Concession Stand Opening Checklist

CONCESSION STAND OPENING INSTRUCTIONS
Concession stand prep starts at 8:00am each Saturday (games begin at 8:00am or 8:30am) and at
approximately 11:30am on Sunday (most games begin at 12:00pm).
The Officer on Duty will unlock the door to the concession stand and provide cash for cash box. The
OD will also have a master game schedule to help determine how much traffic will be at fields each
day. Please use judgment based on number of games scheduled, time of day and weather
temperature when preparing hot foods and hot drinks.
There should be a minimum of two adults per shift. Preparation duties should be split
amongst workers. Become familiar with the price list located in concession stand.
Note: Referees on duty may receive free water bottles upon request.
1. Concession Stand Windows – Remove the clip locks (two per window) and unlock the three
concession windows. Place the clips in the top drawer of the front cabinet. Roll up the concession
windows to begin serving (at least 15 minutes before game time). Place concession stand price
lists on concession window counters.
2. Coffee – Coffee canister will be located in refrigerator freezer located along south wall. Coffee
filters will be located in top far right cabinet along west wall. Styrofoam cups will be located in
bottom cabinet along west wall. Lids for coffee are available upon request. Start one or both
coffee makers (depending on weather). On Saturday mornings, prepare 12 cups per pot following
directions on coffee canister. Repeat as needed, but limit by lunch time. On Sundays, coffee can
be prepared if needed.
3. Hot Cocoa – Tall stainless steel coffee/hot water dispenser will be located on cabinet counter
along south wall. Fill with water to approximately 2/3 full and plug in to heat water. Hot cocoa
containers are located in top far left cabinet along west wall. Styrofoam cups will be located in
bottom cabinet along west wall. Lids for hot cocoa are available upon request. Place
approximately 2 tablespoons in cup; fill with hot water and mix.
4. Drinks – Gatorades/Powerades, waters and sodas will be located in north refrigerator. Drinks
should be restocked as needed by pulling items to front and reloading to back.
5. Candy – Most candy will be located on wire display shelving unit. Chocolate candy will be
located on top shelf of drink refrigerator. Remove chocolate candy from refrigerator and place on
wire display shelving unit. Note: If weather temperature is too hot, chocolate may melt so candy
can be left in refrigerator and sold as needed.
6. Muffins/Granola Bars – Muffins and/or granola bars may be located on wire display shelving
unit or in refrigerator located along south wall. Remove and place on wire display shelving unit or
concession window counter.
7. Condiments – Remove container of pickles and any condiments (mustard/ketchup/jalapeno jar)
from refrigerator located along the south wall, and sugar & creamer packet container from top
cabinet located on west wall. Place these items on concession window counter, along with coffee
stirrers, spoon & fork holders, and napkin dispensers. Hot dog trays may be used for pickles sold.
Provide serving utensils on concession window counter for jalapeno jar and pickles.

8. Warming Tray - Remove lid and the top of tray from base. Add approximately one
inch of water to the base tray, replace top tray and lid. Turn warmer dial to approximately 200 to
begin warming.
Note: Food service gloves should be worn for all hot food preparation.
9. Sausage Wraps – Pull the grill out of the concession stand onto the walkway area facing the
south parking lot and place next to railing. Light the grill following the instructions located on the
front of grill (make sure propane tank is on). If lighter is needed, it can be found in top far left
drawer next to the sink. Sausages and tortillas will be located in the refrigerator located along the
south wall. Box of food wrap foil sheets will be located in top cabinets along west wall. Start with
approximately 8 sausages at a time. Sausages are pre-cooked, so they need to be heated
thoroughly. Tortillas can be warmed on the grill or in the microwave wrapped in paper towels.
When sausages are ready, wrap in warm tortillas and wrap in foil sheets. Place sausage wraps
into warming tray until sold. Repeat as needed. Once the lunch time has passed, limit the number
of sausage wraps prepared so not to have any remaining or an excess at the close of the day.
10. Hot Dogs – Plug in white crock pot. Add water approximately 2/3 full. Place dial on “high” to heat
water. Wieners and hot dog buns will be located in the refrigerator located along the south wall.
Start with approximately 8 wieners in the crock pot. Once heated, dial can be placed on “keep
warm”. Hot dog buns can be warmed in the microwave for a few seconds. Prepared hot dogs can
be placed in hot dog trays located in cabinets as they are sold or wrapped in foil sheets and
placed in warming tray (separated from sausage wraps). Chili and/or cheese may be added upon
request. Once lunch time has passed, limit the number of hot dogs prepared so not to have any
remaining or an excess at the close of the day.
11. Nachos – Crock pot liners will be located in top cabinet along west wall. Place liner into crock
pot. Place dial on “high”. Check refrigerator along south wall for an open nacho cheese can.
Unopened nacho cheese cans will be located in top far left cabinet along west wall. Hand held
can opener will be located in drawer. Open can and empty approximately ½ can into crock pot.
Add small amounts of hot water to cheese and mix until smooth. Once heated, dial can be placed
on “keep warm”. Occasionally mix cheese to keep from burning. Nacho trays will be located in
top cabinet along west wall. Nacho chips will be located on shelf along south wall. Place chips
and cheese in nacho trays. Jalapenos should be available on concession stand window counter
for self service.
12. Frito Chili Pie – Crock pot liners will be located in top cabinet along west wall. Place liner into
crock pot. Place dial on “high”. The cans of chili will be located in top far left cabinet along west
wall. Hand held can opener will be located in drawer. If large can, open can and place ¼ can of
chili into crock. If small cans, open two cans of chili and place in crock pot. Once heated, dial can
be placed on “keep warm”. Occasionally mix chili to keep from burning. Frito chips will be located
in box of variety chips located on wire display shelving unit with candy and/or on shelf along
south wall. Remove two small bags of chips or equivalent of two small bags of chips and place
into nacho tray and add chili (and cheese, if requested). Plastic spoons/forks will be located in top
cabinet.
Keep the concession stand clean throughout the shift. Empty garbage cans and dispose of
empty cartons in dumpster as needed.
