Ingredients:
• 1 red bell pepper, stemmed and seeded
• 1 orange bell pepper, stemmed and seeded
• 1 yellow bell pepper, stemmed and seeded
• 1 green bell pepper, stemmed and seeded
• 2 ripe tomatoes cut in half
• 1 medium zucchini, cut into chunks
• 1 cucumber, seedless cut into chunks
• 3 scallions chopped
• 2 tbsp. parsley chopped
• 2 tbsp. olive oil
• 1 tbsp. red wine vinegar
• 1/2 tsp. sugar
• Salt and pepper to taste
• 1 ripe avocado, pitted and peeled
• 1 tbsp. lemon juice

Place peppers, tomatoes, zucchini, and cucumber in
Quick Chef (page 13) with blade attachment in place.
Chop coarsely. Place vegetables in Tupperware®
Impressions Medium 10-cup/2.5 L bowl and add scallions
and parsley. Combine olive oil, vinegar, sugar, salt and
pepper in the Quick Shake® Container (page 15) and shake
well to mix. Pour over the salad and toss. Cut avocado in
half and remove pit. Scoop out and dice avocado and
toss with lemon juice in a small bowl. Sprinkle diced
avocado over the salad.
