If I remember rightly, no public drinking saloons were allowed in the Kingdom by Brigham Young, and no private drinking permitted among the faithful, except they confined themselves to Valley Tan.” Mark Twain, 1871 As legend has it, during the late 1800’s, Salt Lake City was so inundated with prospectors, soldiers, ladies of the night and other people of ill-repute, the blocks between 200 South and 400 South, on what would later be called Main Street (officially designated Main St. in 1906), was given to these gentiles to house the saloons, breweries, billiards clubs and parlor houses. Distilleries were also numerous in the city. Before 1870, there were an estimated 37 distilleries operated in Salt Lake City, all of them run by Mormons, including Brigham Young. As a matter of fact, Brigham Young has 235 charges on record over 10 years from the liquor store located near the intersection of 200 South and Main Street. That’s two purchases a month for 10 years straight for the Prophet. They all stem from the same type of ale, but their names have no reference to one ale being more or less malty or alcoholic than another. Dubbels are richly malty with a higher than average ABV. Tripels are closely related to strong pale ales, and quads are much like dark strong ales. Most hide their high alcohol content devilishly well. The word lager is a German term that means “to store”. After lager beer has been fermented, it is stored in cool temperatures until it has matured to the brewers liking. This cooler fermentation and lagering process produces a beer that has fewer yeast byproducts, with a pure and crisp flavor as opposed to fruity and pungent. Light and Adjunct Lagers This lager style was popularized largely by macro breweries. They have light flavor, high carbonation, and low to moderate alcohol content. Adjuncts, such as rice and corn, are added to cut costs, making them the cheapest on the market. Speyside Highland Speyside is the undisputed center for whiskey in Scotland. It boasts the highest concentration of distilleries (more than half) in all of Scotland. Scotches from this region are thought to be the country’s most complex, and are known for their sweetness and elegant flavors and aromas. The Highlands is the largest of the whisky producing regions in Scotland and generally produce more full-bodied whiskies with deeper notes of peat and smoke.
