It has been a very busy quarter and I am personally happy to see it coming to and end.
The term has been chock a block full with the Bazaar, street collection, Christmas and
other functions. At home we have also had numerous functions with the family, school

perfect time," Pedro begged.

This is the kind of story you need when it seems like the world is spiralling out of control..
Not many people get a picture of this proud bird snuggled up next to them!
Freedom and Jeff
Freedom and I have been together 11 years this summer. She came in as a
baby in 1998 with two broken wings. Her left wing doesn't open all the
way even after surgery, it was broken in 4 places. She's my baby.
When Freedom came in, she could not stand and both wings were broken.
She was emaciated and covered in lice. We made the decision to give her
a chance at life, so I took her to the vet's office. From then on, I was
always around her. We had her in a huge dog carrier with the top off, and
it was loaded up with shredded newspaper for her to lay in.
I used to sit and talk to her, urging her to live, to fight; and she would lay there looking at me with those big brown eyes.
We also had to tube feed her for weeks. This went on for 4-6 weeks, and by then she still couldn't stand. It got to the
point where the decision was made to euthanize her if she couldn't stand in a week. You know you don't want to cross
that line between torture and rehab, and it looked like death was winning.
She was going to be put down that Friday, and I was supposed to come in on that Thursday afternoon. I didn't want to go
to the center that Thursday, because I couldn't bear the thought of her being euthanized; but I went anyway, and when
I walked in everyone was grinning from ear to ear. I went immediately back to her cage; and there she was, standing on
her own, a big beautiful eagle. She was ready to live. I was just about in tears by then.
That was a very good day. We knew she could never fly, so the director asked me to glove train her. I got her used to the
glove, and then to jesses, and we started doing education programs for schools in western Washington . We wound up
in the newspapers, radio (believe it or not) and some TV. Miracle Pets even did a show about us. In the spring of 2000,
I was diagnosed with non-Hodgkin's lymphoma. I had stage 3, which is not good (one major organ plus everywhere), so I
wound up doing 8 months of chemo. Lost the hair - the whole bit. I missed a lot of work.
When I felt good enough, I would go to Sarvey and take Freedom out for walks. Freedom would also come to me in my
dreams and help me fight the cancer. This happened time and time again. Fast forward to November 2000. The day after
Thanksgiving, I went in for my last checkup. I was told that if the cancer was not all gone after 8 rounds of chemo, then
my last option was a stem cell transplant. Anyway, they did the tests; and I had to come back Monday for the results.
I went in Monday, and I was told that all the cancer was gone.
So the first thing I did was get up to Sarvey and take the big girl out for a walk. It was misty and cold. I went to her flight
and jessed her up, and we went out front to the top of the hill. I hadn't said a word to Freedom, but somehow she knew.
She looked at me and wrapped both her wings around me to where I could feel them pressing in on my back (I was
engulfed in eagle wings), and she touched my nose with her beak and stared into my eyes, and we just stood there like
that for I don't know how long.
That was a magic moment. We have been soul mates ever
since she came in. This is a very special bird.
On a side note: I have had people who were sick come up to
us when we are out, and Freedom has some kind of hold on
them. I once had a guy who was terminal come up to us and
I let him hold her. His knees just about buckled and he
swore he could feel her power course through his body.
I have so many stories like that.
I never forget the honor I have of being so close to such a
magnificent spirit as Freedom.

View from the Top
Wow it’s Christmas time again, time seems to get faster and faster.
It has been said that each year of your life becomes shorter as you get
older; it sure seems that way.
Well, what have we achieved during this year? Let's reflect for awhile.
The following outings took place:
Michaela's of Chintsa;
A trip to Mpongo Park;;
The annual visit to see the Spring flowers at Hogsback;.
A trip to Seagulls for a lovely week-end.
A day’s outings to Clipity Clop Private reserve,
have a braai, go on a barge trip and game viewing.
A four day trip to the Mountain Zebra Park in Cradock.
A visit to Emerald Vale brewing, beer tasting and lunch.
And we are planning trips to see the Christmas light over the festive season.
Our Special thanks to Charles Smith and his committees for all their planning and organising.
These outing have added a wonderful new dimension to life at Kennersley Park .
Throughout the year there have been numerous functions, outings, Cafe Del Marc, Denise's Dinner,
special meals for Residents of the Home, a Games day and various entertainers coming to Kennersley Park .
In the Home itself we have renovated the bathrooms on first and second floor of Eastwing, upgraded the
Hairdressing salon in East Wing and extended both dining room/lounge areas on the first and second floor.
We have built a garage for the dumper, the tour bus trailer and our concrete mixer.
We have also upgraded the cottage sickbays by providing new furnishings, flat screen TVs and a special
floor covering.
Langham House has got a new water tank , additional heat pumps to sort out the hot water problem, a new
computer in the office, all the lighting in the Home was made efficient and we were able to claim an Eskom
rebate for our reduction in electricity consumption.
Throughout the year Langham House has enjoyed the support of the East London Community . These
included the Victoria Home Trust, The Dutch Reformed Church, Tribal Cats Motorcycle club, the
Caravan Club and many many more.
What an outstanding result from the Kennersley Park Bazaar and the annual street collection, breaking all
previous records.
God has truly blessed us at Leisure Homes for Senior Citizens this year. We still have our challenges, in

Nurse reveals the top 5 regrets people make on their deathbed

For many years I worked in palliative care. My patients were those who had gone home to die. Some
incredibly special times were shared. I was with them for the last three to twelve weeks of their lives.
People grow a lot when they are faced with their own mortality. I learnt never to underestimate
someone's capacity for growth. Some changes were phenomenal. Each experienced a variety of
emotions, as expected, denial, fear, anger, remorse, more denial and eventually acceptance. Every
single patient found their peace before they departed though, every one of them.
When questioned about any regrets they had or anything they would do differently, common themes
surfaced again and again. Here are the most common five:
1. I wish I'd had the courage to live a life true to myself, not the life others expected of me.
This was the most common regret of all. When people realise that their life is almost over and look
back clearly on it, it is easy to see how many dreams have gone unfulfilled. Most people had not
honoured even a half of their dreams and had to die knowing that it was due to choices they had made,
or not made. It is very important to try and honour at least some of your dreams along the way. From
the moment that you lose your health, it is too late. Health brings a freedom very few realise, until
they no longer have it.
2. I wish I didn't work so hard.
This came from every male patient that I nursed. They missed their children's youth and their
partner's companionship. Women also spoke of this regret. But as most were from an older
generation, many of the female patients had not been breadwinners. All of the men I nursed deeply
regretted spending so much of their lives on the treadmill of a work existence.
By simplifying your lifestyle and making conscious choices along the way, it is possible to not need the
income that you think you do. And by creating more space in your life, you become happier and more
open to new opportunities, ones more suited to your new lifestyle.
3. I wish I'd had the courage to express my feelings.
Many people suppressed their feelings in order to keep peace with others. As a result, they settled for a
mediocre existence and never became who they were truly capable of becoming. Many developed
illnesses relating to the bitterness and resentment they carried as a result.
We cannot control the reactions of others. However, although people may initially react when you
change the way you are by speaking honestly, in the end it raises the relationship to a whole new and
healthier level. Either that or it releases the unhealthy relationship from your life. Either way, you win.
4. I wish I had stayed in touch with my friends.
Often they would not truly realise the full benefits of old friends until their dying weeks and it was not
always possible to track them down. Many had become so caught up in their own lives that they had
let golden friendships slip by over the years. There were many deep regrets about not giving
friendships the time and effort that they deserved. Everyone misses their friends when they are dying.
It is common for anyone in a busy lifestyle to let friendships slip. But when you are faced with your
approaching death, the physical details of life fall away. People do want to get their financial affairs in
order if possible. But it is not money or status that holds the true importance for them. They want to
get things in order more for the benefit of those they love. Usually though, they are too ill and weary to
ever manage this task. It is all comes down to love and relationships in the end. That is all that
remains in the final weeks, love and relationships.
5. I wish that I had let myself be happier.
This is a surprisingly common one. Many did not realise until the end that happiness is a choice.
They had stayed stuck in old patterns and habits. The so-called 'comfort' of familiarity overflowed into
their emotions, as well as their physical lives. Fear of change had them pretending to others, and to
their selves, that they were content. When deep within, they longed to laugh properly and have
silliness in their life again.
When you are on your deathbed, what others think of you is a long way from your mind. How
wonderful to be able to let go and smile again, long before you are dying.
Life is a choice. It is YOUR life. Choose consciously, choose wisely, choose honestly. Choose happiness.
News From Langham House
We are going full steam ahead at Langham and there are
smiles everywhere and lots of advice as we start
decorating the home for Christmas – love it – the tinsel
& baubles and the lights – Wonderful.
Many thanks to Desrae, Lizanne and Serena who came
in specially to lend a hand.
There are quite a few of us here who cannot wait for
2013 to end – it's been a terrible year health wise for many of us.
There have been so many wonderful donations for the residents’ tea parties,
entertainment and goodies galore throughout the year and we are truly
grateful to the people of East London, Companies & Clubs for all the help
they gave us; we are truly blessed at Langham.

wonderful sense of humour and her forte saying “I am watching you”…..
has given many a nurse the chills. You, Sister Prince are in our hearts
forever. Enjoy your retirement. Bless you.

STEP 1. Start out by picking your pencils. I used a 4H pencil for the lightest shading, an HB pencil for
sketching/lines/shading, and a 3B pencil for dark shading. You could probably complete this drawing using only
an HB pencil but I found using multiple pencils more convenient. Everyone keeps asking me where I get my
pencils. If you go to finalprodigy.com and click on "art supplies" in the menu you can find all of the supplies
that I use.
STEP 2. Start out with a basic sketch. Use the guidelines if you need them. Make sure to sketch as lightly as
possible and erase any lines that you won't need.
STEP 3. Your finished sketch should end up looking something
like this.
STEP 4. Start refining your light lines and adding a bit of detail
starting with the face and glasses. I used a 4H pencil
since it produces lighter and finer lines than the HB.
STEP 5. Define Santa's hat a bit more.
STEP 6. Now refine the beard and shoulders.
STEP 7.
Now roughly shade in the background. Cross-hatch on a layer
with an HB pencil then shade with a 3B pencil
for the darker areas of the background.
STEP 8. Now blend in your background shading using a
blending stump.
STEP 9. Now use an HB pencil to roughly shade in the face. Shade very lightly.
STEP 10. Now start defining your shading and adding details to the face starting at the eyes and forehead.
I used an HB pencil for the darker shading (in the eyes for instance) and 4H for the lighter shading on the
whites of the eyes and the skin. Use a blending stump sparingly to smooth out your shading. Try not to lose
the texture of the skin if you find yourself blending.
STEP 11. Now start shading cheeks and glasses using the same pencils for the same tasks. I decided to work
from left to right.
STEP 12. Now shade in the other cheek as well as the mustache and lower lip. Use a 4H pencil to sketch in
the lighter hairs of the 'stache and an HB for the darker ones.
STEP 13. Now move up to Santa's hat. Use an HB pencil and a blending stump to roughly plan out the shading.
Use 4H and HB pencils to define the hat's outline.
STEP 14. Use a 4H pencil for the lighter shading. Use a combination of HB and 3B pencils to shade in the
darker materials.
Kennersley Park Christian Fellowship (KPCF) – Why we are Here?

we encourage to flourish, faithful and participative,
with a sense of belonging and care to the very end.
As a community fellowship we recognise the
contribution of all who have gone before us.
Differences do not prevent us from believing that the
Church, in its ultimate form, consists, of no one denomination;
indeed it is the whole company of those who have been redeemed by
Jesus Christ and regenerated by the Holy Spirit. This is a truth that
endears us to one another and brings an openness that prevents
banishment to a “winter of discontent'.
We meet together in Christian fellowship as equals and in a spirit of kindness; helping one
another to grow together in grace and in the knowledge of our Lord Jesus Christ. The spiritual
values we individually cherish must ever remain among us as a refreshing breeze of mutual
encouragement. We are here to serve one another and our community in love. The Christian
concept of love is defined in 1 John 4: 10-11 “This is love: not that we loved God, but that he
loved us and sent his Son as an atoning sacrifice for our sins. Dear friends, since God so loved
us, we ought to love one another. God lives in us and his love is made complete in us.”
Joy to the world; the Lord is come! Let earth receive her King; Let every heart prepare Him
room, And heaven and nature sing.
Please join us; we meet together in the Chapel hall on Sunday evenings at 17:45. All welcome!
STEP 15. Now work on your background a bit by smoothing out and darkening the shading a bit. After that
use an HB pencil to add the first layer of shading to the rest of the drawing.
STEP 16. Now finish up your drawing by defining the beard and jacket. Use a 4H or HB pencil on the beard.
Don't let it intimidate you. It is basically just a bunch of downward flowing squiggly lines. Use a blending stump
to blend your beard hairs in if they seem too rough. After that use HB and 3B pencils to shade in the darker
parts of the jacket. Call your drawing done after you've gone over over your shading and details and are satisfied.

As you might remember, the head of a company survived the 9/11 because his son started kindergarten.
Another fellow was alive because it was His turn to bring donuts.
One woman was late because her Alarm clock didn't go off in time.
One was late because of being stuck on the NJ Turnpike (highway)Because of an auto accident.
One of them Missed his bus. One spilled food on her clothes and had to take Time to change.
One's Car wouldn't start. One couldn't Get a taxi.
The one that struck me was the man Who put on a new pair of shoes that morning, Took the various means
to get to work But before he got there, he developed a blister on his foot. He stopped at a drugstore to buy a
Band-Aid. That is why he is alive today..
Now when I am Stuck in traffic Missed my bus!!! Turn back to answer a ringing telephone .... All the little
things that annoy me. I think to myself, This is exactly where God wants me to be At this very moment..
Next time your morning seems to be Going wrong ---,
The children are slow getting dressed, You can't seem to find the car keys, You hit every traffic light,
Don't get mad or frustrated; It May be just that-----,God is at work watching over you.
May God continue to bless you With all those annoying little things
And may you remember their possible purpose.

Banana for Breakfast anyone???
Bananas contain three natural sugars - sucrose, fructose and glucose

DEPRESSION: According to a recent survey undertaken by MIND amongst people suffering from depression,
many felt much better after eating a banana. This is because bananas contain tryptophan, a type of protein that
the body converts into serotonin, known to make you relax, improve your mood and
generally make you feel happier.

regulates blood glucose levels, which can affect your mood.

The last of the three, tiny in stature but big in fame and
finesse, is the Taco Bell chihuahua. He gives her a smile,
a sly wink, turns to the Golden Retriever and the Lab

and says... “Liver alone. Cheese mine.”
On the day of the Millenium broadcast it was decided that Louis should be on
Robben Island that day to see that the few minutes' shoot with former Mandela
stepping into his prison cell went according to plan... Margaret would be at the
BBC to monitor the rest of the SA slot. She regarded it as a tremendous privilege.
After the Millenium broadcast Margaret had to return to the mainstream SABC
for a short while, working on the newly launched satellite channels. Halfway
through 2002 Margaret decided it was time to come home to the Eastern Cape
and back to nursing.
It was her wish to live in East London. She settled in Gonubie and joined
St Martin-by-the-Sea Anglican church where she played an active part.
In 2003 she was appointed to the staff of Kennersley Park. With her
appointment we not only got a competent nursing sister, but a person
with many additional skills. Margaret used her skills to plan and
produce notable events here like game competitions, Christmas concerts,
farewell functions and special (100th) birthday celebrations.
In 2011, when she bought a cottage at Kennersley Park South, she became a
Kennersley Parker in every sense of the word.
Margaret says, “We often talk or sing of Amazing Grace. In my personal life I can truly say that, in spite of
many hurdles and my own shortcomings, I have continually experienced the Amazing Grace of God through:
The people I have known, starting with my own family,
The places I have been to, and
Any achievements I have been blessed with.
My daily prayer is that I would fulfil God's purpose for my life on earth”

RESIDENT SPOTLIGHT
AN ABUNDANT LIFE

Certain words and phrases come to mind. Lively, adventurous, excellent
repartee, fitness, good leadership, innovative, diplomatic, hardworking and
devout. These words are a description of Margaret Ntlokwana, the Sister in
charge of the Southwynd Unit. Margaret was born in rural Transkei close to
Umtata. Her parents, her two brothers and she were a loving, caring and
dedicated family. In memory of her parents, Jeremiah and Irene, Margaret has
a personalized car number plate, JERENE.
Margaret was born with a defective heart condition; in fact she was a blue baby.
Although as a child she was often prone to fainting attacks, she finished her
schooling before going, at her mother's wish, to a Teachers' Training College
where she qualified as a primary school teacher. But her heart was in nursing
and she enrolled as a student nurse at Sir Henry Elliott hospital in Umtata.
During that time her heart problem became serious and she was sent to Groote Schuur hospital in Cape Town
for open heart surgery to correct the defect. After a two-week stay in hospital and a long period of recuperation
she continued her nursing training. After qualifying in 1967 Margaret did her midwifery training at Edendale
hospital in Pietermaritzburg and nursed at the Kokstad and Rietvlei hospitals.
In 1975 Margaret left South Africa to work and study in England. After a stint of nursing in Nottinghamshire
she enrolled at St John's Theological College in Bramcote, Nottingham where she obtained a diploma in
Theology. She did courses in Christian ethics, counselling, apologetics and mission. The college had students
from several overseas countries. She then studied at Nottingham University where she obtained a diploma in
psychiatric nursing (including Geriatric Care) in 1978. She made numerous lasting friendships and was invited
to visit these friends. Margaret travelled extensively visiting friends in Canada and the US on two occasions.
She travelled to several destinations in Europe and also fitted in a two-week visit to Israel, particularly
Jerusalem (this time as a pilgrim). She even rode a camel on the Mount of Olives! Her closest brush with death
happened when she was caught up in a hurricane out in the Atlantic off Cape Cod. During her stay in England
she worked at the Charing Cross hospital in London, but also took up a number of assignments to gain more
experience working at other hospitals in the city during her spare time.
In 1985 Margaret returned to South Africa. She worked at the Rietvlei hospital at Staffords Post in Transkei
where she lectured and, working with a resident obstetrician, did research on the knowledge and attitudes of
rural women regarding family planning. The research was published in the SA Medical Association Journal.
This versatile lady stretched her horizons even wider and soon became interested in radio broadcasting. She was
appointed to Radio Transkei where she became a continuity presenter. The fact that she was totally isiXhosa/
English bilingual, together with her wide overseas experience, made her a valuable member of the broadcasting
team. She felt the need to learn more about broadcasting and in 1988 returned to London to study Radio
Production at the BBC where she, together with students from eleven different countries, received training in
different spheres of radio broadcasting. At the end of the course Margaret passed the examination with
distinction. During this time she had notable interviews with experts in their particular fields- people like Sir
Richard Attenborough, film director and actor, Nicholas Hinton, Director of Save the Children fund and Chris
Patten who in those days was the British Minister for Overseas Development.
Margaret stayed with radio production until 1991 when she switched to TV production. That was another huge
learning curve. In 1994 she was appointed to Marketing and Publicity with the then NNTV (National Network
TV) at the SABC in Johannesburg. The channel became SABC 3 in 1996. One of the highlights of her
broadcasting career was the Millennium Project on which she worked as Project Co-ordinator. The BBC,
together with WGBH (a Boston broadcasting station ), planned a joint production where every country in the
world would be given a 10 minute slot on 1 January 2000 starting in Fiji in the Pacific Ocean, the easternmost
country on the international dateline and ending at 12 midnight with the westernmost country. During the
planning stages of the international broadcast, the SABC Executive Director of the project, Louis Raubenheimer,
and Margaret travelled to several overseas countries for meetings with delegates from other broadcasting stations.
Margaret's favourite of these destinations was Cannes, as this gave her a golden opportunity to make a day trip
to Monte Carlo – travelling on one of those really posh trains!

Merry Christmas to everyone!
Well, well, well we do have some competitive spirit
after all.

Our games day was held on the 1 of November and was unfortunately not as well supported as we
had hoped.
It came down to Kennersley Park vs. Stirling Lodge and after the five main
events resulted in a draw no one from either 3 player teams scored a basket
at the hoop. (Well done to Mrs. Thornton for showing everyone how
it is done) The result was a very spirited game of musical chairs.
Unfortunately we were pipped at the post by the ladies of Stirling Lodge.
(We hope to win the trophy back next year)
Thank you to everyone who took part in and supported all our themed days this year. These days
are always reliant on the kindness and generosity of so many. A big thank you to Vanada
Engravers for our beautiful trophy, OK foods for the cooldrink, Burmeisters for the candy floss
and of course to our cottage residents who helped to man the games stations.
November saw the start of the new menu and we are hoping the lighter, fruitier meals will appeal to
you during the hotter summer months.
I always appreciate constructive suggestions from
all of you on the themed days and menus.
Unfortunately I only wield a small
amount of power in these matters, but will always
do my best to keep everyone happy.

SORRY
Is there an imaginary cutoff period when Offspring become accountable
For their own actions? Is there some wonderful moment when Parents
can become detached spectators in The lives of their children and shrug,
"It's their life", and feel nothing?
When I was in my twenties, I stood in a hospital corridor Waiting for
doctors to put a few stitches In my son's head and I asked, 'When do you
stop worrying?' The nurse said, 'When they get out of the accident stage..'
My Parents just smiled faintly And said nothing.
When I was in my thirties, I sat on a little chair in a classroom And heard
how one of my children talked incessantly, disrupted the class, And was
headed for a career Making license plates. As if to read my mind, a
teacher said, 'Don't worry, they all go through this stage And then you
can sit back, Relax and enjoy them.'
My Parents just smiled faintly And said nothing.
When I was in my forties, I spent a lifetime waiting For the phone to ring,
The cars to come home, The front door to open. A friend said, 'They're
trying to find themselves. 'Don't worry! In a few years, they'll be adults.
'They'll be off on their own They'll be out of your hair'
My Parents just smiled faintly And said nothing.
By the time I was 50, I was so tired of being vulnerable. I was still
worrying over my children, But there was a new wrinkle.. Even though
they were on their own I continued to anguish over their failures, Be
tormented by their frustrations and Absorbed in their disappointments..
And there was nothing I could do about it.
My Parents just smiled faintly And said nothing.
My friends said that When my kids got married I could stop worrying
And lead my own life. I wanted to believe that, But I was haunted by
My Parents' warm smiles
And their occasional, 'You look pale. Are you all right' ?
'Call me the minute you get home'. Are you depressed about something?'
My friends said that When I became a Grandparent That I would get to
enjoy The happy little voices yelling Grandma! Grandpa! And now I
find that I worry Just as much about the little ones As my big ones.
How does anyone cope With all this Worry?
Can it be that parents are sentenced To a lifetime of worry?
Is concern for one another Handed down like a torch
To blaze the trail of human frailties And the fears of the unknown?
Is concern a curse or is it A virtue that elevates us
To the highest form of earthly creation?
Recently, one of my own children Became quite irritable, saying to me,
'Where were you? I've been calling for 3 days,
And no one answered I was worried.'
I smiled a warm smile. The torch has been passed.

MAKE YOUR OWN UPSIDE DOWN TOMATO PLANT.
STEP 1: Get a 5 gallon bucket and lid.
STEP 2: Drill 2 inch hole in the center of the LID and center of the bottom of the bucket
STEP 3: Fill Bucket with soil.
STEP 4: Put a coffee filter over the dirt in the center, then put the top on.
the coffee filter is to hold the dirt in the bucket when you do step 5 and 6
STEP 5: Flip bucket upside down, so it’s now on its lid. Put the tomato plant inside the hole.
Water it and if needed add more dirt.
STEP 6: Let the plant grow for 1 week to let the roots grow into the soil before you do step 7
The reason you let it the plant grow for 1 week before doing step 7 is so the roots can grow into
the dirt since you just planted the plant. Water the plant as needed in this stage.
STEP 7 : Now that the plant is 12 inches tall flip it upside down and hang it some where.
I hung it from a clothes line pole. (make sure its strong enough)
(you may take off the top lid, some might find it easier to water this way)

WITH WARMER WEATHER COMES MOSQUITOES!
Have you noticed the Mosquitoes are already out!
Here is a homemade trap to help keep you from being
a blood donor!!!
HOMEMADE MOSQUITO TRAP:
1 cup of water
1/4 cup of brown sugar
1 gram of yeast
1 2-liter bottle
Cut the plastic bottle in half.
2. Mix brown sugar with hot water.
Let cool.
When cold, pour in the bottom half of the bottle.
Add the yeast. No need to mix.
It creates carbon dioxide, which attracts mosquitoes.
Place the funnel part, upside down,
into the other half of the bottle,
taping them together if desired.
Wrap the bottle with something black,
leaving the top uncovered,
and place it outside in an area away from
your normal gathering area.
(Mosquitoes are also drawn to the colour black.)

2 weeks for continuous control.

driftwood to protect him from the elements, and to store his few possessions.
One day, after scavenging for food, he arrived home to find his little hut in flames,
with smoke rolling up to the sky. He felt the worst had happened, and everything was lost.
He was stunned with disbelief, grief, and anger. He cried out, "God!
How could you do this to me?"
Early the next day, he was awakened by the sound of a ship approaching the island!
It had come to rescue him!
"How did you know I was here?" asked the weary man of his rescuers.
"We saw your smoke signal," they replied.
The Moral of This Story:
It's easy to get discouraged when things are going bad, but we shouldn't lose heart,
because God is at work in our lives, even in the midst of our pain and suffering.
Remember that the next time your little hut seems to be burning to the ground.
It just may be a smoke signal that summons the Grace of God.
P.S. You may want to consider passing this on,
because you never know who feels as if their hut is on fire today.
Jumping On the Bed - Gotta love women~
A fiftyish woman was at home happily jumping on her
bed and squealing with delight.
Her husband watches her for a while and asks,
"Do you have any idea how ridiculous you look?
What's the matter with you?"
The woman continues to bounce on the bed and says,
"I don't care, I just came from having a mammogram and
the doctor says I have the breasts of an 18 year-old"..
The husband said, "What did he say about your 56 year
old bum ?"
"Your name never came up," she replied.
The easy way to get a six-pack!
Another busy year is drawing to a close. The occupancy rate of the home has
remained high averaging 98% and I would like to take this opportunity to thank all
our nursing staff for the incredible hard work, often under difficult circumstances
but mostly delivered with good grace and a smile.
The staff who have experienced personal tragedy during the year will be in our
thoughts especially over the festive season.
One of our highlights this year must be the building extension on the first and
second floor. The extra recreational space is being enjoyed by the residents and
we are now just busy with the “finishing soft touches”. This extension has been
made possible by the generosity of a former resident, Dorothy Stokes.
We have been blessed this year by the contribution of various visitors and
volunteers to the home. I would like to thank especially Di Prior and Danielle
Tennant and their respective Merrifield pupils for their visits – it is always good to
hear children's laughter. Danielle Wiggill, an occupational therapist from Cecilia
Makewane, has gone beyond the call of duty regarding her community service
assignment and her input to our activity efforts is greatly appreciated.
I would also like to thank Lorna Van Coller – besides leading exercises in the hall
she is now also facilitating an exercise group for mostly chair bound residents in
the home. Our ongoing thanks as well to Mrs Schnell, Mc Millan and Hinds for
their input to our beautiful gardens.
Lastly but by no means lastly! Thank you seems such an inadequate word for
Audrey Bekker, the Bazaar conveners, and the many other cottage Residents who
have contributed to the fundraising. Your amazing efforts have enabled us to buy so
many “extras” towards resident well-being as well as beatifying the home.
My best wishes to all for a happy and healthy 2014.

NO BAKE OATMEAL COOKIES
QUICK 7 HOUR BEEF BILTONG RECIPE !
2 cups sugar
1 Cup aged red wine vinegar
4 tablespoons cocoa
1 cup worcester sauce
1 stick butter
Half tablespoon baking soda
½ cup milk...
2 tablespoons brown sugar
1 cup peanut butter
WHAT TO DO:
1 tablespoon vanilla
Mix all the above together until the baking soda settled
3 cups oatmeal
and the brown sugar dissolved.
Waxed paper
Salt crystals (Not fine salt)
Directions
1 cup Crushed dry coriander ( not coriander powder)
In a heavy saucepan bring to a boil
1 teaspoon white pepper
the sugar, cocoa, butter and milk.
2 to 3 kg top-or silverside beef/meat
Let boil for 1 minute then add
METHOD:
Cut the meat with the grain from 1cm thick up to 4cm thick. peanut butter, vanilla and oatmeal.
On a sheet of waxed paper,

not too dry biltong.
until cooled and hardened.
Dip the biltong pieces for 2 seconds in the above vinegar
mixture, and place in a container (not aluminum).
After 1 ½ hours, drain the container, and swop the
bottom meat pieces with the top ones. Leave again for
another 1 ½ hours. ( Altogether 3 hours)
After vinegar session of 3 hours, sprinkle the meat with
gross salt to taste on both sides, and place in a container.
After 1 ½ hours, drain the container, and swop the
bottom pieces with the top ones.
Leave for another 1 ½ hours. ( altogether 3 hours).
Now the spicing.
Mix the crushed coriander and white pepper, and sprinkle
over the meat to taste.
Take paper clips, bend them into s-shape, and use them to

hang the biltong to dry. You can also use a fan blowing
4 cups water
directly onto the meat to dry faster.
3 cups fresh lemon juice (about 13 lemons)
1 ¾ to 2 cups sugar
¼ cup honey
Cinnamon sticks...
Instructions
Combine first 4 ingredients in a 3 - or 3 ½-quart slow cooker.
Cover and cook on LOW 3 hours or until thoroughly heated.
Whisk well before serving. Serve warm with cinnamon sticks.
Lemon Squeeze: We prefer the taste of fresh lemons,
but if you don't want to do all that squeezing,
substitute lemon juice from concentrate.
Ingredients for the frosting:
3 tablespoons of cocoa
1 ½ cups icing sugar
3 tablespoons butter (room temperature)
3 tablespoons warm milk
Mix above ingredients till smooth.
Add more icing sugar if you like the
frosting a little thicker.
If it’s too thick, just add a little more milk.
No Bake Eclair Cake
2x pcts tennis biscuits
2 vanilla instant pudding ...
3 ½ cups milk (I used skim)
250ml Orley whip
Directions:
Mix pudding and milk in a bowl.
Blend together for about 2 minutes then fold in the cool whip.
Spray a 9 x 13 pan with non-stick spray.
Place a layer of whole tennis biscuits on the bottom, then top with 1/2 the pudding.
Cover pudding with another layer of tennis biscuits, top with remaining pudding
and another layer of tennis biscuits, then carefully spread the frosting on the biscuits.
Chill overnight or for at least 8 hours.

Chocolate Bowls:
8 balloons
284g good dark chocolate,
chopped fine
The chocolate bowls
are delicate.
Keep the bowls on the
cookie sheet and put in fridge.
For The Whipped Cream:
Pint heavy cream
1 ½ Tablespoons
raspberry liqueur
¼ cup powdered sugar
In a standing mixer with a
wire whisk you have to
combine the heavy cream,
Liquor and powdered sugar.
For Garnishment:
Fresh Berries
Chocolate Syrup (optional)
Mint (optional)
Condensed Milk Tart
Crust
1Pkt marie biscuits
250g of unsalted mutter
Filling
1 litre milk
1 tin condensed milk
125ml corn flour
125ml custard powder
cinnamon
Crust
Crush Biscuits until fine, add the melted butter and mix together .
Divide into 2 dishes and press down until compacted.
Put in to fridge for about an hour.
Filling
Mix 750 ml milk and tin of condensed milk and bring to a boil
reduce heat once boiled, mix the cornflour, custard powder
and remainder of cold milk together and add to the boiling mixture.
Keep stirring until the mixture is of a thick custard consistency.
Pour filling into the crusts,
sprinkle cinnamon on top of filling and leave to set(about 4 hours).
Caramel milk tart
250 g tennis biscuits, finely crushed
200 g butter, melted
1,5 litres milk
500ml sugar
3 eggs
250ml flour
250ml cornflour
10 ml vanilla essence
50 g butter
extra 250 ml milk
1 box (90 g) caramel instant pudding
250 ml cream
1 can (360 g) caramel condensed milk 1 slab (90 g) milk chocolate
Directions:
Mix the biscuits with the melted butter and press onto the bottom of a deep 30 cm square dish.
Chill until needed.
In a large microwave-proof bowl heat 1 litre of the milk with the sugar for 10 min.
In a separate bowl beat the eggs, remaining 500 ml milk, flour, cornflour and vanilla essence until smooth.
Mix the flour mixture with the hot milk and microwave for 12 minutes, stirring every 2 min.
until the mixture is thick. Beat in the butter and leave to cool.
Whisk the extra milk and instant pudding together.
In a separate bowl whisk the cream until soft peaks form and fold into the instant pudding.
When the custard is cooled, start the layering.
Pour the custard over the chilled biscuit layer, smooth the caramel condensed milk over the custard,
then add the instant pudding mixture. Grate the chocolate over and refrigerate overnight.
