CHOCOLATE ORANGE MACAROONS
Ingredients:
3 cups unsweetened shredded coconut
1/4 cup Artisana Coconut Butter
1 tsp. honey (clover or thistle)
1/4 cup (1/2 stick) unsalted butter, softened at room temp
1/2 cup organic sugar (fine granules)
1 med. egg plus 1 egg white
1 tsp. orange liqueur (Triple Sec or Cointreau)
1 tsp. orange zest
1/8 tsp. salt
4 oz. bittersweet chocolate (chips or finely chopped)
Preheat oven to 325º F. Drizzle honey over shredded coconut
in a medium mixing bowl. Heat Artisana Coconut Butter in
the microwave for one minute, to soften. Add to coconut and
honey mixture. Use a pastry cutter to mix together the honey,
coconut butter and dry coconut. Cream butter and sugar in
a large mixing bowl. Add egg and egg white and beat (using
egg beater or electric mixer) until ingredients are very smooth
and creamy. Add orange liqueur, salt and orange zest. Stir in
coconut mixture. Drop rounded tablespoon-sized macaroons
on a non-stick baking sheet, spacing them about 1 inch apart.
Bake for 14 minutes. Remove from oven, transfer to rack to
allow macaroons to cool. Place chocolate pieces in a small
glass bowl. Heat in microwave in 10 second increments until
the chocolate is melted (stirring gently between heat sessions
to melt the chocolate quicker). Transfer cooled macaroons to a
plate. Dip a fork in melted chocolate and drizzle it over the top
of macaroons in a zig-zag pattern. Chill until chocolate is firm,
about 30 minutes.

Organic English Muffin
Assorted rise & shine varieties to choose from
1 tbsp. raw turbinado sugar
(large granules)
Preheat oven to 350º F. Cream together butter and sugar in a large mixing bowl.
Blend in rosemary, orange zest, orange juice and honey. Sift sea salt and baking
powder together with flour. Add dry ingredients to butter and sugar mixture and
stir using a large wooden spoon or fork to combine ingredients. The ingredients
should be completely blended together, but the dough should still have a crumbly texture. Be careful to not over mix cookie dough.
Divide the dough into two equal portions and form into balls (each about 5” in
diameter). Leave the dough at room temperature. Place 1 ball of dough between
two squares of waxed paper. Using a rolling pin, flatten the dough evenly in
a circle until it is about 1/3” thick. Carefully transfer dough to a lightly greased
baking sheet. Using a fork, mark the dough in a circular pattern (going about
1/8” deep), and press the crumbly edges of the dough back into a circle. With the
dull side of a butter knife, carefully score the dough crosswise into 8 pie-shaped
pieces, but leave the circle intact. Gently press rosemary in for garnish, and
sprinkle with turbinado sugar.
Bake for 20 minutes. Remove dough from oven. Carefully transfer to rack and
cool 5 minutes. Transfer to cutting board and cut along scores with a heavy knife.

Bake cookies until cracked on top but still soft to touch, about 12 minutes. Cool
on sheets 1 minute. Carefully transfer to racks and cool. Can be made five days in
advance. Store in an airtight container at room temperature.
