Sunken brownies, dried bread and fallen angel food cake are some of the common problems experienced by high altitude cooking. Achieve an understanding of scientific concepts to effectively compensate for cooking in the high country of Cochise County. Impacts on boiled food, thickening with cornstarch, caramelizing, quick breads, yeast breads, deep fat frying and canning (hot water bath and pressure cooker) are discussed as well as how altitude affects taste and odor. Experience this jewel during an overnight NEW field trip in Payson. On day one, visit Tonto Natural Bridge State Park, the largest natural travertine bridge in the world. Views under the bridge provide a spectacular scene of dripping spring water showering the creek below. Hiking will include the 500-feet-long Anna Mae Trail leading down to Pine Creek Trail and The Natural Bridge. Then we will traverse under the bridge to return on the 2,200-feet-long Gowan Trail.
