Welcome to the 5th Annual Mankato Craft Beer Expo, a celebration that is
dedicated to craft breweries and their beer. With 45+ craft breweries represented, and is the biggest craft beer event in Southwest Minnesota. Explore
and immerse yourself in each of the wonderful offerings from craft breweries here in Minnesota a well as across the nation.
This talented and diverse selection of beers at the expo should be enjoyed
responsibly. Please remember to pace yourself and drink plenty of water. We
want this to be a fun and informative beer experience while also being safe.

Use this program as a guide to all of the wonderful craft beer being offered.
Inside you’ll find descriptions of breweries, a section for tasting notes, and
a brewery map. Don’t forget to vote for the People’s Choice Award for your
favorite beer at the expo. A ballot can be found in the back of your program,
please submit forms by 5:00 pm.
Also, don’t forget to stop by the Silent Auction table located near the entrance to the Expo. We partnered with The Mankato Curling Club, which is
one of the oldest curling clubs in the state, boasting more than 113 years
of competitive action. For the first time since its founding in 1903, the club
was unable to provide home ice for the 2014–2015 season. We want to help
make sure that doesn’t happen again!

Presented by Caves of Faribault
In the 1930s, a cheese maker by the name of Felix Frederiksen traveled to
Minnesota in search of St. Peter Sandstone, geologically rare across the nation but abundant in Minnesota as a result of the last glacial age. Felix found
the abandoned caves in Faribault and set up shop for making the first American blue cheese. Prior to the 1930s, all of the blue cheese consumed in the
United States was imported from Europe. WWII put constraints on importation, so Felix was in good business. He named his cheese "AmaBlu" taking
the 'ama' from Latin for "I love" and 'blu' as the international spelling of blue.
Many more caves were hollowed between the 1930s and 1970s by his company Treasure Cave, Inc.
Treasure Cave was closed down at this location in the 1990s by a company
that bought the caves and then moved production to a conventional cheese
making facility in another state.
Faribault Dairy Company, Inc. (now known as Caves of Faribault®) was founded in June, 2001 to revitalize the caves after an eight-year dormancy. American-made AmaBlu® premium blue cheese from the famous St. Peter Sandstone caves was back in the marketplace. AmaBlu® Gorgonzola and St. Pete's
Select™ super-premium blue cheese came to follow, forming a triumvirate of
hand-made, cave-aged, internationally acclaimed blue cheeses.

August Schell Brewing Company
He is currently the assistant brewmaster at August Schell Brewing Company,
and 6th generation descendant of August Schell, where he has worked for
the past 15 years. He is a 2006 graduate of University of Minnesota-Duluth,
and then graduated from the Certified Brewmaster Course at the VLB in Berlin in 2011. He started the Noble Star Collection in 2012, which focuses on
mixed fermentation Berlin-style wheat beers, and have been gradually building up the sour program ever since. He currently lives in New Ulm, where he
married his longtime girlfriend last year, and they have a dog named Louie.
AUSTIN JEVNE
Forager Brewing Company
He grew up in Madison WI and lived in the Twin Cities for 10 years, where
he worked for Rush River Brewing Company. He has been home-brewing to
develop recipes since 2005, and started brewing sour beer in 2009 after attending the Craft Brewers Conference in Boston. He learned to use foraged
ingredients in his sours ales while working for the MN DNR. If he could hang
out with any brewer in the world it would be Jean-Pierre Van Roy from Cantillion, or Dan Carey from New Glarus. His 3 favorite breweries are New Glarus,
Crooked Stave and Cantillion.

Appearance: How does it look? Examine the appearance of the beer itself.
Hold the glass up to the light and examine the color, clarity, and head. Is it
clear or cloudy? Note whether the head is dense or thin. The color of the
head is also worth noting and can range from pure white on Pilsners to light
or medium brown on some stouts and porters.

Styles: There is a lot of variation from one beer to the next with regards to
style. Some beers are brewed with style in mind and others are not. Styles
can be used as a learning tool to look at historical brewing norms and to
help understand where certain characteristics of beer come from. The Beer
Judge Certification Program Style Guidelines and the Brewers Association
Beer Style Guidelines are two great sources of information to learn more
about beer styles.

Mouthfeel: This is the texture of the beer or how it physically feels in your
mouth. Beer ranges from silky, dry stouts, to thick and chewy. Try to note
the body, carbonation, warmth, creaminess, and astringency.
Finish: Note the lingering flavors after you swallow the drink. Often it can
be bitter from the hops or it can have a lingering malty sweetness. Stop
before your next drink and try to write down everything you just detected.
Try to confirm it with your second drink or see if you need to rethink your
conclusions.

Aroma: Take your time with the aroma. Bring it to your nose and inhale.
Try to take several good sniffs before you take your first sip. If you're taking notes, stop to write your impressions before the first sip distracts you.
What does it smell like? Does it smell primarily of hops, malt, yeast, or
something else?
First Sip: Note the initial sensation as the beer enters your mouth. Think
about whether it is sweet, bitter, fruity, sour or something else. There can
be quite a bit of difference between the first taste and the finish.
