Preface
This brochure has been designed to inform you about the Muffins study. It will inform
you what to expect from the study when you decide to participate.
This study is being conducted by the Division of Human Nutrition of Wageningen
University and will take place in week 29 and 30 (July 2013). If you consider
participating in this study, please read this brochure carefully. If you still like to join
after reading, please contact us. We will make an appointment with you to schedule
the tasting session. Thank you for your interest in our study. If you have any

Purpose of the Muffins study
The purpose of this study is to determine the effect of ingredient composition on the
liking of muffins and the ability to discriminate between muffins prepared with
different recipes.
The setup of the study
The participants attend one test session which will take around 1.5 hours. The
session starts with an explanation of the study (30 minutes) during which the
participants can ask questions and fill in the informed consent form (see page 7) to
confirm that they are eligible for the Muffins study. This is followed by 60 minutes of
sensory tasting muffins.
The participants
For this trial we are looking for 100 healthy volunteers between the ages of 18 and
65. In this case healthy means that you do not have any chronic diseases or taste
disorders, you do not have diabetes or are gluten intolerant, and you are a nonsmoker. Normal or good taste and smell functioning is required. Furthermore,
volunteers need to be consumers of muffins or muffin-like products (e.g. cupcakes,
madeleines), which means that muffins or muffin-like products should be eaten at
least twice per year.
You cannot join this study if you are currently pregnant or nursing, and/or if you
participate in another study carried out during the period of the Muffins study (July 15
– 24, 2013).
Financial compensation
Upon completing this study and providing your BSN number, you will be paid € 7.50
in form of a VVV-voucher.

please contact us to schedule the test session.

When and where
The study will take place on July 15-17, and July 22-24, 2013. A session will be 1.5
hours, and will be held on various time slots between 14:00 and 18:00hrs on
Mondays and 9:00 and 18:00hrs on Tuesdays and Wednesdays. The test sessions
will take place in the Biotechnion (Bomenweg 2, Wageningen). Participants have to
attend one session only.
Study procedure
Each participant has to attend one test session which will take around 1.5 hours. You
are not allowed to eat and to drink only water one hour before the tasting session.
A test session will start with an introduction to the study where you can ask
questions. If you decide to join this study, you have to sign an informed consent form
after you have been informed about the study. Thereby, you state that you have been
informed about the objective and the procedure of the study and that you are
agreeing to participate in this study. After signing, you will fill in a questionnaire for us
to confirm that you fulfil the required criteria. When you meet all criteria (cf. “The
participants” on page 4), you can start with the study. You will be guided to a sensory
room in the Biotechnion. There you will receive several muffins which you are asked
to taste and rate the liking of the muffins. After that, you will be given six times three
muffins and you are asked to find out which within a series of three muffins is the odd
one (one muffins is always different from the other two).
It is important to be on time. During the tasting session, you are not allowed to talk or
interact with the other participants.
Withdrawal from the study
At any time point in the study you can choose to withdraw for any reason. You do not
need to provide the researchers with any reason for withdrawing.
Privacy
The personal information collected during the course of this study will be kept
confidential.
Study results

The results of this study will be submitted for publication in an international scientific
journal. It will not be possible to trace the results back to individuals. A summary of
the study results can be requested from the researchers once it has been prepared.
