.

Perfectly Grilled Pork Ribs

Jul 04: Independence Day
Ingredients
•3½ pounds pork ribs
•2 tablespoons honey
•1 teaspoon cayenne pepper
•1 teaspoon chili powder
•1 teaspoon onion powder
Instructions
1.Preheat oven to 300 degrees.
2.Arrange foil on two baking sheets and divide pork ribs
between the two sheets.
3.Mix together spices in a bowl.
4.Using a basting or pastry brush, coat ribs with honey.
Sprinkle evenly with spices, and then use the brush to
spread spices out more evenly.
5.Wrap foil around ribs and bake at 300 degrees for 2 hours.
***(I’d bake for 3 hrs. for a more tender rib-but haven’t
made these ribs yet.)
1.Prepare grill to be ready when 2 hour baking time is up.
Remove pork ribs from oven and cook for 4-5 minutes on
each side on the grill.

Ingredients:
1 Bottle of White Zinfandel
8 ounces of Strawberry Daiquiri Mix (non-alcoholic)
6 ounces of Peach-Flavored Mixer (such as Fuzzy Navel –
non-alcoholic)
8 ounces of pineapple juice
16 ounces of pineapple rum
Assorted fresh fruits: strawberries, pineapple, lemons, limes,
oranges, or peaches (any combination)
Combine the wine, fruit juices, and rum in a pitcher. Cut up
any fresh fruit you’d like and put into the pitcher. Chill in the
refrigerator, and serve over ice.

Sweet & Spicy Bacon Chicken
4 chicken breasts cut in thirds (12 pieces) or 12 tenders
12 Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar
Oil or cooking spray (if baking)
Cut each breast into 3 pieces, season all the chicken with the
spices, then wrap a bacon slice around each piece, roll in brown
sugar and place into an oven proof dish....make sure you have
some olive oil in the dish too, like 2 or 3 tablespoons is fine. You
could coat your dish with nonstick cooking spray instead to save
a few calories}.
Bake at 400 degrees for 30 to 40 minutes or until chicken is
cooked through and bacon is nice and brown and crispy.
**Also great on the grill! No juices to drizzle on anything, but still
delicious!

Pumpkin Mousse Pie
1 ready pie crust, baked and cooled
1 package cream cheese, softened
1/2 cup packed light brown sugar
1 cup pure pumpkin puree (not pie filling)
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoons ground cloves
1/8 teaspoons ground nutmeg
1/8 teaspoon ground ginger
1 cup heavy whipping cream
* If using a pie crust dough, defrost one sheet of dough and place in a pie
plate. Crimp edges, prick the bottom with a fork and bake in 400 degree
oven for 10 to 12 minutes, or until the crust is golden.
* In a large mixing bowl, beat cream cheese for 30 seconds.
Add brown sugar and beat until smooth. Add vanilla, spices and pumpkin
puree. Beat until well mixed and smooth.
* In another mixing bowl, whip cream until stiff peaks form.
Using a rubber spatula, add 1/3 of whipped cream to the pumpkin cream
cheese mixture and gently fold in (do not whisk or mix).
• Add the rest of the whipped cream and fold in gently, until no white
streaks remain in the filling.
* Scoop the filling out onto the cooled crust. Spread with an offset spatula.
Make decorative swirls or peaks.
• Place the pie in refrigerator for at least 2 hours to set.
• You can also refrigerate it overnight. Keep the leftovers chilled for up to
2 days.

1 can (17.5 oz) Pillsbury™ Grands!™ refrigerated cinnamon rolls w/icing
slices bacon
candy corns
red mini candy-coated chocolate candies
candy eyeballs
mini pretzel sticks, cut in half
*Heat oven to 350°F. Line cookie sheet with cooking parchment paper.
*Set icing aside. Separate dough into 5 rolls; place about 3 inches
apart on cookie sheet. Unroll each roll about 1 inch; tuck dough into
roll to create neck of turkey.
*Bake 20 minutes or until light golden brown. Remove from cookie
sheet to cooling rack; cool 5 minutes.
*Meanwhile, cook bacon until crisp; drain on paper towel-lined plate.
Cut bacon slices in half. Tuck 4 halves of bacon into back of each
cinnamon roll so they stick up and look like tail feathers.
*Drizzle tops of rolls with icing. Decorate turkeys with candy eyeballs,
candy corn and candy-coated chocolate candies. Before serving, place
halved pretzel sticks underneath each turkey to resemble turkey’s feet.

•1/2 cup milk chocolate chips
•1 (14 oz.) can sweetened condensed milk
•1 Tbsp. vanilla extract
•2 cups miniature marshmallows
•1 cup roughly chopped pecans
1.Line an 8-inch or 9-inch square pan with foil. Spray lightly with
cooking spray.
2.Combine chocolate chips and sweetened condensed milk in a
large, microwave-safe bowl.
1.Heat on high for 30 seconds, stir, repeat until chocolate is melted
and smooth.
2.Stir in vanilla, marshmallows, and pecans.
3.Pour into prepared pan and let cool to room temperature before
transferring to refrigerator to chill.
4.Remove from pan, peel off foil, and cut into squares.
5.Store in an airtight container.
