Try Happy’s Favourite
Green Lamingtons
Ask your mum or dad for help before getting started.
Your ingredients:
● 1 1/2 cups desiccated coconut
● 6 drops green food colouring
● Approx 200g plain square sponge cake
● 2 3/4 cups icing sugar mixture
● 1/4 cup hot water
● 1/4 cup of hot milk
1.
Use a serrated knife to cut the cake into squares
(ask Mum or Dad to help you cut the cake).
2. Sift the icing sugar mixture, and place into a bowl.
Combine the hot water and milk, add the food
colouring and gradually combine into the icing
sugar mixture, using a whisk. Continually stir for 5
minutes or until smooth and runny.
3. Place the coconut on a plate.
4. Use a fork to dip each cake square in the icing
mixture to coat. Roll the cake in the coconut to
evenly coat. Allow lamingtons to set on a wire rack.

Tips for shopping with kids
Kids love shops, but how do you stop a toddler from
blackmailing you into buying something just to avoid a
tantrum?
Before you go shopping, set some ground-rules. Let
your child know that they can come with you, but only
if you buy what’s on the shopping list. When you get
to the shop, ask your child to repeat the list to you,
and get him/her excited about finding the items. They
can get involved in the decision-making by picking
their favourite flavour or brand. This helps give them
ownership of the purchases, and keeps them from
getting bored. Then try to avoid any dramas at the
checkout counter by reminding your child about what
a good job they’ve done.
