HOLIDAY MENU
As you design a menu that suits your taste, we suggest you select a first
course, two sides, and two entrees. Add in hors d’oeuvres and/or desserts
if you would like to! This is just a sampling of what we have to offer. Please
let us know if you desire other options.
Gluten Free and Vegetarian options are available upon request.

SOUP & SALADS
Charcuterie Board
A curated combination of Sopressata, Genoa salami,
Speck smoked prosciutto, and capicola, accented
with rustic Country Pate, assorted olives, luscious
figs, tart cornichons, and fruit preserves. Served with
a selection of crackers and artisan bread.
Holiday Bistro Salad
This fresh green salad showcases poached pears
and candied walnuts on top of crisp mixed baby
field greens. Served with our delicious house made
Balsamic Vinaigrette.
Holiday Cheese Board
A delicious selection of buttery Havarti, distinctly
flavored goat cheese, mild and creamy brie, and
aged Cheddar, paired with dried apricots, sweet
fresh grapes and crunchy holiday nuts.
Petite Potato Cups
Bite-sized roasted red potatoes filled with crispy
Applewood smoked bacon, shredded cheddar
cheese and a touch of sour cream.
Jerk Chicken Skewers
Seasoned grilled chicken served on a bamboo
skewer topped with fresh mango salsa and served
with a mango-cilantro dipping sauce.
Sweet Baby Ray’s Pulled Pork Muffin
Miniature jalapeno cornbread muffins are stuffed with
deliciously smoked pulled pork smothered in our
original Sweet Baby Ray’s barbecue sauce.
Mac N Cheese Profiterole
House made profiterole pastries are filled with bite
sized servings of decadent macaroni and cheese.
Sweet Baby Ray’s Signature Barbecue Meatballs
Delicious, juicy, house made meatballs made with
Chef Duce’s own recipe are served with our original
Sweet Baby Ray’s original barbecue sauce.
Burnt End Skewers
Small cubes of perfectly smoked brisket have a
rich, crunchy bark, paired with a tender, juicy inside.
These burnt ends are served on a skewer with
roasted red pepper and a pearl onion. Our original
Duce’s Wild Mustard Sauce and Duce’s Wild Texas
Barbecue Sauce add the finishing touch.

Winter Kale Salad
A vibrant salad of baby kale, sliced red onions,
jicama, and blue cheese crumbles. Spicy roasted
pecans top it all off. Served with our house made
Apple-Rosemary Vinaigrette.
Mixed Green Salad
A fresh, crisp mix of Romaine and Iceberg lettuce
chock full of fresh veggies including carrots,
cucumbers, red onions and tomatoes. Served with
your choice of dressing.
Andouille Sausage And Smoked Chicken Gumbo
A classic, spicy gumbo loaded with andouille
sausage, hickory smoked chicken, and the “holy
trinity” of celery, peppers and onions. Garnished with
white rice and sliced green onions.
Creamy Potato Bacon Soup
Thick, rich, creamy, decadent, this heartwarming
soup is a delight. We add savory flavor to Idaho
potatoes with bacon, shredded cheese, onions and
garlic resulting in extraordinary taste.

Hickory Smoked Turkey Breast
Incredibly moist and super tender this turkey breast
is marinated and seasoned with our signature
“Duce’s Wild” barbecue rub, and bursts with smoky
flavor from our hickory smoker. Our Sweet Baby
Ray’s original barbecue sauce is served on the side.
Green Bean Casserole
A holiday classic with of fresh green beans and
mushrooms, topped with crispy onions.
Cajun Deep-Fried Turkey Breast
Seasoned in our signature “Duce’s Wild Cajun Rub”,
our deep-fried turkey is injected with Cajun spiced
butter, and deep fried to lock in flavor and moistness.
Our house-made Creole Turkey Gravy is served on
the side.
Hoisin Siracha Painted Tri Tip
This spicy, savory and simply delicious beef tri tip is
marinated in garlic and ginger. Then we brush it with
Sriracha and hoisin sauce, and roast it to perfection. Pan fried snap peas, carrots, green onions, red
pepper, water chestnuts, carrots and green onions is
served as a garnish.
Holiday Pan Seared Chicken Breast
Pan seared chicken breast served with roasted shallots and pork belly in a creamy pumpkin white wine
sauce.
Smoked Holiday Ham
This festive ham is seasoned with our signature
“Duce’s Wild Barbecue Rub”, hickory smoked and
slow cooked to seal in all of its natural juices. Our
house made, smoky, Sweet Apple Barbecue Sauce
is served alongside.
Roasted Pork Loin With Sauteed Vegetable Hash
An herbed pork loin is slow roasted and served with
a colorful squash and root vegetable hash. Creamed
onions provide the finishing garnish.
Smoked Texas Brisket
Seasoning the beef with our spicy signature
“Duce’s Wild Pepper Rub” and then smoking for
14 hours results in a delicious and flavorful Texas
inspired brisket.
Vegetarian Lasagna
Spinach is the star of this dish, richly layered with
ricotta cheese, lasagna noodles and creamy
Alfredo sauce.

Apple Molasses Upside Down Cake
A moist and aromatic gingerbread spiced cake with
rich molasses flavor has delicious fall apples, baked
on top of this pretty upside down dessert.
Fresh Fruit Tartlette
A colorful and festive fresh berry and seasonal fruit
tart with a buttery house made crust and a cinnamon
cream filling topped with a citrus glaze.
Eggnog Trifles
Individual trifle servings created with layers of crispy
gingersnap crumbles and rich and velvety eggnog
mousse. Topped with a dollop of fresh whipped
cream and freshly grated nutmeg.
Traditional Holiday Cookie Platter
Includes an assortment of glazed and decorated cutout cookies, vanilla spritz, peanut butter kiss, thumbprint & Mexican wedding cookies.
Santa’s Sinful Chocolate Cake
A Dutch dark chocolate cake is topped with coffee
butter cream, dark and white chocolate chunks,
toffee bits, crumbled peanut butter cups and then
glazed with chocolate and caramel sauce.
