Strawberries: A tasty and healthy treat Strawberries are an excellent source of vitamin C, which is beneficial to our heart and gums, and are rich in potassium, which is good for muscles. How to store strawberries: When stored uncovered in the refrigerator, they can stay fresh for up to 2 days. It’s best if you don’t wash the strawberries until they’re ready to be served. How to freeze strawberries: Wash the strawberries under running water, and dry. Spread berries out on a baking sheet that’s covered with wax or parchment paper, then freeze. Once berries are frozen individually, remove from baking sheet and place in freezer bags, then place back in the freezer. Once frozen, strawberries can be kept for 8 to 10 months. Recipe Fresh Strawberry “Light” Jam Makes 1.5 L (6 cups) Ingredients • 1 L (4 cups) crushed Ontario Strawberries (about 1.75 L or 1¾ qt whole) • 650 mL (2¾ cups) sugar • 1 pkg light fruit pectin crystals Preparation 105-0171b NUT-7132-H (10) Wash and hull strawberries; crush (with potato masher) one layer at a time, then measure into large bowl. Measure 50 mL (¼ cup) sugar and combine with fruit pectin crystals. Gradually stir into fruit. Let stand for 30 minutes, stirring occasionally. Gradually stir in remaining 600 mL (2½ cups) sugar and continue stirring for 3 minutes. Pour into clean jars. Cover with tight lids. Let stand at room temperature until set (may take up to 24 hours); then store in freezer. If used within 2 weeks, jam may be stored in refrigerator. Source: www.foodlandontario.ca
