MUSASHI HIGH PROTEIN CARROT CAKE MUFFINS
Makes 12 muffins
INGREDIENTS
1 scoop of MUSASHI HIGH PROTEIN
Vanilla powder
500g grated carrots (5 medium carrots)
3 medium eggs
2 tsp cinnamon
½ tsp nutmeg powder
300g (2 cups) almond meal
10mL olive oil
160g natural honey
1 cup of raisins
1½ tsps gluten-free baking powder
OPTIONAL TOPPING (iced carrot decorations)
METHOD
Step 1. Preheat oven to 160ºC.
Step 2. Grate carrots and whisk the eggs.
Step 3. Combine ingredients and mix well
(carrots, eggs, Musashi P30 High Protein (vanilla),
cinnamon, nutmeg, almond meal, oil, honey,
raisins and baking powder) in a large bowl.
Step 4. Divide ingredients into muffin trays
(two trays of 6).
Step 5. Place in the oven for approximately
50 minutes or until cooked through.

Step 6. Leave to cool before serving.
OPTIONAL: Serve plain or with an iced carrot
on top for decoration.
Please note that the nutritional table is based on
plain muffins without the iced decorations.
*There are three common fats found in the diet polyunsaturated
fat, monounsaturated fat and saturated fat. Mono and
polyunsaturated fats are considered good fats and are found in
foods such as olive oil, nuts, seeds, avocados and oily fish.
The fat detected in these cup cakes are coming from almond
meal, eggs and olive oil which are all considered good fats.
