SURVEY OF THE SALT CONTENT OF CHILLED AND FROZEN READY MEALS
BACKGROUND
The purpose of the project was to establish the accuracy of information provided to
consumers on popular ready meals and then compare the salt levels in a freshly prepared
equivalent.
Should any of the products be found to be particularly high in salt, (i.e. a portion provides
more than half the recommended daily amount of salt intake), then this will be brought to
the attention of the manufacturer in the hope that they may look at ways to reduce the
level.
Salt in very small amounts is a vital constituent of our diet however, in general we eat
more salt than our bodies actually require. Surprisingly most of the salt that we eat is
hidden in processed foods, this accounts for over three-quarters of our intake. Only onequarter comes from salt that we add either at the table or in our cooking. It is now realised
that our high salt intake has several potentially adverse effects on our health.
SALT AND HEALTH
BLOOD PRESSURE
There is now very strong evidence that links our current high salt intake to the
development of high blood pressure (the pressure of blood in the arteries). The higher the
level of blood pressure, the greater the risk of a stroke (paralysis of one side of the body)
or a heart attack (blockage of one of the arteries supplying blood to the heart muscle).
High blood pressure rarely has any symptoms. The only way to know if you have high
blood pressure is to have it measured with a blood pressure monitor.
Strokes and heart attacks are the most common cause of death and disability in the United
Kingdom. Importantly the evidence also suggests that a high salt intake is responsible for
the rise in blood pressure as we get older. A reduction in salt intake will have an immediate
effect on lowering blood pressure, and in the long term is likely to prevent the rise in blood
pressure with age.
STROKE
Salt intake is very closely related to the number of strokes that occur in a community.
Whilst this is in part due to the increase in blood pressure that the high salt intake causes,
salt also seems to have a direct effect on strokes independent of its effect on blood
pressure.
BONE DEMINERALISATION (Osteoporosis)
High salt intake leeches calcium from bones and excretes it in the urine. This effect, along
with other factors, leads to the thinning of bone. Thin bones are more fragile which results,
as we get older, in fractures. It is now recommended that salt intake should be reduced as
one strategy to reduce the risk of osteoporosis.
STOMACH CANCER
When different countries in the world are compared there is a close relationship between
the amount of salt eaten in the diet and the number of people who develop stomach

cancer in each country. The World Cancer Research Fund now recommends that salt
intake is reduced to decrease the risk of developing cancer of the stomach.
ASTHMA
A high salt intake may play an aggravating role in asthma; in other words it is not a direct
cause, but if you are likely to suffer from asthma, a high salt intake may make it worse.
Some carefully controlled studies have shown that reducing salt intake may be beneficial
in conjunction with the other treatments for asthma.
KIDNEY DISEASE
There is increasing evidence that a high salt intake may have adverse effects on the
kidneys when there is some underlying abnormality.
FLUID RETENTION
The higher the salt intake, the greater the amount of fluid retained in the body. Switching
from your usual salt intake to a much lower salt intake can cause fluid loss of up to 2 litres
(4 pints) or 2kgs in weight. Many women with a tendency to ankle swelling, bloatedness
and tightness of their rings at the end of the day will feel very much better if they take less
salt in the diet.
RELATIONSHIP BETWEEN SODIUM AND SALT
Salt is made up of sodium and chloride. And it's the sodium in salt that can be bad for your
health. Adults should have no more than about 2.5g of sodium a day, which is about 6g of
salt.
HOW TO CALCULATE THE SALT CONTENT OF PROCESSED FOODS
Food manufacturers are not required to give the salt content of foods. However, if they do
give it, by law they have to state the sodium levels rather than the actual salt content. This
is because it is the sodium element of salt that can cause health problems.

1 gram of sodium per 100g = 2.5 grams of salt per 100g
If you know the weight (grams) of the portion you intend to eat you can work out the
amount of salt in that serving.

CURRENT SALT CONSUMPTION LEVELS
The latest research from the Food Standards Agency reveal that most of us (85% of men
and 69% of women) are eating too much salt. On average we are consuming around 9g
of salt a day. The Government want this figure reduced to 6g.
SAMPLE RESULTS
ITEM NO. 10A
A total of 52 different ready meals from across the region were sampled and submitted to
the Public Analyst for sodium/salt analysis. The salt levels per portion were then
calculated for each of the samples. From this it was calculated what percentage of the
recommended daily allowance (RDA) for adults (6g of salt) was present. The results are in
Appendix 1.
CONCLUSIONS
The meal with the lowest salt level per 100g was:
- “Eat Smart” Beef Lasagne from Safeway with 0.20g of salt per 100g
The meal with the highest salt level per 100g was:
- ASDA Beef Stew and Dumplings with 1.2 g of salt per 100g
Therefore the difference between the lowest and the highest was 1g of salt.
For the purposes of analysis it has been assumed that a portion of each ready meal will
form one third of the meals normally eaten in a day (i.e. lunch or evening meal).
- Over half (54%) of the meals provided more than a third of the RDA of salt for an adult.
The figures ranged from 33% up to 80%, the average was 47% of the RDA.
- The highest % was ASDA Beef Stew and Dumplings which would provide 80% of the
RDA of 6g in one meal.
There is also concern that the ready meal may only form one component of a meal and
may be traditionally eaten with other accompaniments, which may themselves contain high
“hidden” salt levels (e.g. garlic bread with lasagne).
ACCURACY OF DECLARED SODIUM LEVELS
All the declared sodium levels were found to be accurate.
HEALTHY VERSIONS
Six “healthy version” ready meals were sampled and 5 of them had salt levels below 1.72g
per portion (28% of the RDA). The exception was a Weight Watchers Chicken & Lemon
Risotto which had 0.91g of salt per 100g. Therefore, a portion provided 50% of the RDA.
COST c/f SALT LEVELS
There did seem to be a possible relationship between the cost of the meal and the salt
levels. The data was inconsistent on the lasagnes, but there did seem to be a trend with
the casseroles and cottage/shepherds pies.
Generally it appears that the cheaper the meal then the higher the salt levels. There were
only enough samples of casseroles, lasagnes and cottage/shepherds pies to look at this
relationship. It may be beneficial to collect further data for other meals and analyse. See
appendix 2 for the graphs of this data.
CLARITY OF NUTRITIONAL INFORMATION
Of the 52 samples taken, six of them did not give any nutritional information as to the
sodium levels contained within the food. Whilst there is no legal requirement to give the

amount, unless any specific nutritional claims are made, this does not help the consumer
determine the amount of “hidden” salt in the food.
The situation is further hindered by the fact that there is no legal requirement for the actual
salt content per 100g or per portion to be declared. Although a number of manufacturers
are voluntarily providing this information, not all are.
COMPARISON OF READY MEALS WITH “HOME-MADE” VERSIONS
With the help of the Community Food Worker from Warrington Food & Health Team homemade versions of five of the popular meals were made and submitted for analysis for salt
content. They were found to have salt levels of up to half of their processed equivalents.

RECOMMENDATIONS
It is the recommendation that the group carry out a future “paper exercise” on ready meals
to further explore any possible relationship between cost and salt levels.
The findings of the survey should be forwarded on to LACORS and the Food Standards
Agency by the Secretary of the group.
Details of meals which provided more than 50% of the RDA in one portion should be
forwarded to individual Home Authorities for information and asking them to approach the
manufacturers involved to ascertain what, if any, plans they have for reducing the levels of
salt in their products.
It is important that the GMFSG continue to educate consumers on the dangers of too
much salt in the diet and how to read food labels and calculate the amount of “hidden” salt
per portion of processed food. In addition the use of fresh produce should be encouraged
so that consumers can control the amount of salt they consume.
PUBLICITY
A publicity “tool kit” has been produced to assist individual authorities in promoting the
results of the survey. See Appendix 3 .
