THE STORY OF
Shilling Brewing Co is the first to bring the brewpub experience to the heart of
Glasgow where an appreciation of the art and science of brewing is at the core of
what we do and for all to see, taste and enjoy.
Glasgow has been pioneering the perfect pint for over 400 years and the Shilling
Brewing Co is contributing to the next chapter in this story by creating a space
where everyone can discover and appreciate beer, straight from the source. This
includes our core range of beers designed to be enjoyed fresh, just metres from
where they are brewed, alongside a host of beers sourced from pioneering craft
breweries and long established household legends.

TASTING NOTES Our take on an ever-evolving classic. Good deep malt undercurrent is shaken by a slowly
surging citrus wave. Lemon and sherbet notes fade to leave a refreshing, lingering bitterness.

TASTING NOTES Crystal and roasted malts give this ruby red beer its toffee and caramel sweetness. Offset with
fruity and spicy hop additions, Glasgow Red is a balanced character.

pint of this blonde ale - It’s worth “bustin’ yer biler” for a taste!
TASTING NOTES Hoppy Blonde Ale. Bursting with tropical notes, this little beer packs a hop punch. Crisp and
clean with a touch of grapefruit bitterness at the end.

WHY THE ‘SHILLING’ BREWING CO?
In beer and brewing terms, the Shilling Category was an old Scottish system based on the price
of a hogshead (or 54 imperial gallons) of beer during the 1800s. Generally speaking, the stronger
or better quality the beers, the higher the cost, or shilling value.
Whilst never formally designated, the Shilling categories were understood to be as follows:
Light (60/-) under 3.5% ABV
Export (80/-) between 4.0% and 5.5% ABV
Heavy (70/-) between 3.5% and 4.0%
Wee heavy (90/-) over 6.0% abv
OUR BREWING PROCESS...
Our brew day begins just behind our bar, by adding malts along with hot liquor into our mash tun.
After around an hour the starch in the malt will be converted into fermentable sugars. This liquid,
called sweet wort, is then boiled in the copper kettle where hops are added for bittering, flavour
and aroma. After 60-90 mins the hopped wort is then transferred via a heat-exchanger to our
fermentation vessels in the basement of Shilling Brewing Co where yeast is added. This
converts the sugars in the wort into alcohol and carbon dioxide to create beer.
Fermentation takes around 3 days, then we chill the beer for about a week to begin maturation.
After extracting the yeast, the beer is pumped up to the tanks on our mezzanine level for a
further week of conditioning. Finally CO2 is added, if we think necessary, before the beer
is moved into our serving tanks ready for you to enjoy.
THE BREWER’S ROOM
MEETINGS
For a meeting with a difference, The Brewer’s Room is located in the
basement vaults of the Shilling Brewing Co. The room seats up to 8 guests,
and is ideal for small meetings and presentations. The room is
fully-equipped with LCD screen and has Wi-Fi access.
TUTORED BEER TASTINGS
Our brewery’s fermentation tanks are located behind a glass wall at the rear of The
Brewer’s Room; the perfect vantage point for budding beer connoisseurs or just the
downright curious! We offer private tastings for up to 8 people, led by members of
our brewing team. Learn about the brewing process and enjoy a chance to enjoy a
tutored tasting of our beers from the source.
