The fourth generation of the Alvarez Valera family is dedicated to their family business, which
started in farming and lead to raising Manchega sheep (about 8000 head). In the early eighties
they began making D.O. (denomination of origin) Manchego from their own sheep`s milk.
Both Artequeso and Buenalba cheeses start with quality raw milk which comes from their own
select herds. The family operation controls the whole production process, from the animals and
milk, to the careful aging process with temperature and humidity controls, all the while with total
respect for the artisan tradition.
Their experience in cheese production, together with the success and recognition of Artequeso
among their customers in different markets, encouraged them to increase the range of raw milk
aged cheeses with new specialties made from sheep and goat´s milk, or a blend of these and
cow´s milk with the brand Buenalba.
With Buenalba they offer cheeses with the same characteristics of Artequso, selected milk of the
highest quality and absolute control over each processing step, but switching the artisan tradition
of a D.O., Manchego Cheese, for innovation.

This 15 month raw sheep’s milk cheese and then covered with
rosemary and set to age. These flavor of these wheels is one that has
hints of rosemary that have penetrated through the rind during the
maturing time.
#06043 – Oveja, Fine Herbs Raw Milk Wheel 2/6#
This 4-8 month raw sheep’s milk cheese is made with chopped
rosemary. The flavor is sweet and spicy with herbs throughout and a
smooth creamy texture.
