1. Heat oven to 375˚F.
2. Prepare Santiago® Seasoned
Vegetarian Black Beans
according to package directions.
3. Roast tomatillos, jalapeños,
garlic and onions on a parchment
lined sheet pan, until unevenly
charred and tender, about
30 min. Remove from oven and
cool about 20 min.
4. Pulse tomatillos, jalapeños, garlic,
onions, oil, vinegar, cilantro
and pepper in the bowl of a food
processor until chunky and well
blended; transfer to bowl of
prepared black beans and stir to
combine.
5. Chill salsa until cooled. Serve.
Chorizo Cinnamon Refried Beans • yield 40, half-cup servings

1 cup Onion, diced
1 Tbsp Cinnamon, ground
Spanish onions,

peeled, quartered
1/4 cup Canola oil
1. Prepare Santiago® Refried Beans
according to package directions
in a full-size, steamtable pan.
Hold until fully refreshed.
2. Cook chorizo, onion and cinnamon
over medium-high heat in a
medium sautée pan, stirring
frequently, until fully cooked
and lightly browned, about 5 min.
3. Fold chorizo mixture into beans,
stirring thoroughly. Serve.

Black and Refried Beans
Quick-Start Chili
1. Pour 1⁄2-gallon boiling water into 4-inch deep, half-steamtable pan.
1. In a 4-quart pot, add 2 1⁄2-quarts of hot water (190˚F) and 1 pouch of
Santiago Quick-Start Vegetarian Chili with Red Beans.

2. Quickly pour 1 pouch of Santiago Beans into pan and cover.

2. Heat to a boil. Reduce heat and simmer covered for a minimum of
15 min., stirring occasionally.
3. Allow beans to sit on a steamtable. EXCEL for 5 min., 25 min. for
other refried, 40 min. for black beans.

4. Season, stir, serve.
3. Stir prior to serving.
TIPS
1. Beans can be held by:

1. Add 21⁄2-quarts of hot water and 1 pouch of Santiago Quick-Start
