A CELEBRATION OF THE ROYAL PROJECTS
M
andarin Oriental, Bangkok sources top-quality fruits and vegetables for its restaurants from the highly
successful Royal Projects in northern Thailand.
Chef Arnaud Dunand Sauthier, of Le Normandie, recently prepared an exclusive dinner for 150 guests as part of
the Royal Projects’ annual Gourmet Tour in Doi Angkhang. Held for more than 20 years, the Gourmet Tour features
delectable dishes prepared using products grown in Thailand’s northern mountains. Mandarin Oriental, Bangkok
is proud to have sourced ingredients from the Royal Projects for many years.
In 1969, His Majesty King Bhumibol Adulyadej founded what has become known as the Royal Projects in an
attempt to rid Thailand’s northern hillside regions of opium fields. The Royal Agricultural Station, located in
Doi Angkhang, enjoys a cool climate ideal for farmers to grow delicious fruits and vegetables. The valley today is
also a popular tourism destination.
The Royal Agricultural Station is surrounded by a 2.2-kilometre ring road, home to fruit plantations growing
delicious pears, peaches, strawberries, persimmons, kiwis, pomegranates, blueberries and apricots, among many
other fruits and vegetables. There are lovely flower gardens, and in the cooler months of December and January,
the English Rose and Bonsai gardens are typically in full bloom.
Chef Norbert, former Executive Chef at Mandarin Oriental, Bangkok, also assisted in the Gourmet Tour in
Doi Angkhang. For decades, Chef Norbert worked as a special advisor to the Royal Projects and sourced top
organic ingredients for use in the hotel. Today Chef Arnaud, Chef de Cuisine of Le Normandie, continues seeking
out the freshest, best-quality ingredients from the Royal Projects.
“I try to source the best produce from around the world,” says Chef Arnaud. “Some of my produce is imported
from small farmers in France, but I am proud that our fruits and vegetables are from the Royal Projects.”

One-on-One with Executive Thai
Chef Prasert Sussadeewong
W
e recently spoke with Khun Prasert Sussadeewong, our celebrated
Executive Thai Chef, to discuss his lifelong passion for extraordinary
Thai cuisine. His signature blue river prawns with chilli jam and his spicy
grilled scallop salad with fresh exotic herbs are excellent showcases of
Chef Prasert’s ability to create authentic, mouth-watering Thai flavours with
the finest ingredients.
“Thai herbs and fresh ingredients are the key factors in Thai cuisine,” he says.
“I would describe my cooking style as that of striving to create authentic Thai
tastes while being flexible with ingredients.”
Chef Prasert recently returned to Mandarin Oriental, Bangkok after spending
more than 10 years in luxury hotel kitchens around the world, in Fiji; Qatar;
Koh Samui, Thailand and Switzerland.
His return to Mandarin Oriental, Bangkok in November 2016 was a homecoming
since Chef Prasert launched his career at our renowned traditional Thai restaurant
Sala Rim Naam in 2004 before moving to The Verandah, our popular all-day
dining venue along the River of Kings.
Chef Prasert’s unique Thai culinary creations proved so popular that he was
invited to spend three months at The Mandarin Oriental, Geneva, on the banks
of the Rhone River, creating dishes for a special Thai cuisine promotion.
“I left Mandarin Oriental in 2007 because I wanted to gain more international
experience, learn new skills, face new challenges and to live in new places
where I would have more responsibilities in order to further my career,” he says.
During this time, he worked as Head Thai chef at the ultra-luxury private
Laucala island resort in Fiji; as Executive Sous Chef at the boutique Dara Samui
Beach Resort & Spa Villa; and at Souq Waqif Boutique Hotels in Doha, Qatar.
“Now, I feel like I’ve come back home,” Chef Prasert says about returning to
Mandarin Oriental, Bangkok.
Noting that the best Thai cuisine in the world is found here, he says he is thrilled
to introduce new generations of food-lovers to classic Thai dishes as well as
modern interpretations of old favourites.
“Thai food is famous around the world because of its unique flavour profiles and
the fact that it is usually very healthy,” Chef Prasert says.
Like many master Thai chefs, Chef Prasert learned the art of cooking from his
family. His mother inspired him at age 14, he says, when she taught him how to
make Stir-fried Crab with Curry Powder and other beloved Thai dishes.
Celebrating a longstanding
partnership with
the Italian Embassy of Bangkok
M
andarin Oriental, Bangkok is proud to celebrate our
longstanding partnership with the Italian Embassy
of Bangkok. For more than 20 years, the hotel has played host
to numerous Embassy events.
As part of our 140th anniversary in 2016 the hotel staged, with
gracious support from the Italian Embassy, the ‘Famous Italian
Arias’, a charity gala dinner and concert. The evening featured
an impressive performance by world-class Italian opera singers
alongside 45 members of the Bangkok Symphony Orchestra,
conducted by Maestro Carlo Magni. This collaboration continued
throughout the year with the Italian Jazz Series featuring
exclusive performances at the Bamboo Bar by musicians such
as Danilo Rea and the Guidi Trio.
We continue the relationship again this year by hosting Italy’s
national day, Festa della Repubblica, on 2nd June. The day
commemorates the 1946 institutional referendum in which the
Italian people voted to determine their country’s form of
government. To mark this date, a grand military parade is held
in central Rome, along with celebrations in all of the country’s
foreign embassies.
On 16 th June, we welcome yet another world-class duo to the
Bamboo Bar as part of our ongoing Italian Jazz Series. Known
as one of the most precocious talents in the history of jazz,
Francesco Cafiso began his career at 9 years old and has toured
Europe with the Grammy-Award-winning Wynton Marsalis.
We are honoured for the support of His Excellency Mr Francesco
Saverio Nisio and look forward to continued collaborations in
the future.

fine Thai cuisine at our renowned Oriental Thai Cooking School.
Participants enjoy an opportunity to create stunning Thai meals while
gaining insights into the fascinating culture and traditions of Thailand.
During all classes, our instructors skilfully demonstrate the methods and
steps of Thai cookery, from ingredient preparation to actual cooking.
Participants are encouraged to try grounding pastes, preparing meats and
vegetables, stir-frying, deep-frying and sautéing produce to create dishes

who will be a special guest chef from 5th - 10 th June 2017 at
Le Normandie. Bühner is the owner and head chef of La Vie
restaurant in Osnabrück, Germany. The restaurant holds three
Michelin stars and 19 Gault Millau points. Chef Bühner will
orchestrate a symphony of innovative cuisine, including an
avant-garde five-course lunch menu and an eight-course dinner
menu. The event will conclude on 10th June 2017 with an
exclusive six-course wine dinner.
