Chris Harris and Juliet Monaghan love supporting their
community and at the end of each month they donate $500
to one or more recipients.
Canter Valley Gourmet Poultry

Every month we receive several applications for the
community fund and it’s a bit like playing Santa when
they closely read each application before deciding where
the funds will go. It is a tough job with so many worthy
organisations in the area, and since they started in 2012,
they have donated more than $26,000 to a huge range of
community groups. In November this year they gave away a
whopping $1,000 – in true Christmas spirit.
For many years they have supported Camp Quality, which
is committed to making a positive difference to children,
aged five to 16 years and living with cancer. The youngsters
escape daily routines at the annual summer camp at
Pukekohe, where kids can be kids. FreshChoice Half Moon
Bay is also happy to help the Camp Quality mini-camps
throughout the year.
The local school, Bucklands Beach Intermediate is well
known for its great co-curricular programme. When they
approached FreshChoice for a little financial support for
students to attend the AIMS Games – how could Chris and
Juliet refuse?

Bucklands Beach Intermediate
School at AIMS Games.
The AIMS Games is the biggest sports event in the Southern
Hemisphere and Bucklands Beach Intermediate sent 147
students to compete in Tauranga and Mount Maunganui
in September. The School has an honourable reputation.
This year was a success with the team finishing 3rd overall
against 248 registered schools.

• 1/2 cup toasted pistachio nuts,
roughly chopped
• 1/4 cup chopped Italian parsley
• Zest of 1 lemon
• 2 eggs, lightly beaten
• Salt and pepper to taste

Preheat the oven to 160°C.
Heat the olive oil and butter in a pan. Add onion and garlic.
Cook over medium heat for 3 to 4 minutes, until translucent.
Place onions and garlic into a large bowl with the bread,
prosciutto, pistachio nuts, parsley and lemon zest. Add
beaten eggs and season with salt and pepper, and mix.
Remove baking paper and foil and baste with juices in the
dish. Continue cooking following the recommended turkey
cooking times, or until the turkey is golden brown and juices
run clear when piercing through the thickest part of the
thigh. Baste frequently during cooking.
Remove the neck and giblet packs from the body and cavity
of the turkey. Wipe the cavity and skin with paper towels.
Stuff the turkey with the prepared stuffing, tie the legs
together and fold under the wing tips.
About 15 minutes before the turkey is cooked, prepare the
glaze. Place the quince paste, balsamic vinegar and orange
juice in a small saucepan. Bring to the boil over medium
heat, stirring constantly. Remove from the heat once the
quince paste has melted and the glaze is thick and syrupy.
Place the turkey onto a rack in a roasting dish. Pour wine and
chicken stock into the dish and dot butter over the turkey.
Cover turkey with baking paper, followed by a layer of tin foil.
Roast for one hour.
Remove the cooked turkey from the oven and brush with
glaze. Transfer to a warmed plate and cover loosely with tin
foil to rest for 10 minutes before carving. Use pan juices for
making gravy.
