Meal Pattern Language Continued… Last month I reviewed the fruit and vegetable components; how they are measured and the serving size. This month I will review the following: Grains and Breads (now referred to as Grains). I think this is probably the hardest meal component to understand and calculate into a weekly meal plan. Items prepared by school: The recipe is used to determine whether the total weight of whole grain ingredients exceeds the total weight of the non-whole grain ingredients. What are the requirements and serving sizes? At lunch, at least ½ of the grains offered must be whole grain-rich. This was effective July 1, 2012. The weekly grain requirement for lunch is a maximum of 10-12 ounces for grades 9-12. At the start of the next school year all grain products served must be 100% whole grain. What are whole grains and how are they evaluated? Whole grains means grains that consist of the intact, ground, cracked, or flaked grain seed whose principal anatomical components – the starchy endosperm, germ and bran – are present in the same relative proportions as they exist in the intact grain seed. Whole grain-rich products must contain at least 50 percent whole grains and the remaining grains must be enriched. Menu Writing Challenges I have always tried to incorporate new recipes into each month’s Grains must be evaluated using the following guidelines: menu, along with old favorites, and have never served any mysElement #1 - A serving of the food item must meet portion tery meat patties. With the new guidelines, an Excel spread sheet is needed to make sure the new parameters are met and not size requirements for the Grains/Breads component. exceeded. In my 30 plus years as a dietitian, I have never written menus with formulas attached to my plan. Recipes have been juggled and manipulated to be sure the protein and grains are not being exceeded. With the increased requirement of fruits and vegetables, their use is increased in recipe preparation. The State Department of Education & Nutrition division encourages the use of a cycle menu where items are repeated or used for a particular time period. I like to write a fresh menu each month. The work load is higher because of it, but hopefully the Element #2 - It must meet at least one of the following: results are a fresh, wholesome, crowd-pleasing meal each day. In the past, the bread basket was a common item which tended to fill stomachs and reduce the hungry feeling. I think the reduction in bread consumption is good, but don’t feel comfortable with the amount of protein restriction given for high school students. The amount is the same for a 100 pound female student and a 200 pound football player. Next month, I will review the protein, meat and meat alternate component in the new meal plan. “Restore All Things In Christ”. Pius X Catholic High School . 6000 A Street . Lincoln, NE 68510 .
