LASAGNA ROLL UPS Serving size: 1 roll up (Serves 4) Ingredients: 2 ½ ounces ground beef 1 ¼ cup marinara sauce (see recipe in the Kids Today Summer 2016 issue) 4 lasagna pasta sheets /3 teaspoon olive oil 1 2 ½ tablespoons parmesan cheese ½ teaspoon onion powder ½ teaspoon granulated garlic 1 7/8 teaspoon fresh chopped parsley /8 cup ricotta cheese 7 /8 teaspoon black pepper 1 /8 cup mozzarella cheese 3 Roll up directions: 1. Brown ground beef and add to prepared marinara sauce. 2. Boil pasta sheets for about 12 minutes until tender but firm. Drain and rinse with cold water. Place in cold water to prevent sticking and set aside. 3. Combine olive oil, parmesan, ricotta, and spices thoroughly in a mixing bowl. 4. Take one pasta sheet from the water and let drain. Spread 1/4 of the cheese mixture on the sheet of pasta and roll up. Repeat with the other lasagna sheets. 5. Ladle a thin layer of meat sauce on the bottom of a baking dish. 6. Place prepared lasagna rolls on top of sauce, and ladle remaining sauce over the top. Sprinkle with mozzarella cheese. 7. Bake at 350 degrees for 30 minutes, or until internal temperature reaches 165 degrees. SLC24409_4/16
