Here are just a few of them: Coume del Mas wines from Collioure in France prove that Grenache is one of the most exciting grape varieties on the planet. Chardonnay and Syrah juice from Gaillac in South-West France — 0% alcohol, 99% happiness. BK Wines ‘Petillant Naturel’ from the Adelaide Hills — fizzy & cloudy, the liquid equivalent of a Danish pastry. Dr Köhler’s white Merlot from the Rheinhessen — improbably delightful. Tetramythos’ brilliant Retsina, evoking that familiar feeling of drinking in the branches of a tall pine tree on a Greek Island. Heavensent New Zealand Sauvignon Blanc ‘Waru’, not from Marlborough but from its upmarket nemesis Martinborough. ‘Rodney & The Horse’ Clare Valley Shiraz is the juicy, spicy, red-berryfruited follow up to our Riesling launched last year — made for Vinoteca by our friend, top winemaker Darryl Catlin. Buzet ‘Baron d’Ardeuil’ has a funny name but offers the kind of deep, smoky blackcurrant hit that many Bordeaux fail to deliver. Bolgheri Rosso Coronato, a ‘superTuscan’ which, dare we say, is as close to perfection as can be. Mark Haisma’s Burgundies — St Romain is Chardonnay with the energy of an Olympic sprinter; Bourgogne Pinot Noir is 100% fruit & zero pretence. Juan Carlos Sancha’s Ad Libitum Riojas use unique grape varieties and defy this famous area’s norms. Mas Cristine and That’s enough now. There were no tears, we promise you. Instead of your everyday Italian red, change up to the 2006 Vallana Gattinara, made from the same grape and just down the road from Barolo, just £26.50 to start your week. Serve yourself some sparkling luxury with a bottle of the award-winning 2011 Gusbourne Brut at £32.95 shop price. Or, if you’d usually spend £27 on a good basic bottle, promote it to the superb 2010 Santenay from Michael Caillot — yours for the same price on a Monday. You can buy our whole list at shop price to take home any day of the week, but there’s only one day when you can treat yourself and upgrade to something spectacular in our wine bars. Make your Monday at Vinoteca. 33 Bold and fresh summer flavours Our ingredients and dishes change with the seasons, along with our wine matches. As the days get longer and the first tentative rays of sun make their way out from behind the clouds, our tastes naturally change. Instead of that warming stew and a big, rich red, we’ll start to reach for a crisp Sauvignon Blanc and some new season asparagus, or maybe a fresh take on new Elwy Valley lamb with a vibrant hit of spring veg, accompanied by a light, juicy Pinot Noir. As the days grow longer, eating and drinking outside starts to seem like the very best idea. Most of our sites have got a few choice tables and chairs; you’ll need to get in early at Farringdon & Marylebone to claim their pavement spots, or pick a seat inside Soho & Chiswick for the best of the fresh air when we draw back the windows. King’s Cross is the place for terrace life — we don’t take reservations, but make a beeline for it on any sunny day and we’ll do our best to find you a spot to bask while sipping on a morning coffee, or a cooling glass of beer or rosé. Here are some more of the Vinoteca team’s top choices to put a spring in your step this season: Walk five paces in London these days and you’ll find a restaurant that prides itself on “fresh, seasonal produce” and claims a great relationship with its suppliers. But it’s hard to find a better way of describing our food and how the constantly changing Vinoteca menus are designed to fit with our wines. Some of our producers and suppliers have been working with us from the beginning: companies like Rushtons, H&C Meats in Smithfield, the Fresh Olive Company, Ben’s Fish, Liberty Wines, Fields Morris & Verdin and Enotria among them. Any Vinoteca menu will show how much we value the provenance and variety of our food, with ingredients like King’s Lynn brown shrimp, Windsor Park pork chop and Mersea lemon sole. We work with our meat, fish and veg producers to buy only the ingredients that are tasting best right now. And match those to the wines that we think are really dying to jump out of the bottle at this time of year. 34 Kish Raheja Head Chef, Vinoteca King’s Cross — “I’m a sucker for grilled asparagus, crispy hen’s egg and hollandaise. My favourite eggs are from Daphne Tilly — they have the brightest yolks, they’re almost like duck eggs. They’re exactly what you’d want from top quality free range eggs.” Kieren Steinborn Executive Chef — “My favourite spring and summer recipe is something I cook with my mum — roast chicken with peas, onions, lettuce and marjoram sauce. Cotswold White are my favourite birds to use — they’re plump, juicy and really tasty.” Brett Woonton & Charlie Young Vinoteca Owners — “We can’t wait for the Rodney & the Horse Clare Valley Shiraz, another cracking wine made exclusively for us by Darryl Catlin, and the new partner for the Rodney Riesling that we launched last year. The intense, lime-scented, 2015 vintage of the Riesling is a top spring-into-summer wine and the juicy, peppery Shiraz is going to make them a pair to be reckoned with.” David Pineda General Manager, Vinoteca Farringdon — “The Grenache Old Vines ‘Besson’ 2013 from Birichino Vineyard is perfect to drink chilled in the twilight of a summer’s evening. The 102nd harvest of this unfiltered Grenache from the sunny rugged sea shores of California is delicate & aromatic. Light yet vibrant with fruit of a meticulous and gentle vinification that results in a pure, crimson wine.” Amy Matthews Marketing & Communications — “I don’t have to wait until summer to drink rosé, I love it even when there’s still a nip in the air. As soon as there’s a bit of sunshine, I wrap up warm and enjoy a bottle outside; something like our J Mourat Fiefs Vendeen from the Loire, maybe with some charcuterie or croquettes to nibble on the side.” 35 Single variety olive oil We don’t just travel all over the world to source the most delicious, drinkable and best value wines, now we’re on the case with olive oil too. Cellar El Masroig has been making our favourite bag-in-box Montsant Crianca for years, and we caught up with them last summer when we visited sunny Northern Spain. As well as tasting their range of Grenache-based bottles and visiting their spectacular vineyards (hillside sites still so warm in the early evening sun), we tried their olive oil made from 100% Arbequina olives, a highly aromatic variety which thrives in the long, hot summers of Priorat. We asked the team at the winery for their favourite ways to use their oil. Eulàlia Roca from Cellar el Masroig has given us their top tips, although apparently it wasn’t easy: “It’s a little bit difficult to send you some recommendations about how to use our olive oil, here we use the olive oil for everything!” Spain is the largest producer of olive oil in the world, although it’s made as far afield as California, Egypt, Albania and even Australia. In Europe, olives are traditionally harvested later in the year than grapes, usually in November or December. It can be made from a blend of different types of olives although single variety oils, like this one, are becoming much more popular, and display different tastes and characteristics, just like grape varieties. 2. Try it with chocolate. Often a snack for children, the Catalonians love to top toast with chocolate, olive oil and then a little salt to bring out the contrast between sweet and savoury. 1. Make some “Pa amb tomàquet”, a dish of bread, tomato & olive oil, a speciality from Catalonia: toast some bread, cut a ripe tomato in half & rub liberally over the bread, then drizzle with oil and sprinkle with salt. 3. Use this fruity and fullflavoured olive oil to dress any type of salad, or pour over grilled vegetables, meat and fish. We think the El Masroig oil is fantastic — fruity, green and more-ish. We ordered it straight away and it’s now the dipping oil for our home-baked bread in all of our wine bars. Buy a bottle in the wine shop to take home with you; a little bit of Iberian flavour in your kitchen (or someone else’s, the bottles make a great gift) for the bargain price of £6.95. 36 37 Shop In In White Colli Tortonesi Derthona 2014 — Claudio Mariotto, Piedmont 19.00 38.00 Soave Classico ‘Castelcerino’ 2014 — Filippi, Veneto 13.50 30.50 ENGL AND Lugana 2015 — Ca Lojera, Veneto 17.95 37.00 Pinot Gris ’Foxhole Vineyard’ 2015 — Bolney Estate, West Sussex 17.00 36.00 Surrey Gold 2014 — Denbies, Surrey 10.50 24.50 Bacchus 2013/2014 — Camel Valley, Cornwall 15.95 35.00 19.95 39.00 GERMANY Grauburgunder ‘Hand in Hand’ 2015 — Meyer-Nakel & Klumpp, Baden BIO FRANCE Riesling ‘Portrait’ 2013 — Domaine Zinck, Alsace, Eguisheim 14.95 33.00 Beaujolais Blanc 2014 — Jean-Paul Brun, Beaujolais 17.00 36.00 Bordeaux Blanc Sec 2014 — Chateau Des Antonins, Bordeaux, Right Bank 11.50 26.00 Graves Blanc 2012 — Chateau Langlet, Graves, Bordeaux 18.50 37.50 Riesling QBA Feinherb ‘Essence’ 2014 — S A Prüm, Mosel 12.50 28.50 Chablis ‘Vieilles Vignes’ 2014 — Domaine Hamelin, Burgundy, Chablis 17.50 36.50 Riesling Kabinett Trocken ‘Purist’ 2014 — Axel Pauly, Mosel 15.50 34.50 Saint Romain ‘Combe Bazin’ 2014 — Mark Haisma, Burgundy, Côte de Beaune 31.00 58.00 Sauvignon Blanc ‘Kaitui’ 2015 — Markus Schneider, Pfalz 18.25 37.50 Macon Prissé ‘Le Clos’ 2014 — Domaine des Valanges, Burgundy, Mâconnais 13.95 31.00 Scheurebe Trocken 2014 — Stepp & Gaul, Pfalz 13.95 31.00 18.50 37.50 Merlot Blanc de Noir QBA Trocken ‘Pfandturm’2015 — Dr Köhler, Rheinhessen 13.50 30.50 Mercurey Blanc ‘Le Roc’ 2012 — Chateau de Santenay, Burgundy, Côte Chalonnaise Riesling Gewürztraminer 2014/2015 — Binz & Bratt, Rheinhessen 13.95 31.00 Chassagne Montrachet 1er Cru 2010 — ‘Macherelles’, Michel Coutoux Burgundy, Côte de Beaune 55.00 90.00 AUSTRIA Santenay 2010 — Michel Caillot, Burgundy, Côte de Beaune 27.00 49.00 Coteaux d’Aix-en-Provence Blanc 2012 — Villa Beaulieu, Provence 37.00 64.00 Rotgipfler 2015 — Johanneshof Reinisch, Thermenregion 16.95 36.00 Grüner Veltliner 2014 — Stadt Krems, Niederoesterreich 10.50 24.50 Chardonnay Sous Voile 2012 — Marie-Pierre Chevassu, Jura 15.95 35.00 Cotes Du Brian ‘Emmenez Mois Au Bout Du Terret’ 2014 — Gravillas, Languedoc ORG 16.50 35.50 Furmint ‘F’ 2013 — Tornai, Nagy-Somlói 11.75 27.00 Corbières Blanc ‘Rocbere’ 2014 — Caves De Rocbere, Languedoc (bag-in-box) 8.50 19.50 Dry White ‘Year One’ 2014 — Barsi Szabó Edwards, Tokaj (limited stock) 21.00 43.00 HUNGARY SLOVENIA Pinot Grigio 2014 — Gasper, Goriška Brda 12.95 30.00 10.50 24.50 BULGARIA Sancerre ‘La Guiberte’ 2014 — Alain Gueneau, Upper Loire 17.50 36.50 15.95 35.00 Vouvray ‘Le Haut Lieu’ 1971 — Domaine Huet, Loire, Touraine 82.00 124.00 Anjou ‘Moulin de la Roche Eviere’ 2014 — Domaine du Fresche, Loire, Anjou-Saumur 12.50 28.50 8.95 21.00 Montlouis-sur-Loire ‘Singulier’ 2008 — Bertrand et Lise Jousset, Loire, Touraine 28.00 50.00 Cour-Cheverny 2014 — Domaine De Montcy, Upper Loire 19.50 38.50 Viognier 2015 — Mark Haisma, Rhône, North 23.95 46.00 Côtes Du Rhône ‘Grandes Vignes’ 2015 — Vignerons D’Estezargues Rhône, South 10.75 25.00 Côtes Du Rhône Viognier 2014 — Domaine Pierredon, Rhône, South 13.50 30.50 Collioure Blanc ‘Folio’ 2015 — Coume del Mas, Roussillon 22.95 45.00 Cotes de Roussillon Blanc ‘Le Grill’ 2015 — Mas Cristine, Roussillon 13.95 31.00 7.95 18.50 Blanc De Noirs ‘Moulin Blanc’ 2014 — J.
