Recipe for Lamb Merguez Slider
Ingredients:
Merguez patty
4 pound - boneless lamb shoulder, diced
1 pound- pork fat back, diced
1.5 ounces- kosher salt
2 teaspoon- sugar
1 teaspoon- hot red pepper flakes
2 tablespoon- minced garlic
1.5 cups- roasted red peppers
1.5 teaspoons- freshly ground black pepper
2 tablespoons- Spanish paprika
3.5 tablespoons- chopped fresh oregano
¼ cup- dry red wine
¼ cup- ice water
Mix all ingredients and then grind through small die. Whip with paddle in a 6 qt.mixer. Chill
mixture and form patties.
Feta Aioli
7 ounces- lime juice
7 ounces- egg yolks
10 cups- blended oil
2 cups- french feta
¼ cup- chopped dill
¼ cup- chopped cilantro
¼ cup- fine Julien shallots
Emulsify lime juice, egg yolks and oil slowly in robocoupe. Fold in feta and herbs to finish.
Harissa Mustard
1 cup- Dijon mustard
1 table spoon- harissa
Mix both ingredients together in mixing bowl.

Recipe for Gulf Bird Shrimp, Bay Scallop and Compressed Watermelon
Ingredients:
Compressed Watermelon
1 each- local watermelon
½ cup- fresh lime juice
1 tablespoon- kosher salt
Slice watermelon into ½ inch blocks. Sprinkle lime juice and salt over watermelon slices. Put
watermelon into cryovac bags and vacuum seal.
Gulf Shrimp and Bay Scallop
3 cups- gulf shrimp
2 cups- bay scallops
2 tablespoons- fresh dill
2 tablespoons- fresh lemon juice
1 tablespoon- fresh lime juice
1.25 cup- olive oil
¼ cup- fine dice shallots
¼ cup- jalapenos
Season the shrimp and scallop with salt and pepper, then grill over high heat. Use the rest of
ingredients to make a vinaigrette/marinade for the seafood. Toss grilled seafood with vinaigrette
and medium diced compressed watermelon. Place the mixture in serving spoon and garnish
with fresh dill.

Ingredients:

1.5 oz. – Belvedere vodka
1 oz. – Simple syrup
.75 oz. – Fresh squeezed lemon juice
.25 oz. – Topped with prosecco
Garnished with basil leaf (spanked) and strawberries (skewered)
