conditions
our experience has proven the value of clearly stating the basis of our
relationship. we are a moral and ethical company that attracts loyal
customers that prefer high quality catering with service for a fair price.
we do not pursue transactional relationships which are based on price
only. our ethical standards require us to provide an explanation of the
parameters that allow us to provide high quality catering and service at
a fair price to all.
Wicked reserves the right to adjust pricing as market
fluctuations dictate.
quality
we promise to use only superior quality ingredients. during market
price shifts, we will not purchase inferior quality items in order to
protect our margins. providing superior quality ingredients at fair value
pricing restricts our ability to discount except in cases where very large
quantities are ordered. we promise to only employ quality staff that
adheres to our core values.
service
we are a service company that excels in the catering field. our staff is
screened for skill and hired for attitude. We are people-pleasers and are
a customer-intimate company. to ensure high levels of service, we
provide life-long training to all of our staff in order to improve your
experience with our team. we recognize that there may be some cases
where we are just not the right caterer for your needs.
insurance
Wicked and their clients are protected by the maximum recommended
coverage in product liability, auto, workmen’s compensation and liquor
liability insurance. certificates of insurance are provided upon request.
clients that require to be named additional insured on our policies need
to ask. any additional insurance coverage requested by our clients will
be at an additional expense to the client.

North Carolina Pulled Pork Sandwich
Wicked spice-rubbed boneless pork butt, slow-cooked for 14 hours until it falls apart,
mixed with two pulled pork sauces on the side (one sweet Memphis, one Carolina
vinegar) on Iggy’s Brioche roll
Kansas City Burnt Ends Sandwich
the leanest part of the brisket, smoked until very tender, chopped & cooked slowly in a
sweet, tomato-based BBQ sauce until the meat is tender and falling apart on Iggy’s
Ciabatta roll
Pulled Chicken Sandwich
dry-rubbed boneless chicken thighs smoked until falling apart, mixed with your choice
of mustard vinegar sauce or Wicked’s tangy BBQ sauce on Iggy’s flour-dusted
Brioche roll
Yawkey Street Sausage Sandwich
locally made sweet pork sausage with grilled peppers & onions on a French
baguette with spicy yellow mustard
Wicked Smoked Turkey Breast
turkey right off the bone. served with lettuce, spicy mayo, crunchy cornbread crumbs
and cranberry chutney
Wicked’s BBQ sauce recipe below:
~ 2 1/2 quarts balsamic vinegar
~ 2 1/2 quarts ketchup
~ 1 1/4 quarts apple cider vinegar
~ 2 1/4 cups honey
~ 1 1/4 cups whole grain mustard
~ 10 tablespoons molasses
~ 1 1/4 cups Worcestershire sauce
~ 5 tablespoons of hot sauce
~ 3 1/2 tablespoons kosher salt

We at Wicked love New England and all it’s

by us as we explored the coast of Maine. We would
like to thank Jim & Gwen Gilson for turning us on
to the rocky coast so many years ago, which has
given us the bug to explore more and more!
