Preheat oven to 350 F
Sift flour, baking powder and dry spices together
into a large bowl.

250 g (2 cups)

175 ml (3/4 cup)

Baking Cherries, washed,
dried and cut up
Coconut, unsweetened,

Using a large pot spoon, fold a small portion of
the flour mixture into the creamed mixture.
Add some of the water; add flour, then water;
finishing with flour.
Flour the raisins and cherries and stir into the
batter.

Add and stir again.
Using a hand mixer, mix oil and sugar together in
another larger bowl.
Add and beat again.
Grease 2 large loaf pans with PAM. Pour mixture
into these pans and bake at 350 oF for 1 hour.

Pigeon peas, drained rinsed

Methods
Boil in water for 20 minutes.
Add ingredients to the pork and boiling water.
Cook for 30 minutes.
Strain and reserve stock. Mince mixture finely
with a mortar or an electric blender.
Add to reserved stock and boil for 5 minutes.
Add oats slowly to stock and stir briskly for 10
minutes
Add meat and peas puree to stock and cook
over low flame for 20 minutes.
* If using salted meat, soak overnight to reduce salt content.
