of (imported) fire and brimstone. If I remember rightly, no public drinking saloons
were allowed in the Kingdom by Brigham
Young, and no private drinking permitted
among the faithful, except they confined
themselves to Valley Tan.”

As legend has it, during the late 1800’s, Salt
Lake City was so inundated with prospectors, soldiers, ladies of the night and other
people of ill-repute, the blocks between 200
South and 400 South, on what would later
be called Main Street (officially designated
Main St. in 1906), was given to these gentiles
to house the saloons, breweries, billiards
clubs and parlor houses.
Distilleries were also numerous in the city.
Before 1870, there were an estimated 37
distilleries operated in Salt Lake City, all of
them run by Mormons, including Brigham
Young. As a matter of fact, Brigham Young
has 235 charges on record over 10 years
from the liquor store located near the intersection of 200 South and Main Street. That’s
two purchases a month for 10 years straight
for the Prophet.
This area between 200 South and 400 South
was given the moniker by none other than
Brigham Young himself, and was known as
Whiskey Street.1

CIDERS, FRUIT AND ROOT
Ciders can be classified from dry to
sweet. Their appearance ranges from
cloudy with sediment to completely
clear, and their color ranges from almost clear to amber to brown. The variations in clarity and color are mostly
due to filtering between pressing and
fermentation. Some apple varieties will
produce a clear cider without any need
for filtration. Both sparkling and still
ciders are made; the sparkling variety is
the more common.

These higher fermentation temperatures
give many ales fruity esters and flowery

American Pale Ales
American pale ales have an even balance of
hops and malt, and fruity esters range from
very light to very strong. Most American
breweries feature an American pale ale on
their year-round lineup, and their interpretation differs slightly from region to region.

American IPAs (India Pale Ales)
An IPA is a hopped up version of pale ale.
However, one man’s pale ale is another
man’s IPA. Expect the same characteristics
of a pale ale, with added hops, bitterness,
and strong citrus or piney notes.

Imperial IPAs
An Imperial IPA is a very generously
hopped version of an American IPA. Most
brewers show their hop muscles through an
imperial (double) or even triple IPA. They
can be extremely bitter, and most boast the
IBUs (International Bitterness Units) on the
bottle, though this is not always concordant
with perceived bitterness.

Most UK beer is not as heavily hopped as
American beer, and relies more on malt for
flavor. There will be less bitterness, and
more sweet, nutty, or caramelly flavors in its

Stouts were born from the porter style, and

Belgian yeast strain that offers a unique

Lambics
Lambics are spontaneously fermented using
wild yeast to create uniquely tart and sour
ale. Some have whole fruits added after
fermentation begins, while others showcase
the yeast alone. There is little to no hop or
malt character, which allows the yeast to
take front and center.

Abbey Style Ales
These three sister ales - Dubbel, Tripel, and
Quadruple - have a lot of myths behind their
names. They all stem from the same type of
ale, but their names have no reference to
one ale being more or less malty or alcoholic
than another. Dubbels are richly malty with
a higher than average ABV. Tripels are
closely related to strong pale ales, and quads
are much like dark strong ales. Most hide
their high alcohol content devilishly well.

Lagers
Lagers are brewed with yeast that ferments at the bottom of the fermenting
vessel, and at a lower temperature than
ales (45º-60ºF). The word lager is a German term that means “to store”. After
lager beer has been fermented, it is
stored in cool temperatures until it has
matured to the brewers liking. This
cooler fermentation and lagering process produces a beer that has fewer
yeast byproducts, with a pure and crisp
flavor as opposed to fruity and pungent.
Light and Adjunct Lagers
This lager style was popularized largely
by macro breweries. They have light
flavor, high carbonation, and low to
moderate alcohol content. Adjuncts,
such as rice and corn, are added to cut
costs, making them the cheapest on the
market.

Highland
Speyside is the undisputed center for
whiskey in Scotland. It boasts the highest concentration of distilleries (more
than half) in all of Scotland. Scotches
from this region are thought to be the
country’s most complex, and are known
for their sweetness and elegant flavors
and aromas.
The Highlands is the largest of the whisky producing regions in Scotland and
generally produce more full-bodied
whiskies with deeper notes of peat and
smoke.

now there are only two distilleries left in
this region: Glen Scotia and Springbank.
Sadly, neither of these scotches are currently available in the State of Utah.
