Recipe CS 2012-Triple Berry Vinaigrette

Triple Berry Vinaigrette
Yield Approx: 1 quart
Ingredients
1/4 cup Dijon Mustard
1 each Shallot
1 each Lemon (juice & zest)
1/2 cup White Balsamic
1/2 cup Honey
5 each Strawberry
1/4 cup Blueberry
1/4 cup Blackberry
1 tsp. Cardamom
1 pinch Salt
3 cups Canola Oil
As needed Water
Method Of Prep:
1. In a speed blender, combine dijon, honey, shallot, lemon,
balsamic, and berries. Blend on high for approximately 30 seconds.
2. Slowly add the oil, adjust viscosity with water. When the
vinaigrette gets to be to thick, add a little bit of water to thin.
Repeat, alternating oil and water until all the oil is incorporated.
3. Season with salt, and serve.
