• Place tempeh into marinade for 1 hour turning
occasionally. If time permits marinate for 8 hours
(you could do this in the morning ready for the
evening meal).
• Combine salad mix, red capsicum, cashews & shallot
in a serving bowl.
• In a pan cook the marinated tempeh in the coconut
oil approx. 1 min. each side until golden. Allow to
cool before adding to the serving bowl.
• Place dressing ingredients in a glass jar & shake
to combine.
• Drizzle the dressing over the salad & serve immediately.

• 1 pk (250g) Mighty Bean original tempeh cut in
half lengthways then cut each half into 16 squares
i.e. 32 in total
• 1 pk (100g) salad mix (or baby spinach)
• 1 cup (1 med) red capsicum cut into bite size strips
• 1 cup cashews dry roasted (or cashews roasted &
salted) from our bulk bin
• 1 cup shallot chopped
• 1 tbsp coconut oil

• 3 tbsp Spiral tamari

Place raw cashews on a baking tray with a sprinkle of
Himalayan salt & dry roast in a 180 degree oven for
• 3 tbsp olive oil
5 to 8 mins. Allow to cool before adding to the salad.

tempeh bolognaise
serves 6
• 1 pk (250g) Mighty Bean original tempeh
• 4 tbsp olive oil
• 1 cup (1 med) brown onion diced
• 2 cloves Russian (or purple) garlic chopped chunky
• 3 tsp Gourmet Organic garam masala
• 1 jar (680g) Val Verde passata
• 3 cups filtered water boiled (or vegetable stock)
• 1 cup (1 med) carrot diced finely
• Himalayan salt to taste
• 1 cup Italian parsley chopped
• 2pks (300g) spaghetti ( I chose Olive Green
Organics 3 grain gluten free) (or 1pk (500g)
wheat based pasta)
• Chop tempeh into large blocks & blend briefly in a
blender or food processor until it resembles minced
meat. If you don’t own a blender break the tempeh
up by hand.
• In a large saucepan, sauté onion & garlic with olive oil,
until soft.
• Add garam masala & stir briefly.
• Add passata, water, tempeh, carrot, salt & stir
to combine.
• Place lid on the saucepan & bring to the boil. Then
simmer, with lid off, for 30 mins. stirring occasionally.
• Meanwhile cook pasta in a large saucepan of boiling
water, uncovered, until ready. Drain & rinse.
• Just before serving add the parsley to the tempeh
bolognaise.
• Serve pasta in individual bowls topped with the
tempeh bolognaise.
