This booklet was produced by the Library’s Green Impact Team using a
selection of recipes from the BBC website to promote the importance of
Fairtrade certification and encourage people to rethink how they use
bananas.

Fairtrade Banana Bread
Preparation- less than 30 mins
Cooking Time- 1-2 hours
Serves- 8
Ingredients
225g/8oz Self-raising Flour
100g/4oz Butter
150g/5oz Fairtrade Caster Sugar
450g Fairtrade bananas, peeled and mashed
½ tsp Salt
2 Free Range Eggs
145g/6oz Mixed Dried Fruit
Method
1. Preheat the oven to 180c/350f/gas 4
2. Mixed all the ingredients except eth dried fruit
together
3. When the ingredients are all thoroughly combined
fold in the dried fruit
4. Spoon the batter mixture into a 1kg non-stick loaf tin.
Spread out evenly and bake for 1.5 hours.
5. When the banana bread has risen, is golden brown
on top and cooked through remove it from the oven
and set aside to cool on a wire rack.
6. Slice before serving!

Chocolate Banana Cake
Preparation- less than 30 minutes
Cooking Time- 30 mins-1hr
Serves- 8-10
Ingredients
250g/9oz plain flour
25g/1oz Fairtrade Cocoa Powder
1 tsp baking powder
¼ tsp Bicarbonate of Soda
Pinch of Salt
200g/7oz Fairtrade Golden Caster Sugar
2 very ripe Fairtrade Banana, peeled and mashed
2 Free Range Eggs (beaten)
125g/4.5oz butter, melted
100g/3.5oz Good Quality White Chocolate, chopped
50g/2oz Fairtrade toasted chopped hazelnuts
Method
1. Preheat the oven to 180c/350f/gas 4. Grease and line
a loaf tin.
2. Sift the plain flour, cocoa powder, baking powder,
bicarbonate of soda, salt and sugar into a large bowl,
mix well until combined.
3. Mash the Bananas in a separate bowl, stir in the eggs
and melted butter.
4. Fold the banana mixture into the flour mixture until
just combined. Fold in the chocolate and nuts and
spoon mixture into the loaf tin.
5. Bake for 50-60 or until the cake has risen and remove
from the oven to cool on a wire rack for 10 minutes.
6. Slice before serving!

Roasted Banana with yoghurt, mint and honey
Preparation- less than 30 minutes
Cooking time- less than 10 minutes
Serves- 1
Ingredients
1 Fairtrade Banana unpeeled
3 tbsp Greek style Yoghurt
1 tbsp chopped fresh mint leaves
1 tbsp Fairtrade Honey
Method
1. Preheat the oven to 200c/400f/gas 6
2. Bake the banana in its skin for 7-10 minutes or until
soft
3. Meanwhile combine to yoghurt, mint leaves and
honey in a mixing bowl
4. To serve, split open the banana and spoon over the
yoghurt mixture

Banana and Chocolate Chip Loaf
Preparation- 30 minutes
Cooking Time- 30 mins- 1 hour
Serves- 6-8
Ingredients
1 Ripe Fairtrade Banana
1 tbsp milk
50g/2oz soft butter
75g/3oz plain flour
75g/3oz Fairtrade Caster Sugar
½ tsp Bicarbonate of Soda
½ tsp baking powder
1 Free range egg
50g/2oz Fairtrade Dark Chocolate Chips
Method
1. Preheat the oven 160c/325f/gas 3. Grease and line a
250g tin.
2. Use a fork to mash the peeled banana and add the
remaining ingredients except the chocolate chips.
Beat with an electric whisk until smooth.
3. Stir in the chocolate chips and spoon the mixture into
the tin.
4. Bake for 40-45 minutes until well risen and golden
brown.
5. Cool on a wire rack for 10 mins and serve.

Baked Chocolate Stuffed Banana with Vanilla Cream
Preparation- less than 30 mins
Cooking time- 10-30 mins
Makes- 1
Ingredients
For the Banana
1 Fairtrade Chocolate Bar crumbled
1 Fairtrade Banana, skin on, split lengthways
For the vanilla cream
½ Fairtrade Vanilla Extract
100ml Double Cream whipped
Method
1. Preheat the oven to 180c/350f/gas 4
2. Push the chocolate into the split banana
3. Place the banana on a baking tray and bake for 10
minutes until the banana is soft and the chocolate is
melted
4. For the cream, gently fold the vanilla into the
whipped cream
5. To serve put the banana on a plate with a dollop of
the cream.

Banana Crumble
Preparation- less than 30 mins
Cooking time- less than 10 mins
Serves- 1
Ingredients
55g Butter
3tbsp Fairtrade soft brown sugar
1 Fairtrade Banana peeled and chopped
½ Fairtrade Lemon, juice only
55g gingerbread crumbled
Cream to serve
Method
1. Preheat the oven to 180c/350f/gas 4
2. Melt the butter and sugar together in a pan until the
sugar has dissolved
3. Add the banana and lemon juice and stir well to coat.
4. Spoon the banana into a small oven dish and scatter
over the gingerbread crumbs
5. Place in the oven and bake for 10 minutes until
golden brown.
6. Serve with cream.

Gluten Free Banana Pancakes
Preparation- less than 30 mins
Cooking time- less than 5 minutes
Serves- varies depending on pan size
Ingredients
135g Gluten Free Self-raising Flour
1tsp Baking Powder
½ tsp Salt
2 tbsp Fairtrade Caster Sugar
100ml Milk
1 Fairtrade Banana, mashed
1 Large Free range Egg, beaten
2 tbsp Olive Oil
Method
1. Sift the flour, baking powder, salt and sugar into a
bowl.
2. Whisk the egg milk and oil together and pour into the
flour
3. Add the Banana and using a fork beat until you have
a smooth batter
4. Leave to stand for 10 minutes to thicken
5. Heat a frying pan and add a little butter or oil. Add a
ladle of batter and cook until eh top bubbles. Turn
and cook until both sides are golden brown.
6. Serve!

Gluten Free Banana Muffins
Preparation time- 20 mins
Cooking time- 25 mins
Serves- 10-12 muffins
Ingredients
110g Fairtrade Caster Sugar
110g Butter
2 Free Range Eggs
3 Large Fairtrade Bananas
175g Rice Flour
50g Corn Flour
1 tsp Gluten Free Baking Powder
½ tsp of salt
75g Fairtrade Chocolate Chips or Sultanas
Method
1. Preheat the oven to 200c.
2. Cream the butter and sugar together in a large bowl
until light and fluffy with an electric whisk. Add the
eggs and mix well until you have a smooth light airy
mixture.
3. Mash the bananas and add them. Mix well between
each banana until they disappear into the mixture.
4. Mix the rice flour, corn flour, baking powder and salt
together in a separate bowl. Sift this mix into the
butter and egg mixture bit by bit, mixing in between
until you have a thick but even consistency. Fold in
the Chocolate Chips or Sultanas gently.
5. Spoon into muffin cases until even.
6. Bake for 20-25 mins until golden brown. Allow to
cool for 5 mins. Serve.

Gluten Free Banana Cake
Preparation time- 15mins
Cooking time- 30mins
Serves- 8-10 people
Ingredients
250g Gluten-Free Plain Flour
1 tsp Baking Powder
½ tsp salt
120g Butter
100g Fairtrade Demerara Sugar
2 Fairtrade Eggs, lightly beaten
3 tbsp Maple Syrup
6 ripe Fairtrade bananas, mashed
Method
1. Preheat an oven to 175 degrees C / Gas mark 3.
Lightly grease a 9x5 inch loaf pan or 2 (12-hole)
muffin tins.
2. In a large bowl, combine flour, baking powder and
salt.
3. In a separate bowl, cream together butter and sugar.
Stir in eggs, maple syrup and mashed bananas until
well blended.
4. Add the banana mixture to the flour mixture; mix
until batter is just moist. Pour batter into prepared
tin.
5. Bake in preheated oven for 20 to 30 minutes, until a
skewer inserted into centre of the loaf comes out
clean. If using muffin or cupcake tins, bake for 15
minutes or until a skewer inserted into the centre of
a muffin comes out clean.
