Resident of the Month
Betty Tatman
Betty Jean Tatman was born November 29, 1951 in Emporia, Kansas. She has
a brother John who has passed and a sister, Debra. She married Michael Tatman on July 8, 1975 then
later divorced. Betty has two sons, James and Chuck, and a daughter, Chrysanne. She has four
wonderful grandchildren and three great-grandchildren. Betty graduated from Emporia High School,
Betty has had many jobs: at age fourteen her first job was a carhop at A&W, then a sixteen she
was a maid at the Old Mitway Hotel, waitressed at Fred’s Derby, Hartford Manor (11 years),
Presbyterian Manor (9 years), Sterling House (5 years), BP (11 years) Traveling CNA, and Personal
Care Giver / Home Health.
Betty enjoyed spending time with her grandma making rag rugs and she learned to make gravy
at age five.

No Bake Chocolate Éclair Cake
Ingredients:
Filling:
3 box(es) 3.5 ounces instant vanilla pudding
3 cups milk
1 8 ounce container cool whip
Graham crackers
Topping:
1/3 cup cocoa
1 cup sugar
1/4 cup milk
1 stick butter
1 teaspoon vanilla
Directions: Filling
1. Combine pudding mix and milk; beat. Stir in cool whip.
2. Place a layer of graham crackers in bottom of a 9x13 dish.
Spread 1/2 filling mixture on top. Repeat with another layer of
graham crackers, add rest of filling, top with final layer of graham crackers.
Topping:
1. Bring cocoa, milk, and sugar to a rolling boil; a full minute,
stirring frequently.
2. Remove from heat, cool 1 minute.
3. Add butter and vanilla, stir till butter is melted.
4. Pour chocolate topping over graham crackers and refrigerate
overnight.
June Upcoming Events are listed on the calendar. Many projects will be taking place: crafts,
outings, socials, church, and musical programs. When visiting a loved one please join them at
these session, they will enjoy that.
Fathers Day is June 18th, we will be having a Fathers Day Social at 2:30 in Dining Room serving
refreshments. Following this will be church service, all are welcome to attend.
May 14th through the 20th we celebrated Nursing Home Week
2017 theme "Spirit of America".
All staff played games throughout each day.
Sunday, May 14th: Mothers Day Tea was a great turn out. Family members came to be with loved
ones on this special day. We had a lot of proud Mothers.
Monday, May 15th: China day the staff celebrated by eating noodles with chop sticks.
Winners were S’Kylan Russell, Suzanne Garcia, and Keyona Carter.
We also had fortune cookies hidden throughout the facility for staff to find.
Tuesday, May 16th: Canada day was celebrated with hiding maple leaf cookies for staff to find.
Winners for morning shift were Josie Pugh, Anthony Ludlum, and Deb Ludlum.
Afternoon shift was Alicia Davis, Julie Raffa, and Nell Beshirs.
Wednesday, May 17th: Mexico day was celebrated with nachos. The residents enjoyed preparing
nachos for the staff.
Thursday, May 18th: Italy day - Staff and residents enjoyed playing plinko.
Friday, May 19th: America day was celebrated with the crowning of the Holiday Resort All America
Pageant. Contestants were: Anel Converse, Brook Johanson, Samantha Scheve,
Maria West, Tiana Rowland, and Suzanne Garcia.

The crown was awarded to Anel Converse.

Cheesy Bacon Balls
Ingredients:
 1 1/2 cups cream cheese, room temperature
 1 cup shredded cheddar cheese
 1 teaspoon garlic powder
 1 teaspoon paprika
 Dash salt
 Dash ground pepper
 8 slices bacon, cooked and finely chopped
 1/3 cup chopped chives
 1/3 cup finely chopped pecans
 18 pretzel sticks
Directions:
1. Combine cream cheese, cheddar cheese, garlic powder, paprika, salt, and pepper in a medium bowl until
smooth. Roll mixture into 18 small balls. Cover and chill until firm.
2. Combine bacon, chives, and pecans in a small bowl.
3. Roll each ball in the bacon mixture, coating completely. 4. Insert one pretzel stick into each ball and serve.
Makes 18 servings
Crunchy Brownie Crackers
Ingredients:
 4 tablespoons butter
 1 1/4 cups semisweet chocolate chips, divided
 1/2 cup plus 2 tablespoons sugar
 3 tablespoons cocoa powder
 2 egg whites
 1 teaspoon vanilla extract
 3/4 cup flour
 1/4 teaspoon baking soda
 1/4 teaspoon salt
 2 tablespoons milk
 1 tablespoon water
Directions:
1. Preheat oven to 375°F. Line two baking sheets with parchment paper.
2. Combine butter and 1 cup chocolate chips in a large microwave safe bowl. Microwave for 60–90 seconds,
stirring every 15 seconds until melted and well incorporated.
3. Stir in cocoa powder, egg whites, and vanilla extract.
4. Combine flour, baking soda, and salt in a medium bowl.
5. Stir flour mixture into butter mixture. Stir in milk and water until combined.
6. Divided mixture equally between both baking sheets, spreading in an even layer. Sprinkle each with equal
amounts of remaining chocolate chips.
7. Bake 15–17 minutes. While warm, slice brownie sheets into pieces using a pizza cutter. Allow to cool
before serving. Makes 50 servings

Chopped Chicken Grape Salad
Ingredients:
 2 cups diced cooked chicken
 3/4 cup chopped celery
 1 cup halved red grapes
 1/2 cup dried cherries
 1/2 cup chopped pecans
 1 cup Greek yogurt
 1/2 teaspoon salt
 1/2 teaspoon ground pepper
Directions
1. Combine all ingredients in a large bowl.
2. Cover and chill until ready to serve.
Makes 4–6 servings
