through a lot of developments in all matrices, we offer this year a couple
of proficiency testing schemes in the field of MEAT PRODUCTS.
We are pleased to present you our accredited quality assurance program
in the field of the chemical-physical and microbiological analytic of “meat
products”.
chemical-physical analytic:
- boiled sausage 1
(fat, water content, ash, protein, collagen, sodium chloride,
nitrate, nitrite, diphosphorus pentoxide (P2O5), calcium)
February
- boiled sausage 2
(non-protein nitrogen (NPN), partially hydrolysed gelatine,
glutamic acid, citrate, acetate, L-lactate, curing substances,
sorbic acid, ascorbic acid, iso-ascorbic acid, pH-value)
postponed to July
- raw sausage 1
(aw-value, pH-value, D- & L-lactic acid, sodium, nitrate,
nitrite, sorbic acid, monounsaturated fatty acids, saturated
fatty acids) July
- raw sausage 2
(fat, water content, protein, ash, sodium chloride,
hydroxyproline, total phosphorus, sodium) April
in the field of the microbiological proficiency testing
schemes we offer the following proficiency testing,
especially for microorganisms of risk group 2:
Campylobacter poultry meat, February
Lactobacillus ground meat, March
E.coli ground meat, June and November
Enterobacteriaceae ground meat, March and November
Staphylococcus ground meat, February
