Ginger Chicken Soup with Bok Choy

Ingredients:
•3 boneless, skinless chicken breast halves
•2 cans of chicken broth
•4 slices of ginger, about ½ inch thick
•1 small onion, quartered
•3 cloves garlic
•½ cup of uncooked rice
•¼ pound of mushrooms, sliced
•2 heads of bok choy, sliced into strips
• Place the chicken breast halves in a saucepan with the broth, ginger, onion, and garlic. Bring
to a boil then turn down the heat and simmer until the chicken is tender. This should take
about 30 to 45 minutes. Remove the chicken, the big pieces of onion and the ginger from the
broth. Throw out the onion and ginger.
•Slice the chicken into pieces and set aside.
•Bring the soup back to a boil and add the rice. Cook for 15-20 minutes or until the rice is
soft.
•Add the mushrooms and bok choy and cook for 5 minutes.
•Lastly, add the chicken to the soup and enjoy!
Stir-Fried Bok Choy with Ginger and Garlic
Servings: 4

Ingredients:
•1 tablespoon olive oil
•2 cloves garlic, minced
•1 tablespoon minced fresh ginger
•8 cups chopped fresh bok choy
•2 tablespoons of soy sauce
•Salt and ground black pepper
•Heat oil in a large pan over medium heat.
•Add garlic and ginger and cook for 1 minute.
•Add bok choy and soy sauce and cook for 3 to 5 minutes, until greens are wilted and
stalks are crisp-tender.
•Season to taste with salt and black pepper.
•Serve with rice, and your favorite chicken dish!
Chicken & Bok Choy Stir Fry

Ingredients:
•8 ounces of rice noodles, spaghetti
or whole wheat spaghetti
•1 pound of chicken or pork tenderloin
•1/3 cup of water
•¼ cup of chicken broth
•2 tablespoons of soy sauce
•2 teaspoons of cornstarch
•1 tablespoon of canola oil
•1 medium head of bok choy, trimmed and cut into long, thing strips
•1 tablespoon of chopped garlic
•1 tablespoon of chile-garlic sauce (found in Asian section)
•Bring a large pan of water to boil. Add the noodles and cook according to the directions on the package. Drain, and
set aside.
•Cut the chicken (or pork) into thin strips. Mix together the water, chicken broth, soy sauce and cornstarch in a small
bowl.
•Heat oil in a pan. Add the onion and cook until it softens. This should take about 2 minutes. Add the bok choy and
cook for 2 minutes. Then add the chicken or pork, garlic and chile garlic sauce and cook until it is cooked through.
This should take about 2 minutes.
•Last, add the mixture from your small bowl to the pan and cook until the sauce thickens. Serve over noodles and
enjoy! .
