Recipe for Gulf Bird Shrimp, Bay Scallop and Compressed Watermelon Ingredients: Compressed Watermelon 1 each- local watermelon ½ cup- fresh lime juice 1 tablespoon- kosher salt Slice watermelon into ½ inch blocks. Sprinkle lime juice and salt over watermelon slices. Put watermelon into cryovac bags and vacuum seal. Gulf Shrimp and Bay Scallop 3 cups- gulf shrimp 2 cups- bay scallops 2 tablespoons- fresh dill 2 tablespoons- fresh lemon juice 1 tablespoon- fresh lime juice 1.25 cup- olive oil ¼ cup- fine dice shallots ¼ cup- jalapenos Season the shrimp and scallop with salt and pepper, then grill over high heat.
