Winemaker Sam Baxter appreciates the importance of balance in the creation of mountain wines. “The high level of tannins and intensity in mountain fruit create a tendency to over-extract. With the use of fully automated sealed punch-down tanks, we are able to extract better tannins. Our goal with this 2000 Spring Mountain District wine was to create a wine with intensity that is both elegant and approachable,” said Baxter.
