Whole Grains
The most healthful breakfast is whole grain cereal. If you're
trying to lose weight, control cholesterol or diabetes, or just need
a lot of energy, your best bet is a hot cooked cereal of whole
grains, such as oatmeal, barley, brown rice or wheat berries
cooked and served like oatmeal. Flavor it with raisins or other
dried fruits, and cinnamon. If you prefer cold cereal, you need to
check the list of ingredients carefully. The first ingredient should
be a whole grain. Once you've eliminated all the brands made
with refined grains or partially hydrogenated oils, check for
added sugars (you want little or none) and fiber (you want a lot).
Common Terms Used on Labels:
Refined- parts of the whole grain are removed leaving only
the endosperm or starchy part. Many of the vitamins and
minerals are lost when parts are removed.
Enriched or fortified– addition of nutrients to refined grains
and grain foods. All of the nutrients lost from a refined grain
are not added.
Stone ground– milling process to grind any grain, including
refined grains, into flour.
Un bleached flour– refined flour with texture and nutrition
value similar to regular white flour.
Wheat flour– flour made from wheat, including refined white
flour.
White flour– flour that has been refined and bleached for
maximum softness and
whiteness.
Whole Grain Kernel
Whole wheat flour– flour
made from the whole
Bran
wheat kernel.
Whole grain– grain milled
in its entirety not refined.
Health Benefits of Whole
Grains:
When the bran and the germ
are removed from the grain to
make white or enriched grains,
the nutrients of the bran and the
germ are also removed. Whole
grains have more nutrients and
provide more benefits than
refined grains.
More fiber, B vitamins,
minerals, and healthy oils
Improve digestive health
Lower risk of heart disease
Lower risk of some cancer
Lower risk of diabetes
