Fresh sausages should be simmered in water
for 5 minutes, and then finished on the BBQ
on low heat to ensure that they are fully cooked.

Chorizo Sausage
Perfectly spicy! Freshly ground pork with chillies,
paprika and garlic. Cooks up fast and tasty and
serves perfectly with eggs.
Italian Sausage
A gluten-free, traditional Italian-style sausage
seasoned with fennel, anise, cayenne pepper,
herbs and spices. A key ingredient in pasta
sauces, meatballs and pasta dishes.
Fresh Bratwurst
A mild, fresh pork sausage, fabulous on a
bun with onions, sauerkraut and one of our
sweet or hot gourmet mustards. This sausage
is so versatile, one of these flavours is sure to
become a new family favourite.
Portuguese Style Sausage
Made from pork shoulder meat and spiced
with paprika, pepper, salt and a touch of
cayenne pepper; it’s then cold smoked for
over 4 hours. This is the only fresh sausage
which is smoked.
English Bangers
An essential part of an English Breakfast,
so named because the tight casing produces
a banging noise when this sausage hits a
pan or a grill.
Although a sausage can easily be the main
course, it can also add a savoury addition to
many dishes or menus. Chunks of grilled chorizo
skewered on toothpicks can make a delicious
appetizer, or slices of hot grilled sausage can be
tossed into a simple dish of pasta dressed with
fresh tomatoes.
Chicken Mango Sausage
Chicken with mango chutney, garlic and ginger.
SMOKED SAUSAGES
Pre-cooked sausages need only to be heated
through. They are fully cooked and require
only minutes on the BBQ. For an extra crispy
sausage, cut small slits along both sides of
the sausage and grill until golden brown.
This will also speed up heating time.
Oktoberfest Sausage
Have your own Oktoberfest at home, any
time of the year. Made famous in Munich,
Denninger's own creation features fresh
parsley, cloves and nutmeg.
Nuernberger Bratwurst

Munich Style Weisswurst

Spinach Sausage
Lightly seasoned with spinach, onions, veal,

Frankfurter

are lightly smoked and mildly spiced. Try all

How to grill the perfect steak or roast
The art of barbecuing a perfectly grilled, mouth-watering steak or roast really isn't all that hard. Once
you learn a few basic techniques, you too, can be the envy of all your friends. The first step is choosing
your meat. Now, all you have to do is follow these simple steps to grill to perfection.
From our butchers to your table
1. Trim excess fat – Any fat strips greater then ¼ inch thick is excess fat. Because fat will shrink faster
than meat you should slice through fat strips approximately every 1-2 inches. This will prevent your
steaks from curling.
Beef
Our beef consists of select Angus,
Charolais and Limousins homegrown Canadian
cattle, of which only the top 10% are selected
for our stores. 90% of Denninger's beef is
sourced from Amish/Mennonite communities,
where the cattle are grain fed and raised without
hormones. It is then cut and aged for a minimum
of 21 days to allow natural enzymes to tenderize
the meat in our carefully monitored, temperature
and humidity controlled facility.
2. Marinate – More economical cuts of meat such as flank, skirt or sirloin tip benefit by marinating
them first. The marinade will not only enhance the flavour, but tenderize your steak as well.
So, if you are going to marinate, now is the time.
3. Bring the steak(s) or roast to room temperature – to cook it faster and more evenly.
4. Pre-heat your BBQ
5. Drain marinade – Excess liquids could cause flare-ups.
6. Oil the grate – this is not necessary if you have brushed your steak with olive oil.
7. Season – If you're not using a marinade, wait until just before you place your steak or roast on
the grill to season. Salt can draw out the flavourful juices from your meat and make it tough if
added to soon. Season only the half that is being placed on grill. Season the other half of your
steak just before flipping it.

8. Grilling steak – Place your steak on the grill and follow grilling times by thickness. Always use
tongs, never use a fork or prongs to flip your steak. Steaks that are an inch thick should only be
flipped once. Thicker steaks of 2-3 inches should be seared for a minute, and then flipped to
sear the other side for another minute. Flip again to cook. For an added touch rotate the steak
45 degrees half way through the grilling time on each side. You will get crossed grill lines,
adding to the look of perfection.
Prime rib roast
9. Grilling roast – Sear the roast for about 5 – 8 minutes on each side. When searing is complete,
turn off one burner and set the remaining burners to medium for indirect cooking. Check the
internal meat temperature by inserting a meat thermometer into the thickest part of the roast.
When desired doneness is achieved, remove and allow to rest for about 15 minutes to let the
juices redistribute. Carve against the grain.
Porterhouse
10. Remove when done – Determine doneness by using the Touch Method, this takes experience
and practice. Press lightly in the centre of your steak with your tongs

11. Let your steak rest for 5 minutes before eating – this will make it succulent and juicy. Resting your
steak allows the juices to redistribute evenly. Transfer to your serving plate and cover loosely with
foil to keep warm.

Jarlsberg
Made from the rich milk of cows grazing in high
summer pastures, Jarlsberg has a fermenting fruit
flavour and a rich, lemony-yellow colour. Also
available: Jarlsberg Light and Jarlsberg Smoked.
Woolwich Dairy Goat Cheese from Ontario
This traditional soft cheese is made from goat’s
milk and features a light, tangy taste. It retains
its shape when baked, and is wonderful served
hot on a flatbread. The original flavour is
certified Kosher. Flavours available: Bruschetta,
Fine Herbs, Garlic, Peppercorn.
Veal
Denninger's only carries humanely
raised, 100% Canadian milk-fed veal. Our veal has
an ivory pink colour, and is a lean alternative to
beef or pork.

Emmentaler
Also known as Emmental and Swiss Cheese,
this cheese is made from cow’s milk in the Swiss
mountains. The firm, oily, golden interior has
evenly distributed olive-shaped holes and
a soft fruity flavour.
Chicken
Treat yourself to Denninger's
locally raised White Rock breed chicken. These tender,
perfect chickens are fed a wholesome diet of grains,
vitamins and nutrients with no hormones. They are
air-chilled to help retain their natural juiciness and
flavour. Broiler, fryer and capon chickens are all
available, dressed and butchered to your specifications.

Notre Dame Brie
This honeycombed cheese features just a hint
of mushroom and a smooth, creamy texture.
Gruyère
Gruyère is named after the village of its origin in
the canton of Fribourg, where it is still made in the
mountains. The cheese has a pale yellow interior,
which is sparsely scattered with pea sized holes.
It has a sweet, fruity flavour, significant aroma
and a coarse reddish rind.
Cambozola
Soft, surface-ripened cheese with blue veins that
combines the texture and the rich taste of triple
crème Camembert with the distinctive, slightly
sharp taste of the mold that is present in Blue
cheese.
Rosenborg-Castello Danish Blue
Danish Blue Cheese from Rosenborg has a milder
flavour than traditional French blues. Rosenborg
is made from pasteurized and homogenized
cow’s milk with a stark, white interior, aggressive
blue-black veining and a strong, salty flavour.

All spices are not created equal. We feature Denninger’s private label spices, household favourites like
Knorr and artisanal sea salts in our spice cupboard. If you have a hard time finding a particular spice

German mustard, or “Senf”, is made with a

Combine oil, soy sauce, Denninger’s
Steak Spice, Chipotle Tabasco Sauce
and garlic in a large self-closing plastic
bag or glass dish. Add steak. Marinate
in refrigerator for a minimum of 1 hour.
Remove steak from marinade; discard
marinade. Preheat grill or broiler. Grill
steak to desired doneness.
