Curry Vegetable Soup

–Whisk
–Liquid measuring cup

–Measuring spoons
–3- to 4-quart slow cooker
–Ladle
What You Need
–Vegetable cooking spray
–Kosher or flake sea salt
–Coarsely ground black pepper
1. Make the Stock: Whisk together
vegetable stock concentrate and 3¾ cups
hot water.
To Serve: Ladle soup into serving bowls.
Chop parsley if big and sprinkle over
for garnish.

–13 ounces baby red potatoes
–.4 ounce parsley
–8.5 ounces cauliflower florets
–2 ounces sliced yellow onion
–4.5 ounces carrots
–.25 ounce curry powder
–2.5 g cumin
–1 ounce baby spinach
4. Finish Soup: Stir spinach into
ingredients in slow cooker. Let stand
5 minutes or until wilted.
H Pro Tip: Turn this soup into a Thaiinspired dish. Substitute 1 (13-ounce)
can coconut milk for 1∏ cups of the
broth.
2. Prep Ingredients: Quarter the
potatoes (or halve if they are on the
small side).

3. Prepare Soup in Slow Cooker:
Combine potatoes, cauliflower, onion,
carrots, ONLY 1 teaspoon curry powder,
ONLY 1 teaspoon cumin, ∏ teaspoon
each salt, pepper and stock in a 3- to
4-quart slow cooker coated with cooking
spray. Cover and cook on LOW setting 6
to 7 hours.
