Make a PANCAKE from your freshfreshmilled FLOUR! Ingredients 25g freshly milled flour 75ml egg & milk mixture (whisk one egg with 100ml semisemi-skimmed milk) Pinch of salt Method Place a 20cm, nonnon-stick frying pan on a high heat on the hob or gas ring Add a dessert spoon of vegetable oil and swill about to cover the surface When the oil begins to smoke turn the heat down to a medium heat setting Whisk the dry and wet ingredients together, add the salt and pour all the mixture into the pan. pan. Turn the pan about for a couple of minutes as the mixture spreads out to fill the pan and keep the heat to medium, no lower. When the pancake edge is frilly, try lifting it with a large, flat spatula (wooden is best but metal’s metal’s OK if you take care not to scratch the pan). When the mixture lifts easily, easily, flip the pancake over and cook the other side.
